Caramelized Onion Bacon Burgers

Ingredients

  • 1lb ground beef (90/10 ratio – thus the addition of the bacon grease)
  • 1 1/2 teaspoon Montreal Steak Seasoning
  • 3/41 cup cooled caramelized onions (that still had the juices from the pan)
  • 1/2 cup Panko
  • 2 tablespoon of bacon grease
  • 8 slices thick bacon
  • 4 thick slices of Jarlsberg cheese
  • Bacon BBQ Sauce, optional

Instructions

  1. Pan fry the bacon until crispy.
  2. Remove from pan and reserve 2 tablespoon of bacon grease.
  3. Mix the ground beef, steak seasoning, caramelized onions, panko and bacon grease in a bowl (just until combined as I didn’t want to overwork the meat).
  4. Shape into 4 patties and indent one side (this prevents them from rounding up).
  5. Cover and chill for 30 minutes.
  6. Preheat skillet over medium heat.
  7. Drizzle just a trace bit of oil in the pan.
  8. Place the patties and do not move for 5-6 minutes.
  9. Flip when the bottom has a caramelized brown crust.
  10. Cook for another 3-5 minutes (or until desired done-ness).
  11. In the last minute of cooking add the Jarlsberg cheese on top and cover with a lid (this helps melts the cheese).
  12. Place on toasted bun.
  13. Garnish with Bacon BBQ Sauce
