Baked Chicken Parmesan Burrito

  1. Preheat broiler and place rack on upper third in the oven.
  2. Line a baking sheet with foil and lightly spray.
  3. Mix together the mozzarella and parmesan cheese.
  4. In the lower third of the tortilla add in the 3 chicken strips – 2 on the bottom and 1 on top.
  5. Place 1/4 cup of marinara on top of the chicken.
  6. Top with 1/4 cup of the cheese mixture.
  7. Taking the edge of the tortilla closest to you, fold it up and over the chicken tucking it under the meat.
  8. Take one hand and fold in one side of the tortilla and then repeat to the other.
  9. Tightly roll the tortilla, seam side down.
  10. Place on the baking sheet.
  11. Repeat for the remaining tortillas.
  12. Broil for 3-5 minutes or until the tortilla is golden brown and slightly crispy.
  13. Using tongs, gently flip the tortillas broiling an additional 3-5 minutes.
  14. Flip again, ladle 1/4 cup sauce on top of each and evenly divide the remaining cheese on top.
  15. Broil for 1-2 minutes just until the cheese is melted and bubbly.
