You liked. You shared. You tagged. You Instagrammed. You tweeted. These are the top loved recipes of 2017 that YOU loved the most!

This is one of those posts that always brings a smile to my face and honestly, helps me more than you’ll ever know. This gives me an idea on what you guys are and are not into. I get insight on what types of recipes you want to see and maybe less of ones that you don’t. I have a TON of recipes for 2018 already – yes, even 1 day into the year and a bunch of ideas for new recipes thanks to looking at these results.  My notes include:

Last year was SUCH a fun year for me. I started working with a bunch of new clients while creating even more deliciousness with those that have been with me since the beginning. I wish you guys could see my notebooks of recipes that I still have yet to share. I literally have enough written up (and most photos taken) to issue a cookbook. Speaking of… yes, I really, REALLY want to do that but I need a publisher for that as I’m not sure how to go about doing it myself. So if you’re in the business or have connections, let’s work together!

Bacon Mushroom Florentine Quiche with Olive Oil Savory Crust

The other day I had something rare happen in my life.  Like so rare that I think it’s only occurred maybe 5 times in all the years I’ve been married.  Yours truly had the ENTIRE house to herself for a whole evening. No you don’t get it, that never, EVER happens.  See Mr. Fantabulous went to a concert with his one friend and since this wasn’t a band that I really was a fan of (like I literally only know 1 song by them and that’s ONLY because Mr. Fantabulous plays that song on his guitar over and over and OVER and OVER…).  Plus, even though I absolutely love him, every now and then we all need some time by ourselves right?

So I made him dinner, kissed him and sent him on his way.  I had the ENTIRE house to myself and it was *gets on tippy toes cause apparently that’s what you need to do to reach that Oprah pitch/shrill* … it was AWESOMEEEEEEEEEEEEE LOL!  I was like that 13 year old kid who’s parents left them home alone in the house for the very first time while they went out on a date.  I was gonna eat junk food, run around in my undies and his dress shirt while sliding on the floor in my socks (yeah, I so was gonna recreate Risky Business – well sans the hookers and booze. LOL). About an hour or so after he left I realized I hadn’t eaten.  While in the kitchen I rummaged through all the junk food – Doritos, cookies, ice cream, cheeses, Fritos (oh how I love thee!) and then saw BACON! ♥♥♥

Yeah, I so went there!  I NEEDED bacon.  Now 99% of the time, Mr. Fantabulous will try anything I make but what I wanted to make, I knew he would never, EVER try.  I would have gotten that “You’re serving me scrambled eggs in a pie crust?  Say what??”  Yeah, I wanted a quiche.  I stopped at Costco the day before and bought a HUGE container of spinach, some mushrooms and fontina cheese.

Rustic Apple Crostata

Even though it’s mid August we’ve been having some cooler evenings here in the ‘Burgh. Now don’t get me wrong, I love the hot days of summer (well you can keep the 973% humidity that we have here) but there’s something just comforting about Fall.  Well yesterday I had a bajillion errands to run that included visiting my family.  My sister was having one of those ‘home’ parties and to know me, you would know I never go anywhere empty handed.  Just was how I was raised *shrugs*.

I knew I had to make something but was really limited on time.  I had this made in an hour and let it cool on the hour plus drive to her house.  This was met with rave reviews (them ladies inhaled it and even the piece that my sister ‘hid’ for her for later was gone… LOL).  This can be made either with from-scratch filling or canned filling.

If you didn’t want to use a thick filling you could easily cut up slices of fruit, add about 1/2-3/4 cup sugar, 2 Tbl of cornstarch and various spices to it (say about 1 tsp of cinnamon to apples or peaches etc). This recipe is VERY forgivving and while it’s rustic in nature it’s very elegant in appearance.

All about pie crusts…

Let’s face it.. home made pie crusts are something that intimidate a vast majority of the population.  Why?  I mean it’s just flour, water, salt, some type of fat and sugar.  How could 4-5 basic ingredients even have the most seasoned bakers/chefs become apprehensive?  Not sure but it does happen.

It took me a good bit of time to finally become comfortable with pie crust making and even a longer time to feel confident enough to provide guidance on it.  The fact that I can reproduce a fantastic, flaky pie crust every single time is honestly such a rush for me!  It’s like “Hey, I finally can hold my own”.
