These Thai-inspired pork sliders feature juicy, umami-rich pork topped with a crunchy Asian peanut slaw and spicy peanut dressing. Fresh ginger, jalapeno, fish sauce, and cilantro create a balanced, crave-worthy bite you’ll quickly fall in love with.

Ingredients

  • 1 pound ground pork
  • 3 green onions, chopped
  • 1 medium jalapeno, seeded and minced
  • 3 Tablespoons chopped cilantro
  • 1 1/2 Tablespoons fish sauce
  • 1 Tablespoon freshly grated ginger
  • 3 cloves of garlic, minced
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
  • 1-2 cups Asian Slaw
  • 6 slider buns
  • Peanut sauce for serving

Instructions

  1. To a large bowl, add the ground pork, vegetables, grated ginger, fish sauce, seasonings, and mix until combined. You can use your hand or a spatula. Try not to overwork the mixture to avoid it from being tough.
  2. Divide the mixture into 6 portions, shape into slider patties, and place on a parchment paper-lined rimmed sheet pan. Cover with plastic wrap and chill for at least 1 hour in the fridge.
  3. When you’re ready to fry these up, very lightly oil a non-stick pan over medium heat.
  4. Cook for 3-5 minutes, flip, and cook for another 3-5 minutes, or until the internal temperature reaches 160°F.
  5. Remove from the skillet and assemble the sliders.
  6. To a slider bun, add a cooked Thai pork slider, then some Asian Slaw, and drizzle on more of that spicy peanut sauce. Store the leftover slider patties, covered, in the fridge for up to 4 days.
