30-Minute Creamy Boursin Pasta with Sausage and Spinach

Ingredients

  • 1 1/2 cups cherry tomatoes
  • 8 ounces spinach
  • 1 1/4 cups cooked crumbled Italian sausage *see post for using sausage links
  • 5.3-ounce box of Garlic & Fine Herb Boursin cheese
  • 3 Tablespoons Olive Oil
  • 1 Tablespoon Chupacabra Italian Seasoning
  • 8 ounces Gigli pasta (or any pasta with ridges and holes) plus reserve 1 – 1 1/4 cups reserved pasta water
  • Freshly Grated Parmesan Cheese

Instructions

  1. Preheat the oven to 400°F. Add the spinach and tomatoes to a large baking dish. In the middle of the veggies, add the Boursin cheese. Drizzle with olive oil and sprinkle with Chupacabra Italian Seasoning. Bake for 20 minutes. 
  2. While the veggies are baking in the oven, boil the pasta according to the package instructions and save about 1 1/4 cups of the pasta water. This will help make the sauce creamy.
  3. Remove the pan from the oven and, using the back of a fork, gently mash the tomatoes and cheese together with the spinach. 
  4. Add in the cooked, crumbled sausage, give it a stir, then add in the cooked pasta, about 1 cup of pasta water.
  5. Stir until combined, adding more water if needed. Grate on fresh Parmesan cheese, stir in, and taste for seasoning.
