Asian Slaw Recipe with Thai Peanut Dressing

Fresh, crunchy, and bursting with bold flavor, this Thai-inspired Asian coleslaw features crisp cabbage, bell peppers, carrots, and crunchy peanuts all tossed in a creamy, spicy peanut butter dressing.

Ingredients

  • 16-ounce bag of coleslaw
  • 1 cup matchstick carrots (~2-3 medium carrots)
  • 1 red bell pepper, deseeded and cut into julienne strips
  • 1 shallot, minced
  • 3-4 radishes, sliced into small pieces
  • 1 Tablespoon of fresh lime juice
  • 3/4 cup toasted peanuts, chopped
  • 1/4 cup chopped cilantro
  • 1 – 1 1/4 cups peanut sauce

Instructions

  1. Make the peanut sauce according to the recipe, then set it aside.
  2. To a large bowl, add coleslaw, julienned bell peppers, matchstick carrots, minced shallot, radishes, and cilantro, then mix to incorporate.
  3. Add in 3/4 cup of the peanut sauce and, using a slotted spoon or tongs, mix to evenly coat.
  4. Next, add the lime juice and mix until evenly coated. Sprinkle on the chopped peanuts, give it a final mix, and taste. If need be, add a pinch of salt and pepper.
  5. Serve immediately with the remaining peanut sauce on the side for those who want it more saucy. Store any leftovers covered in the fridge for up to 2-3 days.
