  1. Preheat the oven to 375°F. To a baking dish, add the sausages, leaving about a 1-1/2″ gap between them.
  2. Using a paring knife, make a slit about 1/2″ from each end lengthwise. Make sure not to cut all the way through.
  3. Take your fingers, press down and out on the sausage, creating a boat. You’re gently spreading it out and apart.
  4. Fill each sausage with ~ two heaping Tablespoons of the mixture. You want it to slightly mound.
  5. Sprinkle it with a bit more of the Chupacabra Fajita Seasoning. Bake for ~20-25 minutes or until the internal temperature reads 165°F.
  6. Serve immediately.  Store leftovers in an airtight container in the fridge for up to 3 days.

Notes

*NOTE: If you don’t want to make a full batch of the popper filling and only want enough for this recipe go with the following measurements

  • 6 ounces softened cream cheese
  • 4 ounces freshly shredded cheddar
  • 2 strips crispy bacon, chopped
  • 1/2-1 whole jalapeno, minced
  • 2 teaspoons Chupacabra Fajita Seasoning
