This recipe is something I’m sure we’ve all seen and may have even made from other folks. For me, it all comes down to the well-seasoned mixture that’s stuffed into these sausage boats.

6-Ingredient Jalapeño Popper Sausage Boats
I think what I love most about this recipe is its simplicity. Just a handful of ingredients and you have a great meal or appetizer on the table in no time! It’s easily customizable and absolutely delicious!
Being from Pittsburgh and having a brother who played in the NFL, we take our game-day grubs very seriously. These are always on the menu and one of Mr. Fantabulous’s favorite bites on the table.
I can still remember the first time I made these for us. I got “the look” from Mr. Fantabulous as this wasn’t the typical “sausage and peppers” he’s used to. So I had to give him the “try it, you might like it” speech.
One bite was all it took for his eyes to get as big as silver dollars and complete silence to settle in. The man DEVOURED 3 of these in a row. I honestly don’t think he came up for air! These instantly became a “requirement” for game day.
- Sausage: Italian or Hot
- Cheese: freshly shredded cheddar and cream cheese
- Crispy Bacon

How to Make Sausage Boats
Since the sausages will emit fat, I don’t spray my baking dish. You are welcome to do so if you are concerned that they may stick.
- Preheat the oven to 375°F. To a baking dish, add the sausages, leaving about a 1-1/2″ gap between them.
- Using a paring knife, make a slit about 1/2″ from each end lengthwise. Make sure not to cut all the way through.
- Take your fingers, press down and out on the sausage, creating a boat. You’re gently spreading it out and apart.
- Fill each sausage with ~2 heaping Tablespoons of the mixture. You want it to slightly mound.
- Sprinkle it with a bit more of the Chupacabra Fajita Seasoning. Bake for ~20-25 minutes or until the internal temperature reads 165°F.

- Can I make these ahead of time? Yes! You can stuff the sausage boats ahead of time, cover them tightly, and keep them in the fridge raw for a day or two.
- How do I make them less spicy? Try Anaheim or even regular bell peppers.
- Can I use chicken sausage? Yes! It’s the same recipe, temperature, and ending internal temp.
- Can I use bratwurst? Definitely! They work incredibly well!
- Can I add other stuff to the filling? Absolutely! Try a different shredded cheese and ricotta (strained) for cream cheese.
- Can I wrap these in bacon? It would be a crime if you didn’t. When the sausage boats reach 150°F, crank the temperature to 400°F to crisp up the bacon.
How to Reheat Jalapeno Popper Boats
- Oven: Preheat the oven to 350°F. Place the sausage bots on a rimmed baking sheet and bake for ~10-15 minutes or until warmed through. *If they are wrapped in bacon, cover them loosely to prevent the bacon from burning
- Microwave: Place on a microwave-safe plate. Cover with a damp paper towel or plastic wrap (leaving one end open and heat in 30-second intervals until warmed through.
Make Ahead Sausage Popper Boats
- Once the sausage boats are all assembled, place them on a parchment-lined baking sheet and put them in the freezer, uncovered, until frozen solid.
- Remove from the freezer, transfer to a freezer-safe bag, layering parchment paper between them, and freeze for up to 2 months.
- You can bake them directly from frozen, adding additional baking time until cooked all the way through and the internal temperature is 165°F.
Grilled & Smoked Sausage Popper Boats
Grill Instructions:
This requires you to set up your grill for Indirect cooking/ If you’re unsure how to do this, check out this post.
- Set up the grill for indirect cooking. Preheat the grill to 300°F.
- Place the prepared sausage boats on the indirect side of the grill away from the flames. Grill until the internal temp reads 165°F, making sure to rotate them halfway through.
Smoked Sausage Popper Boats :
To make it easier, place the prepared sausage boats on a cooling rack. By doing so, it’ll be easier to put the ships on the smoker and remove them.
- Fill the hopper with your pellets of choice. I went with a competition blend.
- Start up the smoker and set the temperature to 300°F.
- Once the smoker is to temp, wait 15 minutes and add the tray of prepared stuffed sausages to the top rack. It’s best to leave them on the cooling rack when you smoke them.
- Smoke for 45-60 minutes or until the internal temperature reads 165°F.
