Brookies

Close your eyes and imagine if you will the most perfect chocolate dessert… crispy cookie-like exterior, fudgy brownie center and loads of melty chocolate chunks

Now open your eyes… imagine no more as I have that dessert. May I present to you The Brookie!

For the chocoholic in all of us, let me present Ms. Brookie…

Brookies - Just look at that fudgy center loaded with melty chocolate!

Ms. Brookie came to be about 1.5 years ago.  Mr. Fantabulous wanted cookies, I wanted a brownie and was really pressed for time so I knew I had to choose between one of those.  Now to know me personally you know I do anything to make Mr. Fantabulous happy as I puffy heart him the mostest but every now and then a girl just needs ‘her stuff’.  So I sat at my kitchen counter having the worst argument in my head between being really, really selfish and going for my to-die-for Brownies or keeping my baby happy.  I then looked at my thighs, got depressed and started to mix up my cookie dough.  Damn fat-genes!

About midway through creaming the butter I got an idea <insert light bulb here!>.  What if I somehow merged the two together.  Not as layers or one stuffed inside the other but rather a hybrid cookie.  I stood there for what seemed forever (by now I’m super pressed for time and realize I’m not going anywhere as I think I’m on to something here so I call and cancel – sorry about that by the way!). By now you know I’m a geek and when creating a new recipe I tend to lean heavily on my Engineering background.  I put on my thinking cap, analyzed the “what if’s” and realized the worst that would happen is that my concoction would not turn out as I pictured it in my head but rather some butt ugly creation with a pretty good taste.  I mean seriously.. how could anything that has cookie dough and brownie batter taste bad???

As I put the recipe together I tasted along the way to ensure I was heading in the right direction.  Your palate knows what tastes goods; numbers and measurements are only approximations. So as the dough came together I got pretty excited.. or it could have been I was on a sugar high from the fact that I swear I ate a 1/2 cup of dough.  I scooped this sinful guilty pleasure onto the pan and impatiently waited staring into the oven door.  I think I would have died if my oven light decided them to go! LOL

The timer went off and as I slowly opened the oven door I was all doe-eyed in anticipation the smell of pure melted ooey gooey chocolate hit me.  Dear Jesus.. WHAT HAVE I DONE???  It was as I had given birth to the most perfect cooki..browni…um… er… what is this thing called that is thick and fudgy and melty???  By this time Mr. Fantabulous came out to the kitchen and was like “Hey, what’s that smell?  Something smells really good!” then his eyes moved to the tray on the cooling rack “Hey, what’s that??  Is that for me???  Can I have one now”".  I said no that it was not set yet.  “Not Set Yet” is, in baking terms, is the cruelest thing EVER you can tell a person.  I swear 30 seconds go past and I get a “Can I have one now?”, “No honey, not yet”…”How about now???”, ‘No baby, have to wait a few more”… “But but but!!!” <grumble and turns an about face as he pouts and walks away>. So about 5 minutes go by and I swear Mr. Fantabulous’s Bionic hearing kicks in (funny how it’s turned off when I ask him to do the laundry) and he hears me slid the spatula under the <nameless creation> and put it on a plate.  He, I swear, ran to the kitchen to test.  He looks at it, smells it, asks me what’s in it… I said “If you don’t try it I’m taking it off of you” to which he takes a huge bite out of it.  As he pulled it away I could see the melty chocolate and on his lips and on the cookie and this fudgy center.  He ate the whole thing before he would comment.  All he said was “I need to sample another to make sure you’ll like it.”  That, in husband speak, is excellent news.

I tried one and OMG… this creation knocked my socks off!  The texture is cookie-like on the outside but the inside is fudgy like a brownie. I had created a masterpiece.  I have created The Brookie. Even the next day, when I went to have another they were still the same consistency – cookie crisp on the outside with a fudgy melted chocolate center.

Brookies have been my most requested Signature Item to date.
