2 more weeks people; 2 more weeks and my critical path project (phase 1) will be done. And what that means is I’m taking a day off of work. Yes, a real day off of work. LOL Now it may not sound like such a big thing but trust me, these past 3 months or so have been kicking my butt big time. Putting in 16-17+ work days, plus working on the hardwood flooring and running TKW I’ve truly been pushing the limits of little to no sleep. But sometimes being an adult you have to suck it up and do your best. Thankfully Mr. Fantabulous has been truly patient and understanding with me if I get cranky/snappy/well okay b*thchy. I try not to but I’m just mentally and physically done.
But last week, while hell with work, wasn’t too bad until it went from 65F and sunny to 27F with snow up to 73 with monsoon rain. So needless to say allergies are in full swing. And of course, that night when I told Mr. Fantabulous that I wasn’t feeling well but that it was just allergies he said he wasn’t feeling well. Why is this? Is it sympathy sickness or some other guy thing? Now I can’t speak to if the ladies do the same but for me, my husband ALWAYS “gets sick” when I announce I’m not feeling well. However the day the man says he has cramps I’m done. LOL Ah but I love him none the less. So needless to say he mas a Man Cold.
So last week we decided to use up one of those free birthday things you get from restaurants. Now for the past 2 years on our birthdays, this place sends us $30 vouchers for a free meal and every time we go we say “never again” as it’s always a disappointment. So yes, even if it’s a free meal, if it’s not good it’s not worth cashing in. However Tuesday night we were exhausted and the thought, honestly of making dinner was painful. Like I cook every day but I just was hashtag #soovercooking that night. I grabbed the card and asked “do you just want to go here? The worst case scenario we eat chips and salsa.” We get there and since it was one of those almost 70F days out we sat outside at the bar. The barmaid was super nice and recommended 2 of their newest dishes – some type of steak and street corn tacos and barbacoa nachos. He ordered the tacos and I got the nachos thinking “it’s just nachos, something little.” OMG folks this thing, when she brought it out I swear she needed a forklift. It was on a platter and HUGE! I mean in Donald Trump’s voice “HUUUUUUUUUUUUUUGE!”
Now me being me I had to look it over first. See I’m very, VERY finicky about nachos. I firmly believe that you layer nachos. Nothing is worse than getting a big pile of nachos where the toppings are ‘good stuff’ is only on the top and nothing in between. I mean no one wants the plain chips at the bottom. I mean if I wanted that I’d just open up a bag of chips and eat them straight out of the bag. I expect a layer of chips, a layer of toppings, a layer of chips, another layer of toppings and so forth. I mean it’s only logical. This way every single chip gets some lovin’. And guys this plate was all about the nacho lovin’! We had layers of chips, barbacoa, cheese, avocado, and sauce. It had to easily be 5-6 layers deep on this huge platter.
I ate, what I thought was a decent amount but if you would have looked at it, it didn’t look like I even touched it. He had inhaled his tacos and was so stuffed he couldn’t even eat one chip. So I asked for a take home container thinking she’d bring me one of those large lidded ones. Oh no.. she brought me a deep-dish quarter sheet aluminum foil pan (that you use for like picnics) with a metal lid. I mean it literally looked like one of those trays you use in chafing dishes! So I get it home and I actually had to rearrange my one fridge shelf just to get it to fit. Now for the next 3 days, yes 3 days, we had full meals out of that leftovers! The best part, my nachos were $12! Next month is my birthday and we’ll be sure to head back to that restaurant as I want those nachos again. However you know me, I need to make my own. That’s what I have planned today – I want to make pressure cooker barbacoa. Wish me luck!
Last week I didn’t cook too many big meals though I did have fun with my breakfasts. If you follow me on Instagram you’ll see these recipes. I typically post there the stuff I’m making on the fly.
I’m so addicted to making more Hoity Toity oatmeal. I mean oatmeal, while delicious, is boring. For this one I went with a Chocolate Toffee Crunch Peanut Butter Oatmeal. Seriously it was INSANELY good!

So okay I posted this on Instagram and Facebook for discussion. Both my sister and I have been dipping hard pretzels in ketchup for God, as long as I can remember. The first time I ever did this in front of Mr. Fantabulous you would have thought I sprouted a 2nd head and Satan showed up. He looked at me like I was off my rocker. Do any of you do this? If you don’t want you do dip your hard pretzels in?
Other than not having to wear real pants, a bra, doing my hair or wearing makeup, this is one of the top benefits of working from home. Killer lunches! The recipe for the Crispy Skinny Baked Panko Halibut Sticks will be posted to the website soon!
and lastly, I’m thinking about making this my new profile picture as honestly it’s pretty much what I look and feel like. This project people…lord give me strength…and whiskey!
And with that my darling Mr. Fantabulous who is battling a Man Cold is calling for me. Have one fantabulous week!
