Pineapple Chunk Teriyaki Sauce
After the competition we had a wedding reception to attend. I love laid back summer type receptions! It was so good to see the bride as honestly I hadn’t seen her since we graduated high school a “few” years back… LOL After that we stopped at the Fantabulous In-Laws. I ♥ them big time bunches! Now what was funny is that while we were at the reception, Mr. Fantabulous was starting to have pain pretty bad again in his shoulder so he took one of his “happy pills”. Well as I was driving to his parent’s house he would chatter real fast for 2 minutes then start snoring for 5, then wake up and pick right back up where he left off prior to dozing off. LOL
And like usual, the 4 of us went to our favorite Pizza Shop in Pittsburgh. By the time we got home and my butt got into bed the clock read 3:45am! My LORD! I haven’t seen that time on a Saturday night since I was like 27! LOL
Today I had a late start – just pooped. And unfortunately since we were gone all day yesterday I had 9,000 things to do around the house today. I’ll tell you what I am seriously like the queen of multi-tasking! I had the Pineapple Chunk Teriyaki sauce simmering, dishwasher going, drying running while another load of clothes were washing, vacuuming done and beds made. Once the sauce cooled I then headed out to cut the grass. See normally Mr. Fantabulous handles that ‘man’ stuff as I suffer from SEVERE allergies but since his arm’s in a sling now I had to suck it up and drive the tractor for 2 hours.
These past few weeks I’ve been channeling my 80′s hairband rocker pretty intensely. So with that being said, I put on my headphones, started up Pandora and started rocking out to the 80′s metal hairband station. Um… bit of advice. Just because you have headphones on and decide to sing along with the music it doesn’t mean that everyone else in the 1-mile radius has headphones on! *blush* Oh yeah…. I was singing “Shout at the Devil” in my best Vince Neil voice, belting out some ‘In The Still of the Night” by Whitesnake and telling apparently my entire neighborhood to “Cum on Feel the Noize” via Quiet Riot! LOL
After I was done cutting the grass and apparently prepping for American Idol, I got a shower and told Mr. Fantabulous I was off to the market. Before I could even put my shoes on he announced he wanted to come with me. Now you have to understand, he never, EVER goes grocery shopping. I mean EVER! There are times I’m not 100% convinced he actually knows where it’s at! LOL But I was game.
Um yeah, mental note… leave the husband at home while he’s on Happy Pills! The big goof kept saying “Pork ‘n Beans’, “Pork ‘n Beans”, “Pork ‘n Beans” up and down the aisles. He loves the guy from Something About Mary. LOL THEN.. OMG I could have beat him! So I’m walking towards the front of the store and yapping to him while he’s behind me. I’m carrying on a full conversation about cotton balls and dinner later. Now apparently some of his “Italian-ness” has rubbed off on me as I now find myself talking with my hands. So as I’m walking down the aisle pushing the cart, I’m yapping away and my hands are gesturing to emphasize what I’m telling him. Well this guy is walking towards me. We make eye contact to which he gives me the funniest look and veers his cart over to the side. I mean he was just staring at me like I was nuts.
Gee.. now why would some perfect stranger do that you wonder? WELL…. know how I said my darling husband was following me while I was walking? Um yeah.. WRONG! He totally stopped following me and went into another aisle (kind of like “Ohhhh.. look! A butterfly!” So imagine there’s me, having this full blown conversation, smiling, laughing and gesturing the ENTIRE LENGTH of the aisle. The problem here is that I was apparently talking to myself as I was the ONLY one in the aisle since my husband went a-wol on me! LOL This poor man that saw me coming at him must have thought I was nuts! It wasn’t until I stopped and as I was turning around to my husband said “Wow hon, did you see that look that man just gave me?” did I realize I was talking to thin air! OMG I could have killed him! So when I finally found him and tell him the story he couldn’t stop laughing! LOL Swear I’m gonna beat that man! LOL
ANYWAY…. dinner tonight I decided to make Pineapple Teriyaki Turkey Burgers. OMG.. they were INSANELY GOOD! I’ll make this a two-phase recipe…
For starters, you need to make the Pineapple Chunk Teriyaki Sauce. What’s awesome about this sauce is that it’s fantastic with turkey, chicken or pork. You can grill it or use it as a sauce/chutney.
| Pineapple Chunk Teriyaki Sauce |
- 8 ounce can of crushed pineapple in juice
- 4 Tbl brown sugar
- 1 Tbl fresh ginger, grated
- 1 1/2 tsp minced garlic
- 1/2 cup white wine
- 1/4 cup low sodium soy sauce
- 1 tsp corn starch
- Combine the pineapple, juice, 2 Tbl brown sugar, ginger, and garlic in a small saucepan over high heat.
- In a separate bowl, whisk together the wine, remaining 2 Tbl brown sugar, soy sauce, and corn starch. Be sure to remove any lumps.
- Add to the pineapple mixture and bring to a boil.
- Once it begins to boil, reduce to low/simmer until the sauce thickens. ~about 20-25 minutes.
- Transfer to a bowl and refrigerate until ready to use.
This sauce was the star in this tonight…
