Get out of that same ol’ recipe rut and try one of these delicious and easy recipes this week! This week I highly recommend making the Guinness Crock Pot Corned Beef & Cabbage with a Guinness Reduction Sauce and the Chocolate Fudge Ice Cream Waffle Sandwiches!

Happy Sunday funday TKW Family!  What a crazy/odd week it was last week. Like I know I was busy but I honestly can’t recall what I did. Is this the first sign of old age? Can’t remember stuff? I’m thinking it’s probably due to all the stress but who knows. Maybe it is old age with me. It’s a chilly day here in the ‘Burgh where we had a small snow squall on Friday which worried me a bit as we were having company that night AND I made enough food to feed an army.

Do you do that? When you host people do you serve more food than you think you need? I’m way better than how I used to be but I still do it however I can justify it by saying it’s part of my “weekly meal prep”. I mean let’s get real here people. Weekly Meal Prep cooking is nothing more than just putting leftovers in cutesy little containers and labeling them Monday – Friday meals. Hey I bought into the concept as it does work and it helps justify why I cook enough for the neighborhood. Oh speaking of cutesy weekly meal prep containers, I SWEAR by these glass 3-section ones and these 2 section ones!

Oh… wait, now I remember all that happened last week – WHEW!  I thought I was losing it!  So Monday we had the rest of the custom bedroom furniture delivered. We found this Amish company out in Ohio that does the absolute best wood work I’ve ever seen. We bought 2 full bedroom sets and 1 additional bed about 8 years ago from them. With the remodeling we’re doing we gained back a 4th bedroom so we had to buy all new furniture for that as well as finish the rest of the bedroom set (the room where we only bought a bed for). It’s all cherry and absolutely gorgeous.

The week itself we spent cleaning more, well Mr. Fantabulous did most of the work as I was tied up with my jobs. Yes, jobs – I have 2 full-time and another part-time consulting gig. I don’t sleep a lot plus the more money I can make now, the quicker we can retire. At least that how I look at it. Perhaps it would be different if we had kids but we don’t.

Happy Sunday TKW Family! WOW, March already or as Mr. Fatanbulous calls it his “birthday month”. Yes his birthday is at the end of the month however we tend to pretty much celebrate it the entire month. This means whatever he wants to eat, I make. Where ever he wants to go, we go (yes including the home improvement stores..ugh) and he gets full control of the remote. It’s not bad though as we tend to, now, like most of the same things. It’s funny as when we first met we could not have been more polar opposites. I’d say cat he’d say dog. I’d say snow and he’d say beach. For a while, truthfully, it worried me because we were so incredibly opposite. I mean we still have a lot of differences – I still want a cat and pig and he’s like “not gonna happen in my lifetime toots!”. But I’ll win when we move. He’s super into politics where I’m like “can’t we just watch Discovery or Food Network?”.  But yes it did concern me when we first started dating. I mean spending your life with someone who is so opposite from you can either be a positive experience or one that, honestly, will fail. It would fail as you would never see eye to eye, and you’d have pretty much nothing in common. Where’s the fun in that?

However one thing with us is that we communicate openly about everything. I told him that this worried me and he said something to me that I’ll never forget. He said “Baby it’s like this. I see us being opposite as a great thing. You force me to open my eyes and ears to listen to opposing views and opinions. You educate, you challenge me and you bring a whole different perspective to my life. You make me a more well-rounded, better person. Why wouldn’t I want that in my life?!”  Seriously I hit the jackpot with this guy! But he’s right. As long as you’re willing to listen and discuss it can make you a better person. And yes, this works on pretty much every scenario.

Now, after being together all these years I see those, once concerning differences, either no longer there or insignificant. He compliments me as I him. However this month will be rough as that will mean at least 10-15 trips to the Home Improvement stores, pasta pretty much every night (along with a real meal), crepes on the weekend and politics or the discovery channel on the tvs. Do you celebrate your birthday ‘month’ as well? What are some of your favorite things to do/eat?

Speaking of birthdays, I want birthday cake today! LOL

Happy Sunday TKW Family from a very swamp-like Pittsburgh!  Dear Lord it’s been raining here non-stop I swear for weeks!  Now normally our rainy season isn’t until June/July where it practically rains all month-long but for it to happen in most of February, this is unusual. The ground is so over saturated that now water is just pooling on top of the grounds in folks’ yards. I wouldn’t even dare step foot in my yard for literally sinking down! And driving on the roads here…god don’t even try it. We are so overladen with potholes that it’s a hazard to drive. But now that they are all full of water you really are taking a gamble with your tire, rim and alignment when you drive as while you may think you’re just hitting a puddle when in fact you’re hitting a crater-sized pothole.

So needless to say last week we spent it building an ark, gathering up the animals 2-by-2.. LOL It’s funny as every time I think of that I think of Noah I get flashbacks from the Evan Almighty movie and the “Building an Ark for Dummies”. Steve Carrell is truly awesome in that movie! And hello!!!  Morgan Freeman as God… CLASSIC!  He and James Earl Jones have THE BEST Hollywood voices! It’s funny as Steve Carrell is who made the whole Bruce Almighty for me as I’m not a fan of Jim Carey at all. I just can’t get into his type of comedy. Speaking of movies?  What’s the last movie you saw?

Yesterday we spent the day at with the Fantabulous in-laws. Always an amazing time. Mama Fantabulous wanted a night off from cooking so the 4 of us opted to hit up a local pizza place by them. It wasn’t bad; friendly people and the pizza was good. But I just am not a fan of going to a sit down pizza place and being given real silverware but paper plates. It just seems wrong. I mean either go full-fledged disposable utensils and plates or give me stuff you have to wash.

“There’s no place like home. There’s no place like home.” Seriously I feel like Dorothy from The Wizard of Oz after these past 2 weeks. Folks when I say I now know what hell is truly like, believe me. I have never, in my life, been as sick as I was for 3 weeks with a severe upper respiratory infection and bronchitis. But what made it a bajillion times worse is that I had to travel for 2 of those weeks. The first week I had to stay in a hotel up at my office for the first week as we had a 5-day long summit which required us to be there a good 12 hours a day. And since I live about 1.5-2 hours away with traffic I was truly unable to drive the distance so I had to pay for a hotel. No, work didn’t pay for it. Let’s not go there as that’s a very, VERY touchy spot. I did it for my own safety. I then got home on a Friday night only to have to scramble, while on my 2nd round of meds and being forced by the doctor to have chest x-rays to see if I had pneumonia (good news I didn’t), to pack and try to make Mr. Fantabulous (who was still sick himself) food for the week as I had to fly out to San Diego butt-early (technical time) Sunday morning for the week.

I. AM. EXHAUSTED. Physically. Mentally. Emotionally. I’m just done. These past 2 weeks honestly pushed me to my breaking point. It got so bad that literally a few nights while out in Cali I called Mr. Fantabulous in tears. Work just broke me. Like my spirit is broken.

Thing is, I’m not one to really get down or even depressed really. But right now I just feel disconnected if that makes sense. I think it’s at the point where everything is just getting to me. The house still isn’t done. It’s like one thing after the other after the other is preventing us from our goal of getting it on the market this April. Maybe it’s possessed? LOL

It’s one of those days where I just need a hug

Hey TKW Family!  My apologies for getting this out super late on Sunday but this past week I was the sickest I have ever been in my life and I was traveling for work on top of it. I got home late Friday night, spent all day Saturday trying to get a teensy bit of rest in between the 9 million things I had to get done for my super early flight out this morning to California.

I’m sitting in the hotel right now, fighting to keep my eyes open but I cannot miss posting a weekly menu.

I have SOOOOOOOOOOOOOO MUCH to catch you guys up on but let’s do that later this week k?  I need to get to bed as my day starts super early tomorrow and it’s going to be another hellish week.
