Ingredients

  • 1 box TRISCUIT Sriracha Crackers
  • 1 box TRISCUIT Hint of Salt Crackers
  • 1 box TRISCUITSmoke Gouda Crackers
  • 1215 slices Prosciutto, cut into 1” strips
  • 1/2 lb smoked gouda sliced thin in 1” pieces
  • 12 bunches green and red grapes, removed from the stems
  • 12 teaspoon olive oil (or grapeseed)
  • 1 teaspoon sea salt
  • 1/2 teaspoon thyme
  • Honey
  • 1 cooked Maple Chipotle BBQ Pork tenderloin, sliced into 1/4” slices
  • 1/2 lb sharp cheddar sliced thin in 1” pieces
  • 1 green apple, sliced thin into 1” pieces
  • 12 small zucchini sliced into 1/2” rounds
  • 23 large shallots sliced into ¼” slices
  • 2 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1/2 lb white cheddar sliced thin into 1”pieces

Instructions

  1. Preheat oven to 400F (375 for convection) and line 2 rimmed baking trays with foil.
  2. Place the zucchini and shallots on the pan and drizzle 2 tablespoon olive oil, 1 teaspoon kosher salt and 1 teaspoon pepper. Gently combine to coat all sides and roast for 20 minutes, flipping half way through.
  3. On the other pan add the grapes, drizzle over 1-2 teaspoon olive oil, sea salt and thyme. Gently coat all sides and roast for 15 minutes, flipping half way through.
  4. Remove both pans from the oven.
  5. Plate the zucchini and shallots on a single plate keeping them separate.
  6. In a small bowl add the roasted grapes
  7. To prepare the board place a spread of TRISCUIT Sriracha Crackers, slices of the Maple Chipotle BBQ Pork tenderloin, sharp cheddar and apple slices placing toothpick next to the area.
  8. Next add a spread of the TRISCUIT Hint of Salt Crackers in another section of the platter with the roasted zucchini and caramelized shallots plate plus white cheddar around it.
  9. Last add a spread of the TRISCUIT Smoked Gouda Crackers, the bowl of roasted grapes, piles of the prosciutto slices, smoked gouda cheese and a small container of honey that can be drizzled.
  10. For presentation assemble a small platter of each hor d’oeuvre.
  11. On top of the TRISCUIT Sriracha Crackers add a slice of green apple, slice of Maple Chipotle BBQ Pork tenderloin and a slice of sharp cheddar.
  12. On top of the TRISCUIT Hint of Salt Crackers add a slice of white cheddar, sliced of roasted zucchini and top with caramelized shallots.
  13. Last, on top of the TRISCUIT Smoked Gouda Crackers add a slice of smoked gouda, slice of prosciutto, a roasted grape and small drizzle of honey.
