Hey TKW Family! I have a great no cook/no bake ridiculously easy recipe that honestly could not have been possible without the amazing filters from my friends at Daisey Fresh! How so do you ask? Lemme tell you! So I’ve been using these filters in my fruit and veggie drawers in my fridge for about 2 months now. First off, they are super adorable and you can’t miss seeing them in the drawers. They are neon green and so soft/flexible which is great as I don’t to worry about breaking if it I throw my head of broccoli in the drawer. And more importantly is the filter packets are 100% natural and safe! So if I rip it open by accident I don’t have to freak out or throw away my foods!
So for the longest time I was buying this big bag of baby bell peppers only the thing was we weren’t eating them fast enough. Which meant I was breaking one of my golden rules – I was wasting food as I always ended up throwing about half of them away. Sin, I know! See bell peppers (not the green ones though as I don’t like them), is a new love for me. For years I wouldn’t eat them until I discovered roasted red peppers. WHA??? Where had these things been my whole life??? And since that I was a total bell pepper convert!
Anyone that knows me knows I love yogurt; Greek yogurt specifically. I live a very high protein lifestyle and am often on the go so it’s refreshing to know that I can reach into my fridge, grab a container of Yoplait Plenti Greek yogurt and be on my merry way. I don’t have to fret over added fats or sugars, tons of carbs or unwanted calories. It’s high protein, it’s healthy and most important, it tastes amazing!
When I was approached by Yoplait to review their new Yoplait Plenti – Plentiful Greek Yogurt I was thrilled as they did all the work for me by adding in whole grain oats, flax and pumpkin seeds. One of my favorite post-workout meals is a greek yogurt, fruit, oats, flax and some seeds mixed in with a little protein powder. By the addition of carbs to my protein I’m able to replenish the muscle glycogen that I burned during my workout. You see as you train, your main fuel source is muscle glycogen. Glycogen is the storage form of glucose. It is composed of long strings of glucose molecules with numerous branches.
The glucose break from the glycogen chain as needed in order to generate ATP, which transports chemical energy and is crucial for muscle contractions. Research confirms that the best way to replenish muscle glycogen stores after workouts is to consume high-glycemic (fast-digesting) carbs as soon as possible.

Well while I was off recuperating from surgery I wanted some sweets though since I couldn’t work out I had to watch what I ate. Knowing this traditional ‘goodies’ were off limits. So as I was sitting there craving some kind of decadent chocolate dish I spied my Syntrax Matrix 2.0 Mint Cookie Protein Powder and it was like a light went off! I COULD have my sweet treat and not feel guilty about it!
Since these are personal portions I was able to make enough just for me (well okay I had to make a couple since Mr. Fantabulous needs to eat as well… LOL). And also since I wasn’t allowed to really be on my feet for very long or cook I took the easy route and let the microwave do all the work for me.
What’s awesome about this recipe is that you can make these in under a few minutes and really make the recipe work for you. Instead of mint you could go with all chocolate. You could do vanilla with white chocolate chips and coconut. The ingredients just vary slightly.
However since I LOVE the Mint Cookie Protein powder I needed this flavor combination!
It’s funny, I could eat salads every day where for Mr. Fantabulous salads are a waste of time. They slow down the ‘real food’ ingestion. Salads are mere ‘fluff’ foods to him. He says that they are ‘full of fat or wasted calories’. Well my dear sweetie pie, I’m here to counter you on this one. This salad is healthy, packed with protein, antioxidants, good for you and flat out awesome!
This salad is so good that I literally ate it every day for lunch for a week! I couldn’t get enough of it! The only time I made a change was to add some toasted pecans to it. Other than that, I left it as-is. I mean why mess with perfection, right?
Pumpkin pumpkin everywhere.. and I LOVE IT! Pumpkins are symbolic for Halloween. I mean who doesn’t love carving a Jack-0-lantern? Pumpkins are loaded with vitamin A and fiber, and low in calories. Thanks to SI03 and their AMAZING Syntrax Protein Powders this recipe was so easy to come up with. Now I know the word ‘butter’ in the recipe make scare some people off as right away they think butter is from the devil. Well this has NO butter in it (like not the kind you’re thinking of). You make ‘butter’ out of pumpkin. Just trust me on this. It’s so yummy and way low in fat unlike the real stuff and JUST as amazing in taste!
These Pumpkin Butter Bars are just amazing! They are soft and oaty with a creamy pumpkin filling that is lip-biting amazing! I mean it’s THAT good! Now the true test was Mr. Fantabulous. See he has never really been a hardcore pumpkin fan. I mean he’ll eat it but he would never ask for something pumpkin flavored. As these were cooling I could hear him coming out of the office sniffing away (trust me, the aromas are intoxicating!). Of course they were way too hot to cut to which I got the pouty face (he’s just so adorable!). Eventually they were cool enough to eat and let me tell you what, after his first bite, the entire thing went into his mouth for the 2nd bite. There was no 3rd or 4th. Just 2 bites (okay so they were small but it still takes me 4 bites to eat a square). He LOVED these!
