Cabbage Rolls Childhood Memories

This dish, God, brings back so many childhood memories that I sat here for 30 minutes in a daze just remembering some of them. Whether you grew up calling them classic stuffed cabbage rolls, Slovak halupki, or Polish golumpki, nothing screams ultimate comfort food quite like tender cabbage leaves wrapped around seasoned ground meat and rice, all baked low and slow in a rich tomato sauce.

Growing up in Pittsburgh, we harvested cabbages from our garden, and each of us got to pick a single plant to be responsible for. Whoever grew the biggest cabbage won. The prize was Mom cooking our favorite dessert alongside her famous stuffed cabbage rolls—and that summer, I won!

This cabbage was so huge that I couldn’t even lift it. I have a picture of me trying to hold it on my lap. I’ll have to dig it out and share the pic with you all.

Known as Halupki in Slovak culture and Golumpki in Polish cuisine, these rolls are baked low and slow in a rich, undiluted condensed tomato soup sauce until fork-tender.

I have countless memories of our kitchen being so hot (we didn’t have AC growing up, and we only had window fans), and Mom having 3 large canning pots on the stove with boiling water.

She’d make hundreds of stuffed cabbages. I still remember that hot cabbage smell and hot/wet air in the kitchen. Dad would use the tongs to pull out the leaves and put them in the colander, and my Mom, sister, and I would each trim the stems.

Growing up in Pittsburgh, most of the weddings I attended as a kid were those where the families made the food. We were poor people, and hiring a caterer was unheard of. Plus, honestly, no one could match my Mama’s cooking.

At these receptions, you had your mandatory staples—fried chicken, rigatoni, ham, potato or macaroni salad, and cabbage rolls. Mom was always asked to make her easy cabbage rolls (along with cookies for the cookie tables).

Pittsburgh weddings “require” a cookie table at every reception. Sure, there’s a cake, but there must also be one or two cookie tables with copious amounts of cookies.

Ingredients for Stuffed Cabbage Rolls

Growing up as poor as we were, Mom went with what we had.

  • Ground Meat: A balanced blend of ground beef and ground pork creates the ultimate tender, juicy texture.
  • Cabbage: Whole, fresh cabbage heads softened for easy rolling.
  • Cooked Rice: Pre-cooked long-grain white rice helps bind the filling and absorb all the rich juices.
  • Eggs: Act as the binding agent to ensure the meat filling holds its shape.
  • Condensed Tomato Soup: The secret ingredient! Use canned condensed tomato soup—not tomato sauce. Sauce makes the dish too tangy, whereas soup provides a mellow flavor that lets the cabbage shine. (Do not add water to the soup!)
  • Tomato Paste: Helps thicken the natural meat juices as it bakes, creating a rich, gravy-like sauce.
  • Aromatics & Seasonings: Fresh onion, minced garlic, salt, and pepper to bring out the classic, savory flavors.

How to Soften Cabbage Leaves for Cabbage Rolls

Making stuffed cabbage rolls isn’t difficult, but it does require a little patience—starting with the cabbage itself! Unlike soft lettuce, raw cabbage leaves are stiff and tightly packed. If you try to peel them off cold and raw, they will crack and tear, leaving you with useless scraps instead of whole, pliable leaves.

To get whole, flexible leaves that roll effortlessly, soften the cabbage head first. Home cooks generally use one of two methods, though one is definitely superior:

Method 1: The Classic Boiling Technique (Recommended)

This is my go-to method for perfect results every time. Boiling softens the leaves just enough to make them pliable while keeping their structure intact so they don’t get soggy.

  1. Prep the Pot: Fill a large stockpot with water and bring it to a rolling boil.
  2. Remove the Core: Using a sharp paring knife, carefully cut around and remove the tough core from the cabbage head.
  3. Submerge Safely: Lower the whole cabbage head into the boiling water. (Pro-tip: Use tongs and go slowly to avoid splashing!)
  4. Boil & Peel in Stages: Cook for a few minutes. As the outer leaves soften, gently pull them off using tongs and place them in a colander to drain.
  5. Repeat: If the inner leaves are still too stiff, let the head boil for another minute or two as you work. Depending on the size of your cabbage, this whole process takes about 3 to 10 minutes.

Method 2: The Freezer Method

Some cooks like the hands-off approach of freezing the whole cabbage head, letting it thaw, and peeling the softened leaves as it warms up.

While it works in a pinch, I personally don’t recommend this method. Freezing breaks down the cabbage’s cell walls too much, altering its texture. It can leave the leaves feeling mushy, compromising their integrity and making them harder to roll neatly. Stick with classic boiling for the best texture!

How to Make the Stuffed Cabbage Meat Filling

  1. Combine Initial Ingredients: In a large mixing bowl, add the ground beef, ground pork, cooked rice, onion, garlic, salt, pepper, eggs, ketchup, tomato paste, and fresh parsley.
  2. Gently Mix: Gently combine the ingredients until just blended. Avoid overmixing to keep the meat filling tender.
  3. Add Soup & Finish: Pour in 2/3 can (about 3/4 cup) of condensed tomato soup. Fold together until evenly incorporated.

How to Roll Mom’s Classic Stuffed Cabbage Rolls

  1. Prep the Leaves: Ensure your cabbage leaves are warm or room temperature—cool enough to handle comfortably, but not cold. Cold leaves lose their pliability and are much more likely to tear.
  2. Trim the Ribs: Flip the leaf stem-side up. Using a small paring knife, gently shave down the thick center stem until it is flat and flush with the leaf. (Be careful not to cut all the way through the leaf!)
  3. Add the Filling: Lay a leaf flat on your cutting board or palm with the stem side facing you. Place roughly 1/3 cup of the meat and rice mixture on the lower third of the leaf.
  4. Fold and Roll: Just like wrapping a burrito, fold the sides of the leaf inward over the filling. Grab the bottom edge and roll tightly upward toward the top end of the leaf.
  5. Repeat & Seam Down: Repeat until you use all the filling. Place each cabbage roll seam-side down in your baking dish or slow cooker to keep it tightly sealed as it cooks.

Bonus Tip: Have extra meat left over? Roll it into meatballs and tuck them directly into the baking pan alongside your cabbage rolls!

Layering and Baking Stuffed Cabbage Rolls

  1. The Base Layer: Spread the remaining 1/3 can of tomato soup over the bottom of your pan. Open a second can of soup, spread half of it over the bottom, and save the rest.
  2. First Cabbage Layer: Arrange a single, tight layer of stuffed cabbage rolls seam-side down.
  3. The Middle Layer: Pour the remaining half of that second can of tomato soup over the rolls. If you have any small or torn cabbage leaves left over, scatter them right over the soup layer here!
  4. Second Cabbage Layer: Add your second layer of cabbage rolls. (Crucial: Ensure you leave at least a 1/2 inch gap between the top layer of rolls and the rim of the pan so it doesn’t boil over).
  5. The Top Layer: Top with a third full can of tomato soup, spreading it out evenly across the top.
  6. Seal Tightly: Lightly spray one side of a large piece of aluminum foil with nonstick spray. Place it sprayed-side down over the dish and crimp the edges tightly to trap the steam.
  7. Catch Drips: Set the baking dish on a large rimmed baking sheet to catch any bubbling spillovers.
  8. Bake: Bake for 3 to 4 hours, or until the cabbage is completely fork-tender. (Start checking for doneness at around the 2-hour and 45-minute mark by piercing a roll with a knife).
  9. Rest & Serve: Remove from the oven, uncover carefully, and allow the rolls to rest for 15 minutes to let the juices set before serving.

Fork-Tender Cabbage Rolls

One thing to remember: they must cook for a few hours for the cabbage to get super tender. You don’t want the cabbage to be firm or bite. You want to be able to cut it with a fork.

Chef Lori’s Pro-Tip: Use Up the Cabbage Core & Inner Leaves!

As you work your way toward the center of the cabbage head, the inner leaves will get smaller and smaller. Instead of throwing them away, you have a few great ways to use them:

  1. Overlap to Make a Full Leaf: Place two small leaves side by side, overlapping them slightly to create one larger surface. Add your filling and roll it up just like a standard stuffed cabbage roll!
  2. Line the Pan (Prevents Burning): Layer the raw small leaves across the bottom of your baking dish, Dutch oven, or slow cooker. They create a natural cushion that stops the bottom rolls from sticking or scorching during a long bake.
  3. Bulk Up the Sauce: Roughly chop the remaining small leaves and scatter them between the layers or stir them right into the tomato sauce. They melt into the sauce as it simmers, adding incredible texture, natural sweetness, and zero food waste!

Why We Use Condensed Tomato Soup in Cabbage Rolls

Using undiluted condensed tomato soup is the secret to my family’s authentic Slovak cabbage rolls (halupki). While modern recipes often call for marinara or jarred tomato sauce, condensed soup creates a superior dish for three key reasons:

  • Mellow Sweetness: Provides a smooth, subtle sweet base that balances the cabbage’s natural bitterness without the harsh acidity of marinara or crushed tomatoes.
  • No Added Water Needed: Cabbage naturally releases water as it bakes, which thins the condensed soup into a rich sauce on its own.
  • Thick, Gravy-Like Texture: When combined with tomato paste and meat juices during a long bake, the soup transforms into a rich, velvety gravy that coats every roll.

Important Rule: Do NOT dilute or add water to the canned condensed soup! Adding extra liquid will make your sauce watery instead of thick and savory.

Stuffed Cabbage Roll Substitutions & Variations

If you need to make adjustments based on what’s in your pantry or your dietary needs, here are easy, recipe-tested swaps that won’t compromise flavor:

  • The Ground Meat: If you don’t eat pork, you can replace it with 100% ground beef (80/20 mix), ground turkey, or ground pork/beef blend variations. Note: If using lean turkey, add a tablespoon of olive oil to keep the filling moist.
  • The Rice: Long-grain white rice is traditional. You can substitute cooked brown rice or cooked jasmine rice. Just make sure the rice is fully cooked before mixing it into the filling so it doesn’t pull moisture away from the meat.
  • Grain-Free / Low-Carb Swap: Swap the cooked rice for cooked cauliflower rice or cooked quinoa to cut down on carbs while keeping that great texture.
  • Fresh Herbs: If you don’t have fresh parsley, replace it with 1 to 2 teaspoons of dried parsley or dried Italian seasoning.

  • What other meats can I use in these stuffed cabbage rolls?

  • Can I make cabbage rolls ahead of time? Yes! You can fully assemble the cabbage rolls in your baking dish, cover tightly with aluminum foil, and refrigerate uncooked for up to 24 hours before baking. Because the dish will be cold straight from the fridge, add about 15 minutes to your total bake time.
  • Can you freeze stuffed cabbage rolls?
    I have a full section below on how to do this!
  • Why are my cabbage rolls still tough or firm? If your cabbage leaves are firm or hard to cut, they simply need more time in the oven! Cabbage leaves take a long, slow bake (around 3 to 4 hours at 350°F) for the fibers to break down completely. Cover the dish tightly with foil and return it to the oven until a fork glides through the leaves with no resistance.

    How to Freeze Mom’s Famous Cabbage Rolls

    I make mine the way Mom did—a big batch at once, so I have enough for a meal and plenty for the freezer. When cabbage is in season, it’s the perfect time to fill that freezer with winter meals.

    Roll, Bake, and Freeze

    1. Cool Completely: Allow cooked cabbage rolls to cool to room temperature. Never freeze hot rolls; trapped steam creates condensation, leading to freezer burn and soggy leaves.
    2. Add Base Sauce: Spread a thin layer of tomato soup across the bottom of a freezer-safe glass or BPA-free container.
    3. Layer Rolls and Sauce: Arrange a layer of cabbage rolls seam-side down, spoon more tomato soup over top, and repeat if adding a second layer. Secure the container lid.
    4. Double-Wrap for Quality: Wrap the entire container in a layer of plastic wrap, followed by heavy-duty aluminum foil. This classic family trick seals out moisture and prevents freezer burn.
    5. Freeze: Label with the date and store in the freezer for up to 6 months.

    How to reheat Mom’s Classic Stuffed Cabbage Rolls

    As I mentioned, when fresh cabbage is in season, I make a big tray like this just for the two of us, but I freeze half of it. To reheat, I’ll take one container out of the freezer and let it thaw in the fridge overnight. When I’m ready to reheat, I’ll do the following:

    Method 1: From Frozen (Freezer-to-Oven Baking)

    1. Unwrap: Remove all foil and plastic wrap from the dish.
    2. Warm Slightly: Let the container sit at room temperature for 30 minutes while the oven preheats. Caution: Putting a freezing-cold glass or ceramic dish into a hot oven can cause thermal shock and crack the pan!
    3. Cover & Protect: Cover tightly with fresh foil and set the dish on a rimmed baking sheet to catch spillovers.
    4. Bake: Bake at 350°F for 1.5 to 2 hours until hot and tender throughout.

    Method 2: From Frozen (Non-Ovenproof Container)

    1. Unwrap & Transfer: Remove the foil and plastic wrap. Transfer the frozen cabbage rolls into a lightly sprayed, oven-safe baking dish.
    2. Add Extra Sauce: Spoon a little tomato soup over the bottom of the dish, arrange the rolls inside, and top with another splash of soup to keep them moist.
    3. Cover & Protect: Cover tightly with foil and place the dish on a rimmed baking sheet to catch any sauce spillovers.
    4. Bake: Bake in a preheated 350°F oven for 1.5 to 2 hours until heated through and fork-tender.

    How to Make Cabbage Rolls in a Crock Pot

    Converting oven-baked cabbage rolls to the slow cooker is simple and keeps your kitchen cool. Follow these step-by-step instructions for perfect slow cooker cabbage rolls:

    1. Prep the Slow Cooker: Lightly spray the inside of a 6-quart or larger slow cooker with nonstick cooking spray.
    2. Add the Bottom Sauce Layer: Spread 1/3 can of undiluted condensed tomato soup across the bottom of the slow cooker insert. Scatter a few raw, smaller cabbage leaves over the soup to cushion the rolls and prevent scorching.
    3. Assemble the Meat Filling & Leaves: Prepare your meat filling and soften your cabbage leaves as directed in the main recipe steps above. Shave down the leaf ribs and roll 1/3 cup of filling into each leaf.
    4. First Layer of Rolls: Arrange a tight layer of stuffed cabbage rolls seam-side down on top of the sauce base.

    7. Top Sauce Layer: Pour the remaining condensed tomato soup evenly across the top layer of cabbage rolls.
    8. Cover & Slow Cook: Cover with the lid and cook on LOW for 8 hours or on HIGH for 4 to 5 hours, until the cabbage leaves are fork-tender and the meat reaches an internal temperature of 165°F (74°C)

      • 1/4 cup ketchup
      • 2 tablespoons tomato paste
      • 1 1/2 cups cooked, cooled white rice
      • 3 10.75 ounce cans of tomato soup (if using a deep dish pan with a 3” side use 4 cans)

      Instructions

      Prepare the cabbage

      1. Core Cabbage: Remove the core from the head of cabbage using a paring knife.
      2. Boil & Soften: Submerge the head in a large pot of boiling, salted water. Cover and cook for 3 minutes, or until outer leaves soften. Gently peel off leaves as they loosen (return head to boiling water for 1–2 minutes if leaves resist).
      3. Trim Ribs: Once cool enough to handle, use a paring knife to shave down the thick center stem of each leaf until flat, taking care not to cut through the leaf.

      Make the meat mixture

      1. Mix Filling: In a large bowl, combine the ground beef, ground pork, cooked rice, onion, garlic, salt, pepper, eggs, ketchup, tomato paste, and parsley.
      2. Add Soup: Add 2/3 can of condensed tomato soup (approx. 3/4 cup) to the bowl and mix gently until just combined.

      Assemble the cabbage rolls

      1. Stuff & Roll: Lay a leaf flat with the cut stem end facing you. Place about ½ cup of meat mixture onto the lower third of the leaf (use more or less depending on leaf size). Fold the sides inward over the meat and roll tightly upward like a burrito. Repeat with remaining leaves and filling. (Note: Roll any leftover filling into meatballs to bake alongside the rolls).

      Prepare to bake

      1. Prep Oven & Pans: Preheat oven to 350°F (175°C) with the rack in the center position. Grab a deep baking dish (at least 4″ deep) or two 9×13 inch glass pans.
      2. Bottom Sauce Layer: Spread the remaining 1/3 can of soup across the bottom of the dish. Open a 2nd can of soup and spread half of it over the bottom layer.
      3. First Roll Layer: Arrange a single layer of stuffed cabbages seam-side down. Top with the remaining half of the 2nd soup can. Scatter any small or torn leaves over the soup.
      4. Second Roll Layer: Add the second layer of cabbage rolls, leaving at least a 1/2 inch gap below the top rim of the dish. Top evenly with a 3rd full can of condensed soup.
      5. Cover & Protect: Lightly spray one side of aluminum foil with nonstick spray. Cover the dish tightly, sprayed side down. Place the dish on a rimmed baking sheet to catch spillovers.
      6. Bake & Rest: Bake for 3 to 4 hours (start checking at 2 hours 45 minutes) until cabbage is completely tender when pierced with a knife. Remove from oven, uncover, and rest for 15 minutes before serving.

        Hi Lori,
        Being born in Pittsburgh as well, this sounds just like what my Grandmother made.
        Unfortunately, I have neuropathy in my hands and doing the cabbage rolls would be quite difficult. Do you happen to have a recipe or suggestions for making this just all mixed in and baked?

          Hi Lisa!

          I understand all too well about hand pain. You can make this as a “lasagna” if you will and just lay out layers of cabbage, sauce, layer of meat mixture and repeat. You get all the great flavors of this stuffed cabbage but without having to roll them.

          I think you misread the recipe as I use BOTH beef and pork. I also say you that you can omit the pork altogether and use just beef.

          Two reason why I use both beef and pork:
          1. It’s how the Slovak side of my family made it for generations. And the flavor-profile is exceptional.
          2. The pork helps improve texture, makes it more juicy, and balances the flavor. The added fat gives it a richness.

        My mother in law can’t cook anymore and she asked me to make her stuffed cabbage similar to what her mother used to make. I found your recipe and made them today in the crockpot. They came out SO WELL! I am so excited to bring her some tomorrow and I am freezing the rest for another meal. Getting the leaves off the cabbage was a pain- but totally worth it! Delicious!

          My mom is succumbing to Parkinson’s, she has been so hungry for HER stuffed cabbage, but she isn’t able to remember things reliably or cook anymore . Thank you for the tutorial- we too are in Pgh- it is late, but the rolls are made, so I will add the soup (my family also adds kolbassi and sauerkraut) the slow cooker will do the rest. I was happy to find your post.

        These are so easy and so delicious. I made them for a large buffet. My brothers were impressed because they had not had them since we were kids at home. We all felt they were just like my grandmothers’. I had to make 2 changes due to what I had on hand. I used napa cabbage. It was much easier to peel the leaves apart. Also, I substituted a can of diced tomatoes for one of the tomato soups. I’d like to make them and freeze some for smaller events. Do they freeze well?

        I grew up with Grandma making this exact same recipe, but as a “picky” kid, I only ate the meat inside until I was older to appreciate the entire cabbage roll! Now I make them for my family and they love it! The only thing I add is sauerkraut…I layer soup, sauerkraut, cabbage rolls, etc. layering like lasagna, ending with sauerkraut and soup on top. Makes me want to make them right now!! Thanks for sharing this timeless recipe with young cooks. Traditional recipes should be passed down!
