Get out of that same ol’ recipe rut and try one of these delicious and easy recipes this week! This week I highly recommend making the Crunchy Asian Hoisin Chicken over Brown Rice and the Spinach & Artichoke Crispy Skillet Pan Pizza with optional Garlic Butter Herb Shrimp!

“There’s no place like home. There’s no place like home.” Seriously I feel like Dorothy from The Wizard of Oz after these past 2 weeks. Folks when I say I now know what hell is truly like, believe me. I have never, in my life, been as sick as I was for 3 weeks with a severe upper respiratory infection and bronchitis. But what made it a bajillion times worse is that I had to travel for 2 of those weeks. The first week I had to stay in a hotel up at my office for the first week as we had a 5-day long summit which required us to be there a good 12 hours a day. And since I live about 1.5-2 hours away with traffic I was truly unable to drive the distance so I had to pay for a hotel. No, work didn’t pay for it. Let’s not go there as that’s a very, VERY touchy spot. I did it for my own safety. I then got home on a Friday night only to have to scramble, while on my 2nd round of meds and being forced by the doctor to have chest x-rays to see if I had pneumonia (good news I didn’t), to pack and try to make Mr. Fantabulous (who was still sick himself) food for the week as I had to fly out to San Diego butt-early (technical time) Sunday morning for the week.

I. AM. EXHAUSTED. Physically. Mentally. Emotionally. I’m just done. These past 2 weeks honestly pushed me to my breaking point. It got so bad that literally a few nights while out in Cali I called Mr. Fantabulous in tears. Work just broke me. Like my spirit is broken.

Thing is, I’m not one to really get down or even depressed really. But right now I just feel disconnected if that makes sense. I think it’s at the point where everything is just getting to me. The house still isn’t done. It’s like one thing after the other after the other is preventing us from our goal of getting it on the market this April. Maybe it’s possessed? LOL

Happy Sunday TKW Family!  I’m tired. Like did you ever get so tired that you’re lying in bed, that the thought of getting out of bed to go to the bathroom is something you actually contemplate? No for real. Like you know you have to tinkle but your body is like “but this bed is soooooooooooo comfy and you ache ALL OVER. Ignore that urge, it’ll go away”… and you actually think you can ‘fool’ your bladder. You do the leg cross, then you roll over and start to ‘rock’ yourself thinking about everything else BUT the fact that your bladder is going to burst. That was me this morning. Like I legit laid there in bed, rocking myself (actually I think I got in a pretty good core workout), ‘ignoring’ the urge… yeah that lasted about 3.2 seconds. By the time I took 4 steps I knew there was no going back to bed for this girlie.

<deep sigh> Perhaps it’s for the best as I have so much to get done today. 4 new recipes I HAVE to create today and take photos. Oh yeah, Mr.Fantabulous also said that WE need to go to Home Depot and Lowes because WE need a date day. Um… no, I’m breaking up with you then as I don’t want those dates. LOL Actually I do need to go out that way as I need a few things from Sam’s Club to which I did say “Honey, while you’re out there can you just stop in and get the stuff?” The man looked at me like I had 3 heads them simply said “Oh no sweetie, I could never cheat on you and go to your store without you.” LOL such a brat!

So how was your week? It was a ‘Week of Mondays’ for me last week. It just never seemed to end. And just when I thought I was finally ahead of the whole work thing more crap came my way. But I do love what I do so I can’t complain too much ya know? Do you like your job/what do you do for work? I’ve been fortunate as I truly love the work that I do – between my ‘day’ job and TKW. I’ve never worked a job that I hated; a company – not necessarily hate but I was rather happy when I left.

So the Fantabulous In Laws spent most of the weekend here again. It was such a great time as always. Mama Fantabulous made her meat sauce (Mr. Fantabulous likes hers better than mine but loves my Sunday Gravy better than hers – we call it ‘dividing the love’ lol). It’s funny as there are only 2 differences between her recipe and mine is oregano and water. She doesn’t add oregano at all (which is odd to me but whatev) and she adds waaaaaaay more water than I. I like a thicker ‘gravy’ sauce but as long as he enjoys it so be it. I can make both sauces (mine version for me and her version for him).

Can we just have a weekend do-over? I’m beat!

Protein Packed ABC Chicken Burgers

Fall is one of my favorite times of the year.  To me, this is the time when God gets out his box of crayons and colors the world is the most beautiful colors. Apple orchards are producing some of the most amazing crops and where I live, apples are in mass abundance.  I’m fortunate to live in the country to where I have access to a multitude types of apples.  Huge, crisp and so sweet.  Plus apples are super healthy for you!  I mean ‘an apple a day keeps the doctor away’ right *wink*

In the Spring, ever y Friday I showed you how to  incorporate SI03‘s AMAZING Syntrax Protein Powders into various recipes albeit savory, desserts, breads, muffins, main meals, etc.  I’m happy to say we’re back!  I took the summer off, worked like a mad scientist in the kitchen to come up with even more awesome recipes that this time, push the limits on creativity using their powders. Just wait until you see some of the things I came up with!  I’m truly excited over this!

Ever since I shared with you how to make my Protein Packed Apple Crisp with Syntrax Nectar Apple Ecstasy Protein Powder, I’ve been hooked on this flavor.  Now this powder can be used in whole slew of sweet dishes that are yummy and healthy!  This time around, I wanted to think outside of the box and use the same protein powder in a more savory manner.

A Fantabulous kinda day!

Today was an AWESOME day!

Mom & Dad Fantabulous came up which meant I got to cook and cook and cook!  To some of you that seems like not so much fun but honestly, I absolutely LOVE it!  I’m so close with them and knowing they appreciate and love what I make means the world to me.I

I made the following today:
– Coconut Cream Pie
– Roasted Garlic loaf of bread

No rest for the wicked…

Dear LORD this has been one busy weekend to say the least!  So naturally I worked all day on Friday.  After work my girlfriend and I went to see Magic Mike.

Um I have just 3 things to say about this movie:

  1. I *think* there was actual dialogue and a movie plot but I can’t be certain.  I think to be fair to you all, I’ll have to see it again just so I can let you all know.  I mean, what kind of friend would I be if I gave you only half information, right?  LOL
  3. This movie will make you want to write a letter to Santa… trust me on this!

Saturday it was 93 degrees and 147% humidity here in Pittsburgh. No, really, it’s that’s humid!  Since Mr. Fantabulous and I had a bonfire to go to at my brother’s horse farm that evening I,  naturally, was asked to bring desserts.  However with it being that Read the rest of this entry »
