Easy, Creamy Sausage Pasta For Busy Nights
As a chef, I’m always creating easy pasta dishes that feel indulgent without being complicated or expensive, and this creamy Boursin sausage & spinach pasta delivers every time! Made with just 7 budget-friendly ingredients, this pasta recipe brings big, comforting flavor using simple techniques.

Boursin Pasta with Sausage Ingredients
As you all know, I make pizza every day, so I always have a ton of toppings prepped in my fridge. One of my favorite pizzas is sausage, spinach, shallots, and Boursin. To avoid wasting ingredients, I had to find other ways to use them. Since Mr. Fantabulous loves pasta and eats it 2-3 times a week, I came up with this recipe eons ago as a way to use up what I had on hand and also go with something other than the traditional Sunday sauce and pasta.

How to Make Creamy Boursin Sausage Spinach Pasta
There are really only a couple of main steps in this recipe: roast the cheese and veggies, boil the pasta, and then combine.
- While the oven preheats, place the tomatoes, spinach, and Boursin in a large, heat-safe baking dish.
- Drizzle olive oil over everything and then sprinkle on the Chupacabra Italian Seasoning. Pop that into the oven and bake for 20 minutes*.
Note: if you do not have cooked sausage crumbles, split open 4 Italian sausage links, remove the meat from the casings, and add it to the pan (pinch it off into crumbles). Discard the casings.
- While the veggies are baking in the oven, boil the pasta according to the package instructions and save about 1 cup of the pasta water. This will help make the sauce creamy.
- Remove the pan from the oven and, using the back of a fork, gently mash the tomatoes and cheese together with the spinach.
- Add in the cooked, crumbled sausage, give it a stir, then add in the cooked pasta, about 1 cup of pasta water.
- Stir until combined, adding more water if needed. Grate on fresh Parmesan cheese, stir in, and taste for seasoning.

- What if I don’t have sausage crumbles? If you do not have cooked sausage crumbles, split open 4 Italian sausage links, remove the meat from the casings, and add it to the pan (pinch it off into crumbles) with the tomatoes and spinach before baking. Discard the casings.
- Can I make this Boursin sausage pasta ahead of time? Yes1 This pasta dish is great for meal prep and keeps well in the fridge for up to 3-4 days.
- Can I use a different type of sausage? Absolutely! Chicken or turkey sausage works as well. Though you may want to check whether they need to be cooked from raw or just reheated.
- Can I add or swap vegetables? Of course, make it your own! Mushrooms, zucchini, and onions all work well!
- Is this creamy pasta recipe freezer-friendly? Cream-based pasta is best fresh or refrigerated. Freezing it will work, but it will definitely change the texture of the sauce.
- Can I use frozen spinach? Yes, but it needs to be completely thawed and all moisture removed. I would add the spinach to a sauté pan over medium heat, then add it to the dish right before you add the sausage.
- Can I make this recipe spicy? Definitely! Use hot Italian sausage and add red pepper flakes!
How to Reheat Sausage Pasta with Boursin
Whether you’re reheating it in the oven or the microwave, add a bit of milk or cream to bring back the creamy texture
- Oven: Add in some cream or milk, cover tightly with foil, and pop it into a 350°F preheated oven for about 10-15 minutes or warmed through.
- Microwave: Add in some cream or milk, cover, and reheat at 50% power in 20-30 second intervals, stirring often. You want to avoid full heat as it will split the sauce.

- 1 1/2 cups cherry tomatoes
- 8 ounces spinach
- 1 1/4 cups cooked crumbled Italian sausage *see post for using sausage links
- 5.3-ounce box of Garlic & Fine Herb Boursin cheese
- 3 Tablespoons Olive Oil
- 1 Tablespoon Chupacabra Italian Seasoning
- 8 ounces Gigli pasta (or any pasta with ridges and holes) plus reserve 1 – 1 1/4 cups reserved pasta water
- Freshly Grated Parmesan Cheese
Instructions
- Preheat the oven to 400°F. Add the spinach and tomatoes to a large baking dish. In the middle of the veggies, add the Boursin cheese. Drizzle with olive oil and sprinkle with Chupacabra Italian Seasoning. Bake for 20 minutes.
