Get your deliciousness on with this one pan meal! Sheet Pan Smoked Kielbasa, potatoes and green beans make up a delicious dinner in no time plus it’s perfect for weekly meal prep…or when you only want to wash one dish!
So with my really being limited to what I can and cannot do in the kitchen, I have to rely on Mr. Fantabulous to do most of the cooking. And since I’m 1-armed if you will he’s also the one that has to do the dishes. Sure we have a brand new dishwasher but we rarely use it. I know, we’re weird. Since he’s bearing the brunt of all of the house work, yard work and construction stuff I try to keep dinner easy as possible while delicious.
When we were at the store he spied fresh green beans. Now this man loves these things. I mean he’ll eat them raw. Now I like many vegetables raw, green beans are not one of them. Growing up he would have loved being in my parents garden with me as one of my jobs was to pick the beans. And having 41 acres, we grew A LOT of beans. Now when I make green beans I tend to go to one of my all time favorite Green Beans recipe – Grown Up Green Beans. It takes all of the elements of that Thanksgiving green bean casserole but makes it all fancy schmancy. And no canned soup. Yes, it’s ok in a pinch but please, make homemade!
Anyway, there was no way I could ask Mr. Fantabulous to make that as, while it’s not hard or complicated, he’s still not a huge fan of cooking. Eating yes; cooking no. lol While we were shopping I picked up some potatoes and kielbasa just because those are quick and easy meals. And that’s when it hit me – Sheet Pan dinner.
Sheet pan dinners are something I can remember my Mom and Grandma making when they didn’t really want to cook but they had to feed the family. Now when they made theirs they had full size sheet pans and usually made 2-3 pans at a time. Since it’s just us I went with a half-sized sheet pan but you can go with a full one. You don’t want to go smaller as you don’t want to crowd the pan or have things on top of each other.
When it was time to start dinner I could see the look of ‘ugh’ on his face. He’s tired and if you saw our home situation and the amount of work that we’re (he) is doing, it’s unreal that we can get it done. I got the ingredients out and grabbed the pan. As the oven warmed up he went to where the pots hung and asked how many we needed tonight. I said “None, just this pan.” He then went to the cupboard to get bowls and asked how many we needed. I smiled and said, “None, all we need is this pan and a cutting board.” He raised a brow which made me chuckle. As he lined the pan with foil, I rinsed the veggies.
After he chopped everything I put it on the pan in an even layer and then drizzled with the oil and some seasonings. He put it in the oven then sliced up the kielbasa. He looked at me and sighed “Now what?” I smiled and told him to go sit for 25 minutes. He raised a brow and quickly said “Don’t you do anything. You need to heal and I don’t want you trying to sneak in and cook.”
25 minutes later he came out to the kitchen, flipped the veggies and put the kielbasa on top. Back into the oven for a bit and then it was time for dinner. As he pulled it out he said “Wow, this smells really good. This looks so good!” Now what he said after that first bite, I almost peed my pants from laughing. After he ate his first bite he exclaimed “What the hell??? Why haven’t we made this yet? I’ve been cooking all this stuff that requires 42 pans and 67 bowls and this was literally a flippin pan! I do NOT want to be Julia Child!”
…and then he proceeded to tell me how to make this in Julia’s voice. OMG I could not stop laughing! The man is just stupid silly. lol God, I love him!
Later that night, he kept talking about how awesome dinner was that HE made and that he wanted to make all of the dinners like that – even soup. LOL He said “Honey you’re a genius! This is ingenious! I can’t believe you thought of that!” I laughed and said “Honey, thank you but that cooking method has been around for decades. But I’ll make you more recipes like that again.”
It’s funny as I forgot about this type of cooking until it started showing up on Pinterest. This type of method is as old as the hills as my Daddy used to say. I have so many recipes from my family that was passed through the generations that all share this common cooking method. So since it’s Mr. Fantabulous approved, look for more sheet pan recipes!

Ingredients
- 2 pounds Smoked Kielbasa
- 4–5 medium, skin-on Yukon potatoes
- 1/2 – 3/4 pound fresh green beans, ends trimmed
- 2 tablespoon olive oil
- 1 teaspoon kosher salt
- 1 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
Instructions
- Preheat the oven to 400F, rack in the middle. Line a large rimmed baking sheet with foil ensuring the foil goes up and over the sides.
- Add the green beans to the pan.
- Cut the potatoes into 1/2” cubes and place on the sheet pan spreading the beans and potatoes in a single layer. Drizzle the veggies with olive oil. Sprinkle on the salt, garlic powder and smoked paprika.
- Roast for 25 minutes. While the veggies are roasting, slice the kielbasa on an angle 1/2” thick.
- Remove from the oven, turn the veggies (If the potatoes start to stick, leave them be). Add the kielbasa on top. Return to the oven and bake for 25 minutes.
- Remove from the oven, flip over the kielbasa and bake for 5 more minutes.
- Remove from the oven, taste for seasoning and enjoy!
- Store any leftovers in an airtight container in the fridge.

We love this sheet pan dinner mid week! It’s delicious and fairly simple. I have to say my kids didn’t care for the green beans done in the oven so I just do the potatoes and sausage as per the recipe but boil the green beans until tender then toss them in frying pan with butter, salt and garlic. After everything is done I toss the green beans in with the potatoes and sausage and serve it in one big dish. Love it!!

Everyone loved this. Made according to recipe but added some sweet potato into the mix and used French beans. Using the thinner beans resulted in a crispier output but the fam gobbled them up as a result.

I love sheet pan dinners! I made something similar but used Brussel sprouts instead of beans. I called it Updated New England Not Boiled Dinner. My family loved it! I made your recipe and the hubby said, “Make that again”. It gets the DH seal of approval!

This is a wonderful idea. I gave to my girls, and one who has a meat and tatters family stuck to the plan, the other who’s family likes more veggies added some pretty bell peppers and squash. As for me (the “she said” part above), I like the green bean component above. It seems an unusual ingredient with the sausage but is really good with the sausage-plus-potato combo. Add some spicy mustard and you are done!
My changes: (1) spray the foil with nonstick before the potatoes and (2) blanch the beans and add them with the sausage at the halfway mark (which I will likely pair with a weekend meal prep, saving half for this recipe).
