Sunday Frittata – the most delicious way to use up leftovers!

Use up those leftovers in the most delicious way by transforming them into a Seriously Delicious frittata!  Customize it to your liking with just a few basic ingredients straight from the fridge! Make one and have breakfast for the week or brunch for the family!

So for as long as I can remember Sunday mornings meant sleeping in, lounging around a little bit longer in your pajamas, blueberry buttermilk pancakes for Mr. Fantabulous and a frittata for me. I love eggs in pretty much any fashion where dippy eggs are my most favorite however my 2nd favorite way is in a frittata.  Frittatas mean it’s a meal for me that last days. It’s great cold or straight out of the oven. You can slice it, cube it or even put it on toast to make an awesome breakfast sandwich (fyi… a slice of a frittata on an English Muffin with cheese and  dash of hot sauce.. EPIC!!!)

What I will do is make a big one on a Sunday morning then for the rest of the week I take a slice in with me to work.  This way I’m eating healthy and getting more protein. And it more importantly means I don’t have to grab something in the cafeteria – lord knows this child does NOT do drive-thru… ever! But yeah, frittatas are kinda like the most delicious way to clean out your fridge and re-purpose those leftovers.

So what’s a frittata you ask? So Frittata loosely translates from Italian to ‘fried’. Originally they started out in a hot skillet and were cooked low and slow – much slower than an omelet. It would contain at least one additional item and is never ever folded over like an omelet.  So then what’s the difference between that and an omelet?  Both are started out in a pan though frittatas are most often made in a well seasoned cast iron pan or an oven-safe pan. Omelets are cooked on top of the stove with the ingredients oven laid on top of the egg mixture then gently folded in half or rolled prior to serving.
Let’s use up those leftovers in the most delicious of ways!

Day 20 – Countdown to Christmas 2014 Pie Filling Stuffed Ebelskivers

I swear there is something magical about this ebelskiver pan!  Once I got over my fear of flipping them there was no stopping me.  I’m an Ebelskiver ninja in the kitchen!  You name the filling and I’m stuffing it into these puppies!  Of course I’ve done the sweet route, like I did in my Candy Bar ones, but I’m beyond that… like waaaaaaaaaay beyond that!  Pasta filled ones, meatball, eggs & bacon (seriously think about it… on-the-go breakfast in these cute poppable forms!!!)  I know, right?  Crazy!

Blueberry Ebeskivers1

These came from my need to clean out my fridge or more like “I wonder what’s in that container waaaaaaaaaaaaaaaay in the back of the fridge” cleaning.  Admit it, you have some rogue containers in your fridge right now too.  And if you don’t, either you are a neat freak (and I’m jealous) or you can’t get to the back of your fridge due to all the food in it.  I’m the latter in that scenario.  Trust me, Mr. Fantabulous yells all the time about how much food is in our fridge for only 2 people.  Yet it’s funny as he’ll often say “honey, there’s nothing to eat” yet you can’t see a single inch of free shelf space.

You need to tell Santa you want one of these pans for Christmas!

Harvest Spice Pumpkin Crepes with Cinnamon Cream Filling

“It’s the Great Pumpkin Charlie Brown!” is pretty much the theme this time of year. No longer do we have Winter, Spring, Summer and Fall.  It’s Fall no more as it’s been changed to ‘Pumpkin Season’. Seriously EVERYTHING is pumpkin.. EVERYTHING!  Heck even Oreos just jumped on the Pumpkin bandwagon with their new Pumpkin Creme cookies.  Those you guys can all partake in.  Not my thing.  I love pumpkin but I’m not pumpkin obsessed.  Like I know folks that count down the days til Starbucks reintroduces their Pumpkin coffee thingy.  Yes thingy… I don’t drink coffee nor call it those fancy schmancy names.  It’s coffee and water.  Anything else you put in it you’re just making it make taste not like coffee so um… drink milk.  LOL

However I’d be a fool not to partake in the recipe craze.  Give the people what they want and right now pumpkin is what you crave; what you need.  If you search Pinterest there are a billion and 17 pumpkin recipes out there.  So why not add to the list, right?

Pumpkin Crepes just speak Fall to me. You all know I’m not a huge fan of crepes/breakfast foods like this however Mr. Fantabulous is. Crepes are known as the ‘C’ word in my house.  I have banned my sister from mentioning them around him because as soon as she does he’s like that 4 year old kid in the cereal aisle pleading that he needs it otherwise he’s gonna die and that he promises to pick up his room until the end of time. No seriously you don’t understand folks.

Belgian Waffles with Whipped Lemon Ricotta and Blackberries

Every since I came up with that whipped lemon ricotta I could not stop thinking about it!  I had bought some GINORMOUS blackberries the other day and I knew I had to incorporate them in with that ricotta.  What transpired was pure magic!  These Belgian Waffles with Whipped Lemon Ricotta and Blackberries are AMAZING in every single way!  It’s bright and light and just makes you smile while you are eating them!


Ever since I came up with the Ultimate Belgian Waffles recipe I’ve been looking for ways to take them beyond the maple syrup and butter breakfast dish.  This is one of those creations.  This is fancy schmancy and would be PERFECT for a Sunday brunch, baby shower or tea party.  You can cut them into 4 segments and make them into appetizers/finger foods. But just be sure to make a double batch of all of them as you’re not going to want to share!

French Toast with Whipped Lemon Ricotta and Strawberries

Last Sunday I felt like French Toast for breakfast.  Now for me to ‘feel this’ is a big deal as I’m not too big on foods like this.  They just seem too heavy for my tummy even though those first 2 bites are to die for. Now I’ve shared with you several types of French Toast recipes from Stuffed French Toast to Savory French Toast Roll ups. This time I wanted something light and different.  I wasn’t feeling the whole maple syrup thing.  Now a few days prior I had made this amazing whipped lemon ricotta spread that honestly I debated on sharing because I fell that madly in love with it.  Yes, I will confess – I was going to deny you.  But you just don’t understand how incredible this spread is.  Well okay you will understand because I’m sharing it and you’re gonna want to try it, you’re gonna fall in love with it and you’re gonna love me forever.  LOL


Like honestly I thought about doing a post just on the Whipped Lemon Ricotta but instead I opted to go with how you can use this so stay tuned for more recipes featuring this amazing stuff!  Anyway, back to last Sunday.  While Prince Charming was in snoozeville I decided to make myself a proper breakfast instead of what I usually have – his leftovers from breakfast which consist of a few bites of toast (plain, no butter, no nuffin – gag), bite or two off egg and MAYBE a piece of bacon though that rarely happens. However I will make myself bacon. I mean come on, we’re talking bacon here.  I need bacon like I need oxygen.  I think I’d die without it!

Breakfast just got a whole lot more grown up!
