Chicken Fiesta – the possibilites are endless!

Ingredients

  • 2 tablespoon extra virgin olive oil
  • 4 boneless, skinless chicken breasts, cubed
  • 1 cup red pepper, cut into strips
  • 12 green onions, chopped (white and green)
  • 1 tablespoon garlic, minced
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh cracked pepper
  • 2 tablespoon fresh cilantro, chopped
  • 1 small can chopped green chilis, not drained
  • ½ teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 3/4 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1 dash cayenne
  • 1/2 lime juiced
  • 1 can black beans, rinsed and drained

Instructions

  1. Heat the oil in medium heat.
  2. Add the peppers and onions to the pan and sauté for 5 minutes.
  3. Add the garlic and cook for 3 minutes.
  4. Add the chicken, cilantro, seasonings and mix.
  5. Cook for 3 minutes, stirring to incorporate the spices.
  6. Add in the lime juice and stir.
  7. Continue cooking for 4-5 minutes or until the chicken is done.
  8. Add in the beans and cook for 2 minutes.
  9. Remove from heat and garnish with fresh cilantro
