Weekly Menu

Get out of that same ol’ recipe rut and try one of these delicious and easy recipes this week! This week I highly recommend making the Chunky Portabello Veggie Burgers and Cherry Chipotle Cola Pork Tenderloin!

Happy Sunday TKW Family!  I’m tired today.  Last night I didn’t get to bed until really, really late as we just upgraded our new phones and before I could activate mine I had to transfer all of my stuff from my old phone to my new one.  It’s funny almost ALL OF MY STORAGE on my phone is not of games or music.  Nope… it’s of food pics.  I mean we’re talking only a few pics of my husband and 978 bajillion of food.  Sad, huh?  But after holding my breath, saying about 42 prayers it’s all transferred over and good to go. Now I just need to activate it… and order a new tempered glass screen cover. Trust me when a phone is what, $700, you want to protect it.  And these tempered glass phone covers are AMAZING!  I’ve dropped my old phones (on accident) from 4′ in the air screen-side down on a cement sidewalk and the phone was fine.  The tempered glass cover that I had on it spider-cracked but never shattered and once I removed it (again it stayed complete), the phone screen itself looked perfect!

Anyway, how was your week last week?  Mine kept me super busy. Since we’re (more like Mr. Fantabulous) is busting our butts to clean out the downstairs and sell items/donate before we put in the hardwood flooring.  I’m getting rid of a TON of pans (new and used), food porn props (plates, bowls, platters), crock pots, chafing dishes (brand new) and so much more.  If any of you live in the Pittsburgh area and are interested let me know.

Today I’m pretty busy I need to put in about 8 hours of work today for my day job and yes, travel to Home Depot for God only knows what that man says he needs but doesn’t have here.  Right now as I’m typing this I’m making some of my Ultimate Waffles as it’s Sunday, I wasn’t in the mood to make him blueberry pancakes and I want a chicken and waffle sandwich later. OMG it’s soooooo good!  It’s 2 waffles with some roasted chicken, crispy bacon, arugula, sliced avocado, gouda (cause that’s my go-to cheese) and a honey dijon drizzle.  DELISH! I keep meaning to take pics of if and post the recipe but it’s so damn good I end up being impatient and eating the whole thing.  Sorry not sorry…

This week’s menu is a selfish one as it’s some of my all-time favorites.  My Chunky Portabella burgers are kinda up pretty high on my food loves – kind of like pizza and bacon.  Now if I really had a weekly menu of my favorites it literally would be just pizza and bacon – every day, even for dessert.  Oh that reminds me, I need to buy bacon – I just used up my last bit of it making bacon rolls. yes you read that right … BACON ROLLS.  It’s kind of like a pepperoni roll but with all bacon and cheese.  It’s seriously a heart attack in a roll but dear God it’s good.

So last week I went kinda Instagram nuts and posted a bajillion things.  Here are just a few things you missed out on:

This Chicken Chimmichuri Power Bowl was to die for!!!


And then there’s this… Have you ever put a dippy egg over marinara and pasta? OMG it’s soooooooo good!!!

Next it was all about that beef and chimmichuri sauce (don’t worry the recipes are coming soon!)

Now last week was a royal ‘B’ when it came to work – not in a bad way just UBER busy. We’re talking I put in 65 hours in 4 days. And that doesn’t count the other 2 days I worked. But hey I love what I do so it’s all good. Plus I got to work from home which meant I got to make some really awesome lunches (and dinners!). So like you know how the ‘new’ healthy meal are those rice bowls?  Yeah um the ones you get in the fast food restaurant aren’t really that healthy. However confession… I LOOOOOOOOOVE the chicken rice bowls from chipotle however rice doesn’t always agree with me. I tend to actually get sick off of it. It like doesn’t digest or something (gross I know).

I’m pretty sure you’ve all heard of (or perhaps even had) cauliflower rice.  I’ll be sharing some recipes soon for that but honestly all it is, is a head of cauliflower that is processed until well, it looks like rice. Now for me it’s a godsend because even though I loooooooove rice it often doesn’t like me.  Oh trust me I’ll still eat it but I suffer for it.  So lately I’ve been making my own ‘rice’ bowls out of cauliflower rice.  This was Saturday’s lunch…

and lastly, there’s this. Why yes, yes I do like a little pizza with my cheese.

And on another note, I want to thank you all again so much for your continuous outpouring of love and support. Every day I open up my mail and see another email with a bajillion virtual hugs. I so love you guys.
