These Thanksgiving Gobbler Rolls are seriously the most DELICIOUS way to transform those Thanksgiving leftovers into something truly mouth-watering! A tender sweet roll dough packed with mashed potatoes, corn, roasted turkey and stuffing topped with “gravy” icing and cranberry relish garnish!
Question – what’s your favorite part of the Thanksgiving meal? Is the eating it when it’s straight out of the oven with your loved ones all around? Or is it that 2am fridge raid for those cold turkey sandwiches? Or what about leftovers the next day – or as my Mom would call it “Thanksgiving #2”? For me it’s all of them but honestly I’d have to say my all time favorite is how I get to revamp those leftovers into something incredible. You’ve seen my Gobbler Wrap and Gobbler Pizza. However I have to be honest guys, this recipe today… it’s something special. Like if I had to choose between this and my gobbler pizza, this will win out And you all know how much I LOOOOOOOOVE pizza. But this, dear God people it’s literally everything you would expect how a cinnamon roll would be BUT instead of sweet it’s full-on savory Thanksgiving-fied!
So did you survive Thanksgiving yesterday? Hopefully no family squabbles, dry birds or failed desserts. Growing up Thanksgiving was a big deal in my house; hell any day where there was a huge feast was a big day. But for us Thanksgiving is where Mom would cook for days, pies upon pies, and people coming in and out of the house all day long. Our main meal was at 2pm, 3pm if Mom was making a backup meal. Yes you read that right, back up meal.
Veggies burger are part of the “norm” and rightly so. They are delicious, hearty and can stack up to your traditional burgers. These Zucchini Ricotta Veggie burgers are juicy, hearty and perfect for you meat-free meals!

It’s funny as growing up veggies were my nemesis. I would turn my nose up at the thought of eating zucchini. I was all about the beef (’bout that beef, ’bout that beef.. sorry was channeling Meghan Trainor there for a minute). I was one of those burger snobs. Burgers had to beef and nothing else.

Growing up in Pittsburgh there were a few things that you were born into. You were born with the notion that all salads come with fries on them. If I had meatloaf I had to have mashed potatoes on the fork with it. If I ate a bologna sandwich, I had to have chips on the sandwich; never on the side. You see this wrap I have been making for years. It’s one of my favorite go-to healthy recipes. And honestly the only thing I change is if I want to use an actual wrap or if I want to use a veggie wrap (i.e., lettuce or even shaved veggies). But it’s always roasted turkey, jicama (so love that stuff), carrot match sticks, spinach, cheese (because everything gets cheese in my world), a wee bit of ranch and of course a huge handful of Craisins® Dried Cranberries.

So when you think of deli meats and cheeses I’m betting 99% of you are thinking about a sandwich, right? If you’re like me you grew up on taking a bagged lunch or lunch box to school with some piece of fruit, either a bag of chips or a cookie and a sandwich. If mine wasn’t pb&j it was bologna or ham and cheese. However times are changing. We’re more cognizant of the foods we eat, what it’s made with and honestly if it’s on the healthier side. Kids lunches are getting more diverse and we are getting more adventurous in the kitchen. I, for one, am loving this.
When it comes to deli meats and cheeses I am a HUGE snob. I’m sorry but I want QUALITY, incredible flavor and frankly, no additive crap in it. I’ve been buying Castle Wood Reserve® deli meats and cheese for quite some time now. Mr. Fantabulous and I both love them as they taste incredible and I never have to worry about ‘stuff’ in them. So when these great folks reached out to me asking me to take their deli products beyond the sandwich I went with something, honestly, I’ve been making for quite sometime now.
You see I love bread, carbs, dough… all that deliciousness is incredible BUT it’s the bane of my existence when it comes to losing weight. I swear I see a loaf of bread and without even taking one bite my thighs jiggle just a tad more. Or if I see a roll, it’s like “HELLO let’s add some flabby here”. So I had to find alternatives and reduce my bread intake. That’s when I turned to veggies. I use veggies not only for pasta and pizza (yes try my spaghetti squash pizza crust!) but also for ‘sandwiches’ or in this case, rolls and wraps.
Totally delicious, totally easy and way healthier than other rolls!
