Sweet Honey Butter Buttermilk Cornbread

Find out my secret to getting super tender, mildly sweet and buttery cornbread!  You’re going to fall in love with this family recipe! Get your pans ready and let’s start baking!

Cornbread is a staple in my house in the winter. It’s the perfect accompaniment to hearty chili, pulled pork and fried chicken. It makes for an amazing stuffing and fried up pieces of deliciousness in the morning. Just dip each nugget in an egg bath like you would for French toast and when done, drizzle with maple syrup! Mmm mmm mmm!  Delish! Now before I go any further, this apparently is a northern version of cornbread. I’m told that “no self-respecting southerner sweetens their cornbread”. Okay.. more for me!  I’ve made it without the sweetness and it just tastes bland to me.

Sure some southern versions will add cheese and or jalapenos for a savory version. But I have to ask if you a savory version is okay, why isn’t a sweetened version? *blink blink blink* Shrugs. Anyway, when my grandma (and Mom) made cornbread they sweetened it so that’s what I did. I’ve taken their recipes and changed it slightly as even theirs was coarse, not really soft and tender. It was delicious but kind of mealy from the cornmeal. That’s a texture I don’t care for. It kind of reminds me of sand. Blech.

Sweet Honey Butter Buttermilk Cornbread

I want cornbread that is soft, tender and has that buttery goodness that just melts in your mouth. And that’s exactly what you get with this recipe. As long as I can remember cornbread in my house was made from scratch. Mom and Grandma never bought the 49cent boxed stuff (though truth be told, is pretty tasty in a pinch when you doctor it up!). This, like many of my family’s recipes, weren’t written down which means it took me many, MANY, test batches (and failures) to finally perfect it.

Okay so let’s be real here when it comes to Sundays…they are both awesome and sad at the same time. How so? Well awesome in the fact that most of us get to sleep in and not have to deal with that stupid alarm clock. You get to snuggle a bit longer, you don’t have to deal with Monday traffic, work or putting on real pants. You can chill out all day in front of the TV or head out on all day hike. So what’s the downside? Um hello, the next day is Monday. You have to get up at some ungodly hour to the most annoying sound (alarm), you sit in traffic, deal with a million emails and do that whole work thing. And there’s that whole wearing real pants thing.

Now for me, my Sundays are spent mixed between laundry, yard work, and creating new recipes. And I can’t forget to mention the photo shoots, TKW administration stuff and oh yeah, “me” time.

Swirled Apple Vanilla Bean Loaf Cake

This pan would rock at making an epic meatloaf, formed salad, pate and so forth. I have a ton of ideas planned for this cake including a Neopolitan swirled cake. But today I wanted to go with something a bit more jaw-dropping. By adding the apples to the swirls of the cake pan you end up with some seriously gorgeous cake. And those crevices just beg for caramel drizzles.

Butterscotch Pudding Cream Pie with Toffee Crunch!

Calling all Butterscotch lovers!!!  This is the pie of all pies!  A graham cracker crust with a layer of fudge is the perfect foundation for the most dreamiest, creamiest butterscotch pudding cream filling you’ll ever have!  And HELLO!!!  Toffee Crunch on top!  This is truly a butterscotch lovers dream come true!

Did you ever make something, not sure if others would like it but in your head, you kinda ‘knew’ it would make sense?  Well, that’s where this pie came from. I had been cleaning out my fridge and found a jar of my hot fudge sauce and some butterscotch topping in the way back. They were kinda sitting in the spot where sauces and mystery meats go to die…waaaaaaaaaaaay in the back. Now they were clearly in their wrong fridge spot (which is SUUUUUUUUUUUCH an issue for me).  Everything and I mean EVERYTHING, in my fridge has a designated spot. Milk and juice go in the door with the milk always being closest to the door opening. Ketchup and mustard going on the same shelf as the mayo. Jelly and sweet sauces go to the next shelf. butter goes in one area and the fruits/veggies go into their respective drawers.  God help you if you put a tomato in the meat drawer. OMG, it’s full on war. Well okay, not really but you’ll seriously bug me until I move it.

So that’s kinda where this pie evolved from. Now Mom made a ton of pudding pies growing up and honestly most of hers were from the instant mix. Making homemade pudding from scratch is awesome and the flavor can’t be beaten but I didn’t have a lot of time to make it plus I wanted to clean out my cupboards. You see when we were remodeling the kitchen I had to clean out ALL of my pantries and cupboards – you’d be surprised how much stuff you forget you have! Well at some point in time I bought a bunch of instant pudding mixes. Pudding mixes are a great flavor addition to cakes and cookies but honestly I never really use it for pies.
