Skinny Chicken Salad

Ingredients

  • 4 cups Perfectly Poached Chicken Breasts , shredded or cut into small cubes
  • 1/2 cup plain greek yogurt or low fat sour cream
  • 1/4 cup low fat mayo
  • 1/4 cup chopped green onions
  • 1/2 cup chopped celery (minced or bite size)
  • 2 cups red seedless grapes cut in half
  • 1 cup avocado, cubed small
  • 1 whole gala apple, cut into small chunks
  • 1/2 cup dried cranberries or cherries
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne (optional)
  • 12 tablespoon sunflower seeds
  • Bibb lettuce leaves
  • Radicchio leaves

Instructions

  1. In a bowl whisk together the sour cream, greek yogurt, salt, pepper and cayenne. Set aside.
  2. In a large bowl add in the chicken, celery, green onions, grapes, apple pieces and cranberries and toss.
  3. Pour in the dressing and gently toss.
  4. Sprinkle with sunflower seeds.
  5. Cover and chill for 30 minutes.
  6. Serve in lettuce or radicchio leaves.
