Happy Sunday TKW Family! How’s this summer been treating you?  What’s the best thing you’ve done this summer thus far?  For me and this shoulder surgery my summer has been spent pretty much in a sling and in a recliner, however, I can’t complain too much as it really brought Mr. Fantabulous and me closer (if that’s even possible).

So I’m adult enough to admit it… I’m stubborn and extremely independent. Like my first day coming home from surgery, I was already starting with the “I can do it myself” spiel. To have someone wait on me and take care of me is tough as I simply don’t ask for things or even feel uncomfortable asking for help. It’s just not how I was raised. I was raised to be the one taking care of things, helping others, etc.

But this surgery, this surgery, it really humbled me and taught me it’s OK to ask for help (and ask for it multiple times). Mr. Fantabulous, God love him, has shown extreme patience with me. I’m a bad patient in the sense that I simply never liked being taken care of or more so ask for help. From putting my clothes on to washing my hair, from getting up every 3 hours to give me a pain pill to changing my ice packs every couple of hours Mr. Fantabulous never stopped and always, always did it with a smile.

Happy Sunday TKW Family! Gosh, can you believe it’s already the middle of summer?  How are you spending your summer?  Vacation(s)? Family reunions? Or just working and chilling out in the evenings? For me (us) we’re staying home. Traveling while injured is not fun and it’s not fair to Mr. Fantabulous that I limit our fun because of this stupid surgery. We decided that come Octoberish I should be okay enough to take a vacation.

I’m kinda bummed as our anniversary is next month and he’s asking what I want to do/how I want to celebrate. I’ve always told him on our 10th anniversary (we’ve been together though 21 years) that I wanted to tour Italy for 2-3 weeks but that won’t be possible right now; not with the way I’m feeling. So we’ll wait until early 2018 to go.

Now for him when I asked him what he’d like he gives me the normal “I don’t need anything as long as I have you” (yeah he’s a keeper) buuuuuuuuuuuuuuuut…. he’s been looking at lots (AND LOTS) of new guitar equipment. So I have a feeling that’s his not-so-subtle hint. #boysandtheirtoys lol

10 Minute Pressure Cooker Chicken Barbacoa

Just 10 minutes and a pressure cooker is all you need to make this SERIOUSLY DELICIOUS Barbacoa Chicken!  It’s the perfect meal for weekly meal prep and when you want a killer nacho topping! 

So remember my sharing with you a few weeks ago my experience with the mother of all nachos I had at this one restaurant? They were this ridiculously massive piling of beef barbacoa nachos that we ate for 4 days that resulted in a slight obsession in my house. Yeah so I had to do it, I had to make barbacoa. But I couldn’t just stop at beef (don’t worry, that recipe will be coming up soon!). Oh no, I had to also go with chicken because um, chicken rocks and it’s super high in protein. Plus when you do weekly meal prep, chicken is almost always a must-have.

Now this recipe is crazy easy. I’d say the hardest part was lugging out my blender from the one cabinet and then putting it away. I’m not one that keeps ‘stuff’ on her counters. Even my stand mixer that I use almost every day I put away. Yeah, I know… “but if you use it every day, save the effort and leave it out.” I hear ya and I used to be like that but Mr. Fantabulous hates ‘clutter’ and likes clean lines. Honestly, once I saw how my kitchen looked with those clean lines I was sold.

So as you read above this dish takes 10 minutes in the pressure cooker once it comes up to pressure. If you wanted you could most definitely make this in the crockpot – go with about 4 hours on high but you’ll need more liquid for sure. And if you wanted to make this in the oven you can do so as well. I would go with 300F for maybe 4-5 hours (though check it after 3).
This dish will be a weekly repeater in your house!
