Let’s talk about food cravings – you know what you want, you’ve been thinking about it all day and you cannot wait to get home and make whatever you’re craving. We all have experienced that. For one reason or the other our bodies crave things. Well for me I was craving pancakes but not those ginormous ones but those dainty little ones. I think some folks call them “Silver Dollar” cakes. I was out all day running errands, Mr.Fantabulous was at band practice which meant when I got home I only had to make something for me. Now pancakes are pretty basic – flour, leavening, egg, sugar, milk/buttermilk and maybe some vanilla. Again these are all pretty much pantry staples… EXCEPT in my house on that particular day!
I got home only to go and get the flour out to see that my two, yes two containers that hold 25 pounds of flour were EMPTY! ANNNNNNNNNNNNND I was out of milk. Okay seriously this was not cool. Sure I thought about putting my shoes (and real pants) back on but that took effort so I needed to be creative.
So that’s where my craftiness came into play. I knew I could use regular old fashioned oats to make flour plus the addition of the protein powder would not only add a great boost to my diet but also help with the texture. To keep in on “Lori would dig this” side, I opted to leave out the sugar but add in a banana for natural sweetness. The egg was added as a binder. Now the dilemma was I didn’t have milk. BUT .. I did have International Delight Simply Pure Vanilla Coffee Creamer!
I swear there is something magical about this ebelskiver pan! Once I got over my fear of flipping them there was no stopping me. I’m an Ebelskiver ninja in the kitchen! You name the filling and I’m stuffing it into these puppies! Of course I’ve done the sweet route, like I did in my Candy Bar ones, but I’m beyond that… like waaaaaaaaaay beyond that! Pasta filled ones, meatball, eggs & bacon (seriously think about it… on-the-go breakfast in these cute poppable forms!!!) I know, right? Crazy!
These came from my need to clean out my fridge or more like “I wonder what’s in that container waaaaaaaaaaaaaaaay in the back of the fridge” cleaning. Admit it, you have some rogue containers in your fridge right now too. And if you don’t, either you are a neat freak (and I’m jealous) or you can’t get to the back of your fridge due to all the food in it. I’m the latter in that scenario. Trust me, Mr. Fantabulous yells all the time about how much food is in our fridge for only 2 people. Yet it’s funny as he’ll often say “honey, there’s nothing to eat” yet you can’t see a single inch of free shelf space.
If you’re like me, you’re at the stores at the butt crack o’dawn after every major holiday that involves food – Christmas, Thanksgiving, Halloween, 4th of July and so forth. You want the discounted candy, props, plates, platters and food porn props for next year. Well okay, maybe not the candy part though we won’t discuss my friend, Liz (my black hearted little sister from another mother) who keeps candy a ridiculously long time. Either the girl has incredible self-control orrrrrrrrrrrrrrrrr she buys in bulk *wink* Love you Liz! ♥
Well it’s because of that BHLS, Liz, that I first learned about ebelskivers. Liz is that friend that always teaches me things about new and different foods. She’s the one that introduced me to Lebanese food, falafels, a million and 7 amazing cookbooks and ebelskivers. She’s been trying for years to convince me that curry is like one of the best things ever but sorry hon, no way. I can’t get past the smell. When she first mentioned ebelskivers I was like “huh? ebel wha?” Ebelskivers are a Danish pancake that cook up in a special pan with these cute little wells in it to form these fluffy pancake puffs filled with…anything you want! Seriously, ANYTHING YOU WANT! I mean we’re talking chocolate, fruit, cream, nuts but don’t stop there. Go savory with pizza toppings, cheeses, meats… the list goes on pretty much forever. Kinda like my love for my BHLS!
Now while my BHLS raved over these little things I was on the fence about buying another specialty pan. When I was younger I’d fall prey to that “Buy this pan and it’ll do this AND walk your dog” hoopla. Not often but I did on a few things. So when she spoke about this thing I wasn’t so much apprehensive but rather “Will I use it enough to justify buying it?” Thing is, it’s very inexpensive and so friggen adorable. I mean seriously, tell me you don’t get a big smile on your face when you see a little mini cast iron pan or one of these teeny butter sauce pans. They are just too cute for words!
Kinda like me, I’m too cute for words! BAHAHA!
With this being my busy season with holiday orders, my getting the chance to sit down and eat a real breakfast, lunch and dinner is something of a Christmas wish. However I always make sure that while I’m up to my elbows in flour, cookie dough and frostings that I make sure to eat and further more eat healthy. I mean I do have to try all the cookies, batters and frostings right? LOL That being the case, every year I whip up a batch of these scrumptious breakfast muffins that are packed with protein, some carbs and yummy goodness that gets me through the morning dough making. What’s awesome about these is I can make a full dozen and just wrap them up, pop ’em in the freezer and when I’m ready to eat, just let it defrost, warm it up in the oven/microwave and enjoy!
Did you ever have one of those days where you just wanted Breakfast for Dinner? Yeah, me too! This was no exception. Now I work out twice a day – cardio in the morning and then weight training after work/evening. I had had a pretty rough day at work which meant I was going to have a killer evening workout. One of the BEST ways to alleviate stress; makes me work out harder and stronger. Really gets those muscles pumping and blood flooding!
