This recipe is really pushing the limits when it comes to pizza and you know what? It TOTALLY WORKS! It’s fantastic! Hey TKW Family! I have a great no cook/no bake ridiculously easy recipe that honestly could not have been possible without the amazing filters from my friends at Daisey Fresh! How so do you ask? See bell peppers (not the green ones though as I don’t like them), is a new love for me. For years I wouldn’t eat them until I discovered roasted red peppers. WHA??? Where had these things been my whole life??? And since that I was a total bell pepper convert!

Whether you’ve been in the TKW Family for years or a day you’ve quickly learned that pizza is my absolute all time favorite food in the entire world. A tie for second is anything bacon or anything seafood. Well when the amazing folks from Trident Seafoods® were looking for ways to swap out your regular burger with their Wild Alaskan Pollock Burgers I jumped at the opportunity to work with them. As I get older I find myself, while still a huge beef lover, leaning more and more towards fish and chicken for my protein. What I love specifically about pollock and these Wild Alaskan Pollock Burgers is they are mild in flavor like cod and provides all the benefits of seafood. They also are extremely low in fat, calories and cholesterol. And most important they taste AMAZING!
Every now and then there’s a recipe that literally blows my mind on one – how easy it is to make and two – how incredible it tastes. These Cajun Shrimp Po’Boys are one of those recipes. Back when I created my Creole Shrimp Nachos, I honestly fell in love.. or was it lust.. maybe both *shrugs* all I know it was awesome. I went on this uber kick with not only the Creole Seasoning but also the Baja Cream Sauce. Like I NEEDED these in my life.
Plus it happened to be that shrimp was at a super low price at the time so I seriously stocked up on it. I was pushing the limits on how much shrimp one person should legally have. For me since I do not have a cholesterol issue I’m okay to eat it regularly. Though it contains a high level of cholesterol, shrimp contains both omega-3 and omega-6 essential fatty acids important for your brain and immune system health. Shrimp are relatively low in calories — 60 calories in a 3-ounce serving — and are packed with important minerals and vitamins.
So okay, ever since I shared with you my Grilled Fish Soft Tacos with Baja Cream Sauce I have been on a roll with that sauce. Truth be told I had a full bottle made up and was looking for ways to use it up. I put it on grilled chicken, scallops, lobster and even po’boys. It was a Saturday afternoon and I just returned home from my usual errands – spin class, Sam’s club, Homegoods, grocery store and butchers. I wasn’t particularly hungry as my protein shake left me rather full but I wanted something to tide me over until dinner. And since we were having an early dinner I didn’t want to stuff myself.
As I rummaged around the fridge, as I do this quite often as I tend to forget what’s all in there, I found a container of thawed shrimp that I needed to cook up. As I pulled them out of the fridge, past the container of fresh slaw I spied the baja cream sauce and immediately I knew I had to make something using all of those ingredients… but what?
