Get out of that same ol’ recipe rut and try one of these delicious and easy recipes this week! This week I highly recommend making the Italian Pot Roast and Potatoes and the Beef Shepherd Pie Tarts – Perfect Winter Comfort Food!

Happy Sunday TKW Family! Man what a week it has been! I don’t even know where to begin. Work is kicking my butt but I keep chugging through. It’s one of those times where I wish I had 2 more “lori’s” there. So I work from home 99.9% of the time and while it most definitely has it positive points (you can just roll out of bed and work, you don’t have to put on real pants, hell you don’t even have to brush your hair if you don’t want to) but it has a few pretty bad negative points. No for real it does. You have no interaction with folks and trust me, there are times when you wish you could be in that meeting room or standing face to face with someone. But the biggest negative point, at least with me, is that it’s really, really hard to ‘shut off’ work. Like I don’t work a normal 9-5, 8 hour day; more like 10-12 hour days. Many, many times Mr. Fantabulous will come in and actually say “Okay you’re done for the day. You can’t fix it all in one day.” and stand there until I actually shut down the computer.

Do any of you work from home? Do you experience the same thing as I do or am I the oddball?

What else?  So we still have no news about what’s going on with Mr. Fantabulous. He has to have more blood work done and a few other tests. I just wish we knew exactly what it is. I hate seeing him like this. But that man, my God, that man is inhuman. He doesn’t let that stop him – even when his chest is hurting and it’s hard to breathe. But you guys know me, I’m sticking to him like glue ‘mothering’ him and forcing him to take breaks, to rest. That man is my entire world. I guess I didn’t have to say that – you guys already know that.

Mom’s Classic Stuffed Cabbage Rolls

No summer cookout is complete without a tray of stuffed cabbages! Tender cabbage leaves stuffed with rice, seasoned ground meats and a rich tomato sauce make this the perfect summer comfort food. Plus these freeze beautifully!’

This dish, God this dish brings back so many childhood memories that I literally sat here for 30 minutes in a daze just remembering some of them. Like there was the time we were harvesting cabbages from our garden and we each got to pick a single plant that we were in charge of to take care of. Whoever grew the biggest cabbage won. The prize was Mom would cook our favorite dessert to go with her famous stuffed cabbages. That summer I ended up winning. This cabbage was so huge that I couldn’t lift it. I know I have a picture of me trying to hold it on my lap. I’ll dig it out to share the pic once my arm is better.

Then there are the countless memories where our kitchen was soooooooooooooo hot (we didn’t have AC growing up and we only had window fans) and Mom had 3 large canning pots on the stove with boiling water making hundreds of stuffed cabbages. I can still remember that hot cabbage smell and hot/wet air in the kitchen. Dad would use the tongs to pull out the leaves, put them in the colander and my Mom, sister and I would each trim the stems.

When Mom made stuffed cabbages it was never just a pan for dinner or just enough for a single meal. Oh no, not in my house. You made enough for dinner, leftovers, enough for company to take some home and enough for the freezer. Mom’s kitchen and cooking style are you cook in bulk and never, ever waste anything.

Summer means cookouts, gatherings and stuffed cabbages!

Weekly Menu

Happy Sunday TKW Family!  Man I’ll tell you what I’m so glad last week is over.  Talk about one hell of an emotional week.  Someone very, very dear to my heart is fighting for their life right now and I feel utterly helpless. We all have problems, we all complain yet when something like that hits you out of no where it’s like life just sucker punched you in the gut for being selfish. My heart is hurting and my hands are tied because I can’t fix it or make it better.  I can’t bake them something to make them better.  I just am…lost.

All I can do is pray, hope and be strong.

Life is so precious and something we often take for granted.  We are so used to having that other person answer the phone when we call or like our facebook status.  We’re just so used to them being ‘there’ and being their normal happy self that when illness hits them so hard you then realize just how precious life is.  Yet during that same week there was joy on the other side of the spectrum.  Mama and Papa Fantabulous celebrated their 60th wedding anniversary.  I mean just how amazing is that?!  60 years of marriage is unheard of these days and I can only pray that Mr. Fantabulous and I have that.


So for me this week has been hard – I’m so sad about one thing yet so happy about another. It’s like when I’m crying I feel like I should be happy for my in-laws yet when I’m happy and smiling I feel guilty because I feel like I should be sad for the other person.  All I can do right now I suppose is live my life the best way I can.  Let everyone know how I feel, that I love them and continue to have faith. That’s all I can do, right?

I’m sorry this isn’t your normal silly and happy post that you’re used to from me but it’s like with you guys I can open up, talk…share. Sigh…

What else can I share?  So I had my MRA done on my right shoulder.  Of the morning I go into have it done I have zero pain.  Isn’t that always the case?  As soon as you see the dr. you feel better. However that feeling ok quickly fell to the wayside as she harpooned me.  Actually the MRA doesn’t hurt; it’s that lidocaine injection they give you before they inject you with the contrast dye.  I should know the results early this week.  I hope not another surgery as shoulder surgery is wicked nasty and I just don’t have time for it. LOL

Anyway I’m signing off now as I want to head out and stop by the hospital for a bit to show some love and let them know I am praying for them. Have an amazing week!

BBQ Meatloaf Stacks

This recipe is one of those I WISH my parents were still alive not only to taste but to see me eat.  See growing up I REFUSED to eat or go near meatloaf.  It was chalked full of hunks of onions (that I swore would kill me if I ingested one), tomatoes and just flat-out yucky stuff.  The only meatloaf I would eat would be my grandma’s as while she used tomatoes, onions and peppers she minced them to the point you needed an eagle eye to find them in the dish.  I cut a piece off, give it a thorough look through and if I didn’t see an onion I’d eat it.  However the first one I spotted then the dinner was over for me and I was grabbing a pb&j. I just couldn’t do the chunks man.

However now I’ve grown to love onions (not raw) and peppers (not green as they still are yucky) and can tell when they are missing from the dish.  I also now love meatloaf…MY meatloaf TYVM!  I know I’m a snob, but I like what I like.  We all are food snobs or better yet, we should be.  Now let me clarify, we should only be food snobs when we are paying for a prepared meal.  I’m sorry but if I’m paying you for a dish the food and quality should be good.  The price of the dish is irrelevant.  Okay sure if it’s a 99cents burger then I wouldn’t exactly expect to have it made out of kobe beef however it still can be really good.

This recipe is one that honestly kinda just came to be.  See I was cleaning out my big freezer again – I have been doing this a lot lately only because truthfully I’ve been so busy that I haven’t had time to properly food shop.  And since I never EVER do take-out I have to go with what I have on hand.  Well okay I should clarify why I don’t do take out.  There is zilch stuff here in countrybumpkinville.  Yes we have a chain type pizza shop but you all know how I feel about those.  Nope, no way, no how. I do not do mass-frozen/re-heated foods.

BBQ Chicken Pasta Bread Bowl

There are days, like now, when it’s this bitter cold and snowy that you want carbs and comfort.  For me, this is one of the perfect dishes that keeps my tummy warm on these cold winter nights plus keeps me satiated most of the day.

When I introduced my Cheesy Meatball and Penne Pasta Bread Bowl, you guys went nuts over it asking for other variations of it.  This is definitely one of my favorites.  Now I was pretty apprehensive at first with the combination as pasta is supposed to have marinara or Alfredo sauce – not bbq.  That’s just unthinkable.  ESPECIALLY in an Italian household.  Now while I’m not Italian, I’m married to one which means I apparently lose my background and am now officially pseudo Italian.  LOL

But with either the Bacon BBQ Sauce or the Sticky Honey BBQ sauce in this dish, it’s amazing!
