Get out of that same ol’ recipe rut and try one of these delicious and easy recipes this week! This week I highly recommend making the Ziti Peperonata with Hot Sausage and the Crock Pot Eye of Round with Mushroom & Onion Gravy!

Happy Sunday TKW Family from a very sick TKW household. Both of us are down for the count with this death plague that is going around. So far the doctor doesn’t think it’s the flu but severe upper respiratory infections but I don’t know, he’s had it for 10 days and I’m going on 5 so we’ll see. So it’s Superbowl Sunday. Who’s out there partying? What are your game day eats? Normally we have a super bowl party but we didn’t this year as one, we’re sick and two, I’m not home. I’m actually out of town this week for work.

I’m not too happy about this as I don’t feel well and you know what it’s like when you’re sick you want to be home in your bed surrounded by your stuff. But since I’m not Oprah-rich, I must work. I don’t mind really as I do love what I do. It’s just the worst timing. I hate leaving Mr. Fantabulous when he’s so sick.

But anyway back to the game tonight. I’ll probably only watch some of the ads and most definitely the halftime show. I mean HELLO – #TeamJT Love me some Justin Timberlake! The only thing I do miss are the foods served during the game. I did stop at a local Walmart up here and grab some food for the week since my room has a full kitchen. SWEET!

Lord let this week go fast!

Happy Sunday TKW Family!  Brrrr it’s finally cold here in Pittsburgh! We still haven’t had snow yet; just a few flurries. But did you see that Atlanta got something like 9″ the other day. North Carolina as well got hit with snow yet we, who live in the snow belt got squat. Oh trust me, I’m not complaining as folks around here honestly can’t drive in snow. I mean I can get it if you’re new to the area and never had to deal with driving in snow but when folks who’ve grown up here, know the type of snow that we get and still do not get snow tires, kills me. I’m a truck girl but even if you have 4-wheeled drive and your butt is driving with summer tires, my car with snow tires will handle better in the snow. But I digress – ATL and NC – love you guys but you can keep the snow!  Merry Christmas!  LOL

Last week…. God what a blur. When you work in IT, there really is no down time. While most companies slow down around the holidays, IT never sleeps or stops. Even though we’re going into a code freeze (which means no production changes can be pushed through for 4 weeks), this is my super, SUPER busy time. I have to map out my projects for the next year, define my strategies and define the road map. Oh yeah, all the while fitting in my end of the year vacation. But I can’t complain too much as I have a job and more importantly I have a job that I actually really love.

Thursday night was an eventful night in my house. With us both being engineers we can never do things easy. We have to analyze stuff (to death), bring out our calculators, engineering paper and honestly, if we had a whiteboard in the room, that would have been brought out too. You see we’re finally at the point where we can start decorating (and using) the media and billiard room. Which meant we needed to buy a tv. We bought the tv and it was to be delivered the next day. Us, being us, we had to calculate the optimal viewing angle and distance for a 75″ tv. It got bad – like 3 hours bad. We literally broke it down to writing out equations trying to find the tangent and tilt ratios of the tv. 3 hours…

Happy Sunday TKW Family!  Wow, December already? Man time sure does fly and yet it feels like I’ve accomplished squat. I know it’s all an illusion and in my head but it seems as the older I get the faster time goes. Is that the same with you?  For me/for us our time is consumed by this house and remodeling it. I’ll tell you what guys I will never EVER take on a home remodel job on our own. Maybe if it’s a normal sized room or project but doing 4,000 sqft on our own (and that’s not including the kitchen or the 4 bedrooms) is out of the question. Maybe if I was in my 20’s but now that I’m in my 40’s, hell no. How Chip and Joanna do this for a living is beyond me. But then again they do have a whole crew and we have well, us.

The sad part is, we’re doing all of this work just to put the house on the market. The house wasn’t bad at all but it was dated and needed a facelift. I’ll tell you what, whomever buys this house will have one fantabulously awesome house. If only this house was located closer to my work we’d stay but the commute, even though I work from home the majority of the time, when I do go into the office is wretched. So the past what, 10 days or so I had off work. I didn’t do too much TKW but rather spent my time working on this house.

Are you all done with your holiday shopping? I haven’t even started. It’s funny as Mr. Fantabulous is a big kid when it comes to Christmas. He tells me one day “No honey, don’t get me anything; we’re spending a lot on the house.” to “oh honey, I’d love to have this, this and this!  Oh and this too!” lol Ah my manchild. LOL I love how giddy he gets around the holidays and gets into it. When we’re working on the downstairs he always has on Christmas music and plans our evenings around what holiday cartoon is on.

Spiced Parmesan Honey Pork Tenderloin

These are days when you’re in the grocery store and literally you have zero idea on what to make for dinner.  Like nothing looks good nor does anything sound appealing. I can make 9 billion different things (or okay maybe a few less than 9 billion but you get the gist) but I just lost on what to make. Like I ran out of ideas.  Now if it were Mr. Fantabulous he would have been perfectly fine with pasta but you know me by now, I need a variety; I need something different.  Sure I go in phases where I could eat the same thing day in and day out (pizza and bacon) but even on that day neither of those sounded good.

Well clueless me didn’t realize that it was ‘feeding’ time at the store which meant there were 175,000 people all trying to get a morsel of a free sample.  I’m sorry while I too appreciate a snack if you will while shopping as it does create an upsell for the store but I swear to God people in general lose their manners when a free 1/8″ piece of free food sample is offered.  I don’t get it and if there is such a thing as shopping cart rage then I have it.  I’ve actually had to say loudly (after saying ‘Pardon me I’m trying to get through’ 47 times’) “EXCUSE ME!  Would you move your butt out of the way so I can actually shop and not stand in line like a herd of cattle waiting for their slop?  Move it lady or go home and eat some damn carrots!” and there may or may not be a minor curse word (or 14) throw in there (provided there are no elderly or children around).

Anyway, as I rammed these people with my cart (okay it was just in my head where I did this … admit it, you’ve wanted to do it as well), I managed to get to the fresh cut meats section.  There I saw the butcher just put in some of the prettiest pork tenderloins I’ve ever seen.  Just truly beautiful.  So I bought a 4lb loin and finished my shopping.  As I unpacked and put away the groceries I would glance over at the meat on my counter – kind of clueless as to why I bought it as I had zero idea on what to do with it.  I didn’t want it as any of the usual ways I would make it; I wanted something different.

Baked Chicken Parmesan Burrito

So I’m one that doesn’t really believe in ‘food’ boundaries.  I am one to push the limit if you will.  I guess the latest buzz word is ‘Fusion Cooking’.  I suppose that’s true but I’ve been doing this for years only we just called it pot luck.  Where you have a little bit of everything – kind of like Thursday night dinners which were comprised of leftovers from Monday, Tuesday and Wednesday.  Only instead of having it as all small dishes, I wanted to incorporate these ‘leftovers’ into a new dish; a “fusion” dish.

Remember my going nuts over my Gluten Free Crispy Chicken Strips?  Well I wanted to push my limits and see what else I could do with them other than dipping them in ranch or honey mustard.

I have a strong feeling that once you get over the “OMG she mixed Mexican and Italian” shock, you will fall in LOVE with this dish!  I know I did!


Yeah, I went there!  I blasted through those food boundaries and mixed Mexican with Italian.  These Chicken Parmesan Burritos are truly amazing.  That outer crispy tortilla shell laden with Italian Marinara, melted cheesy only to stuffed with Crispy Chicken Strips, Read the rest of this entry »
