Oh hello, 3 1/2 day long weekend!  Just look how sexy you are with your carefree attitude, your grilling scents and your tempting dishes. So I don’t know about you but this child is most definitely looking forward to time off. Now while most of you will be chillin’ at some cookouts I’ll be in full TKW mode as I NEED to get at least 2 months of posts typed up and ready to go before I have my surgery on the 9th. Thankfully I have a barrage of recipes done, I just need to edit the photos, type up the recipes and posts. It’s all good though. I can’t just abandon you guys for 2 months.

But this weekend we’re keeping it low-key; no plans, no cookouts. I just want quiet time ya know?  But that doesn’t mean I’m not going to have all kinds of yumminess. I’ll definitely make some burgers and dogs but after making that Caramel Infused Apple Cheddar Chicken Burger, I’m not sure I could eat a plain beef burger again.  It’s so flippin’ good people. And of course Deviled Eggs – gotta have deviled eggs. As for what else, who knows. Maybe I’ll make all of the stuff below and whatever we don’t eat, I’ll make freezer meals so while I’m recuperating, Mr. Fantabulous can eat.

Now there are a ton of recipes to choose from and you’ll see, some use the pressure cooker. Seriously why not use it this weekend?  Save yourself a boat load of time and trouble. You could actually enjoy your party instead of slaving over a grill or oven.  But no worries if you want to grill, go for it. You can make many of these on the grill or better, yet finish them on the grill. And yes you can most definitely make pizza on the grill.

Tuesday’s Tip with The Kitchen Whisperer – Seasoning your Grill

With Memorial Day right around the corner grills will be fired up and working overtime. Your food needs to be the star of the cookout. On today’s Tuesday’s tip I’m sharing with you some tips on making sure your grill is seasoned well and ready to go!

Burgers, hotdogs, chicken, chops, veggies, pizzas and even desserts will be aplenty this Memorial day weekend. You have a perfect burger or that prime steak, you slap that puppy on the grill and what happens.. it sticks and ends up looking like it got run over with a mulcher. It’s mangled, deformed and looks like something not edible. Just like being in the kitchen with cast iron pans you need to ensure that your grill is seasoned. Now one thing we need to clear up here is the whole ‘what does it mean to season’ something. When it comes to a grill or say cast iron pan you’re not adding flavor to your dishes but rather you’re ensuring that continually coating the surface with a thin coat of oil to aid in the prevention of rusting and or foods sticking.

Most grills have grates that are not non-stick. By seasoning, cleaning them and then re-seasoning them you’re prolonging the life of the grates, aiding in the prevention of rust forming and building up a surface that mimics a non-stick aspect.

So how do you do this?  Easy!

Southwest Turkey Burgers with Roasted Tomatillo Salsa Verde

As I get older I find myself becoming less and less of a ‘beef’ eater and leaning more towards turkey/fish or veggies.  Don’t get me wrong – I LOVE me one fat juicy burger, a slab of ribs, bacon… well I’ll never divorce bacon but sadly beef doesn’t always agree with my stomach.  But if you’ve ever cooked with ground turkey, due to the low fat content, it can dry out rather fast. Now the best/healthiest ground turkey to buy is the one that is all ground white meat but again it can be dry so what I found is a healthy balance of 80% ground white turkey and 20% ground dark turkey meat.  The dark meat is where you truly get that rich full-bodied flavor and since it’s such a low fat content I don’t have to worry too much.  Plus you know me, everything in moderation.  So when I bought 5 pounds of my ground turkey mixture I knew I had to make me some mean burgers with it.  Since I had just made a batch of my awesome Roasted Tomatillo Salsa Verde I opted to go with a Southwestern flare.  So today you’re getting my Southwest Turkey Burgers with Roasted Tomatillo Salsa Verde recipe which seriously I ate every single day for a week and never once got tired of them because they are THAT amazing and you need to make these TODAY.  Yes that was a run on sentence.  Yes, it was intentional.  lol

It’s funny how turkey or chicken burgers, which once were the hottest new thing in food, are now part of the norm like ‘regular’ burgers.  Growing up we had beef burgers, maybe deer (gag – sorry but I grew up in a family that hunted and I hate venison) and turkey was meant for holidays only. There was no thought of ever grinding turkey meat up as a burger but who ever thought of it.. GENIUS!
Know what else is genius? THIS BURGER! Seriously, it’s one of my top 5 favorite!

4th of July Star Spangled Dishes 2015 Edition

With the 4th of July next weekend and it being a long weekend for most cookouts and bbq’s will be going rampant.  Now if you’re like me you get sick of the same ol’ same ol’.. burgers and hotdogs.  They are fine, don’t get me wrong, but why not mix it up this season and try a new recipe.  Whether you’re hosting or attending a gathering, if you show up with one of these dishes below you will surely be the most popular person there and invited back next year.

Right now we haven’t decided yet on what we will be doing as we’ve been invited to a few parties (LOVE YOU GUYS!) but the past 2 1/2 weeks Mother Nature has been having PMS to the MAX and pretty much raining with monsoon-like rains.  If we have to go anywhere we’ll have to build an ark first.  And when it comes to cookouts, no one likes to host a summer party in the rain.

So this year even if the weather keeps you indoors, go with one of these 4th of July Star Spangled dishes and have your own party in your living room but um, minus the fireworks *wink*
