Chocolate Peanut Butter Cup Cookie Dough Dip

Ingredients

  • 1/2 cup butter, unsalted
  • 1/2 cup light brown sugar
  • 3/4 cup creamy peanut butter
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup semi sweet mini chocolate chips
  • 2 cups mini peanut butter cups

Instructions

  1. In a small saucepan over medium heat, add brown sugar and butter.
  2. Whisk until completely combined and butter is melted.
  3. Bring to a boil, remove from heat.
  4. Whisk in the peanut butter and vanilla extract.
  5. Set aside to cool completely – about 30 minutes. I actually put mine in a separate bowl and placed it in the fridge to cool.
  6. Once the peanut butter mixture is cool, in a large mixing bowl, beat cream cheese with powdered sugar until creamy, ~ 3-4 minutes.
  7. On low, add in peanut butter mixture and mix until combined.
  8. Fold in mini chocolate chips and mini peanut butter cups.
  9. Serve immediately or store in refrigerator until ready to serve.
  10. If chilled, allow to come to room temperature for easier dipping.
  11. Serve with pretzels, vanilla wafers, graham crackers… a spoon!
