Weekly Menu

Get out of that same ol’ recipe rut and try one of these delicious and easy recipes this week! This week I highly recommend making the Cheesy Spaghetti Squash Pizza and Caramel Infused Apple Cheddar Chicken Burgers!

Happy Sunday and Happy Birthday to me (and to all of my birthday twins out there!)!!!  How was your week?  Mine wasn’t too bad, just long. It just felt like the week would never end. At work, I received some really amazing praise and acknowledgments for all of the work I do and how everything I did for that one massive project I was one was crucial. It’s funny as I’m not one of those workers that looks for praise or stands up and says “Hey look at what I just did.” I’m there to do a job and getting a paycheck is enough. Thing is, I love what I do and it shows. But every now and then, when you’re going those extra miles, burning the midnight oil months on end and giving everything you have to make sure a project is a success it’s nice to be praised and honestly, thanked.

Last week was also a super busy week here in the TKW Test Kitchen. As you saw I posted 3 new recipes:

Buckeye Ice Cream Peanut Butter Cake Bomb
Peach BBQ Pork Bite Crostini
Caramel Infused Apple Cheddar Chicken Burgers

Now those 3 recipes, I’m telling you what guys, they NEED to make an appearance at your upcoming Memorial Day cookouts. Those Peach BBQ Pork Crostinis are insane!  Like I could eat just an entire plate of those as a meal. Then that burger. Oh, Dear Sweet Baby Jesus people! If you do not make this burger you’re committing a crime. It’s literally one of the best burgers I have ever had in my entire life. And that dessert…fahgeddaboutit. I did my Mom proud with that recipe. And if you think about it, when you make all 3 you literally made an entire meal – appetizer, main course, and dessert. You need nothing else!  Well okay, maybe some cool drinks.

This upcoming week I have lots to get done. With Goetz’s Candy Company being one of my newest clients I have more recipes I want to create for them using their amazing products. Plus I have some other client recipes as well as stuff I just want to share. This is the time when I really, REALLY need an assistant (locally I’m afraid) to help me start with video shooting and editing. But for now, I’m managing. I got this!

Happy Sunday and Happy Mother’s Day TKW Family!  Mother’s day is tough for me, as is most holidays since both of my parents have passed on. It’s been 29 years since Mom passed and not a day goes by that I don’t miss her. Even after all these years I still carry some feelings of anger within as I feel I was jipped out of a life with her as she was taken when I was just a kid. Actually, I was young when she, my father and grandmother passed. And while I there are 5 older siblings, due to the big age difference we aren’t close. So for me, I almost grew up an only child if that makes sense.

You guys would have loved my mom, both my parents actually. Full of life, spitfire and as my Dad would say – “gumption”. Her laughter filled the room and just a smile from her put you at ease. She was the Mom to everyone. You walked into our house and you felt at home. You never left with an empty belly or a doggie bag. Mom enjoyed the simple things – her flowers, bingo, and cooking. While we didn’t have money or ‘things’ she didn’t care. She taught us to work with what we had and use the gifts God had given us.

Mom is the one that taught me how to bake; how to respect the ingredients. She taught me that with just a few basic staples you can create deliciousness. Mom taught me to be myself and that I AM WORTH IT. She’d wipe my tears when I got hurt or when I was picked on. In 18 short years, Mom taught me a lifetime of lessons and values. For that, Mom, I am forever grateful. While it doesn’t get easier I’m able now to think of her and smile as God blessed me with an Angel on earth who so happened was my Mom.

Hola TKW Family and happy Sunday! So WOW, what a week I had last week!  I REALLY hope you follow me on Instagram as OMG the pictures I posted with my trip to Mexico were insane!  I had an AMAZING time though it made me realize I should really learn Spanish. Sure I can speak French buuuuuuuuuut I’m thinking Spanish is a must-learn as the culture and food are something that I fell in love with! So let’s dish about the trip out. Since I couldn’t find a direct flight I had to fly from Pittsburgh into Houston which isn’t bad. The flight was pretty empty and yours truly flew first class – for every flight! Yeah, I’ll never fly coach again. But anyway, behind me there were a bunch of empty seats. Since my driver picked me up at 1 am, I figured I could sleep on the plane since I knew I was going to have a packed day.

Yeah, that didn’t happen. The lady at the gate decided that in all of the bajillion empty seats on that plane she had to place a couple and their 2, very adorable, four-month old twins. Now I’m totally cool with kids on planes. But yeah.. these kids were sick and they didn’t cry during the flight. Oh no!  They screamed/wailed/shattered glass with their shrieks the ENTIRE PLANE RIDE TO HOUSTON!  I literally wanted to die. My music couldn’t go any louder. Seriously thanks gate lady…

Thankfully my 2nd leg from Houston to Guadalajara was quieter as I got to sleep a bit. As I was getting off of the plane I met one of my fellow writers that were also on the trip. We were the first two to arrive so we, with our brand representatives, chilled out in the airport. Once everyone arrived we went up to Olmeca Altos Tequilla Distillery. So first the roads…. some paved, some not. The roads that were not, well, it was like you had to ride over boulders and go uber slow as you’d kick up red clay dust for miles.

Oh Sunday how I really am not ready for you to show your face. You mean laundry, a rush to get shoots and posts done, errands, all day in the kitchen (Okay so that I enjoy) and that I only have a few hours left of not wearing real pants. But I can’t prevent it from happening so I might as well embrace it.  Today’s a busy day here in the TKW Test Kitchen.  I’ve been craving my Mom’s stuffed cabbages in the worst way.  I think it’s a summer thing as growing up she always made them with a big bowl of her buttery mashed potatoes.  When I was at the store the other day they had huge heads of cabbage on sale and immediately I started craving these cabbages.  So right now, as I’m typing this, I have her stuffed cabbages in the oven. However idiot me forgot to put a catch tray underneath my pan and tomato sauce dripped on the bottom of my brand new oven.  It STINKS to high heaven but they should be done soon.

Now the trick, without turning on the self cleaning part, is how to remove the blobbed tomato sauce on the bottom. I’m thinking hot water and a baking soda paste should work.  What do you use?

Earlier this morning I made Italian hot sausage stuffed banana pepper meatballs which were KILLER!  Later I have to make buckeye brownies for my boss.  I haven’t baked him anything in a while and since he’s back to work after a hip surgery I thought it would be a nice treat.  Yeah I’m an awesome employee!  LOL

So how was your week?


Mine was LOOOOOOOOOOOONG!  I swear my week lasted for 10 days straight!  Last Sunday we worked, yes we, worked on my car until 2:50am (remember I get up at 5 now for work).  We had to replace the leaking radiator and condenser.  However nothing is ever easy for us.  He literally spent 4 hours driving around all day because he would find something else broke or the part he bought was missing pieces. It was NOT a fun day – I mean I had grease under my nails AND on my face/chin/chest/butt – how does that even happen?  Monday we went car shopping which eh, wasn’t bad.  We went to 3 different places last week and met 2 really nice salesmen.  They didn’t try to ‘sell’ us or even ask for our numbers to call and pester us.  The one said “If it’s okay with you I’d like to give you my card.  I won’t ask for your number as I respect your privacy.  If you want to look more then please call me at your leisure.”  Have to admit, was pretty impressed with that.

With all that I think we settled in the car I’ll get.  Now it’s not what I want.  What I want is a Mercedes SUV BUT I drive over 110 miles a day for work and that’s just plain stupid to invest in that vehicle.  I currently have a civic with 165k miles on it and it’s a champ.  It’s never had a problem – the radiator and condenser is my fault as I hit a trailer hitch.  So I’ll most likely go with another civic but the touring edition. I mean if I’m in the car that much I might as well be comfy, right?

What else?  So the shoulder it still hurting pretty bad so I’m going to see my shoulder surgeon on Thursday.  More than likely he’ll send me straight for an arthrogram as I can’t get cortisone shots due to my being allergic. I’m a hot mess to say the least.  So now I’m babying it.  Oh so get this.. we’re having our work picnic in 2 weeks and my name got signed up for kickball.  Now THAT should be interesting. They all know my shoulder is bad so all I have to do is kick the ball – someone will run the bases for me.  I hope!

Oh my timer is going off on the oven which means my cabbages are done.  With that, have an amazing day and enjoy this week’s Weekly Menu!
