Get out of that same ol’ recipe rut and try one of these delicious and easy recipes this week! This week I highly recommend making the Ultimate Pork Cutlets and the BBQ Meatloaf Stacks!
Happy Sunday TKW Family! Now that Fall is here in the ‘burgh, we tend to gravitate more towards comfort foods. Where I live the leaves are falling and are EVERYWHERE, the days, while still warm turn to chilly at night. The weather is odd to be honest. If you leave the house in the morning, you need a sweater or light jacket but by say 10:30am you’re hot and when you leave work you put on the AC. By 6:30pm you’re cold so on goes the furnace, fuzzy socks and sweater. I wonder what it’ll be like when we finally move out West and we don’t have to deal with these types of things. For those of you that were used to the 4 seasons or snow at Christmas and moved out west, was it hard to get used to?
I used to say “I could never imagine Christmas without snow” but I honestly can’t remember the last time we had a white Christmas. It’s like our winters with snow don’t really happen until February. Oh sure we get the butt-cold weather (seriously that’s the worse) but no real snow. *shrugs* But right now, our focus is on the leaves. Having 5 acres where you HAVE to pick up the leaves simply put, sucks! You can’t leave it on the ground as they kill the grass. My next house – I want a non-shedding tree, non-growing grass and no bugs. LOL So yeah, pretty much I’m living in Lego-Land!
This weekend I was (still am) super busy in the kitchen working on recipes and upcoming posts. Like right now I have pizza dough proofing in a cast iron skillet for maybe a breakfast pizza. I haven’t decided on that yet. Plus I have 2 casseroles to make and a chicken sheet pan dinner. But I’m tired today. Last week was just busy and we traveled all over the place to get these bar stools for the downstairs. So they opened up an At Home store here and if you’ve never been in one, you MUST! They remind me of a way larger Home Goods (which you all know is my favorite store) but with a little bit of everything. So you all know Mr. Fantabulous HATES shopping (he doesn’t count Home Depot or Lowes as shopping as that’s necessary stuff – I guess underwear or milk aren’t necessities?!) but when we were out the one day I told him I wanted to check out the store to see if they had items we could use for the house once we’re finished with the remodel.
He, begrudgingly, went in with me. Folks, what happened next I would have never believed if I hasn’t saw it with my own eyes! The man actually liked the store. I mean really, REALLY liked it to the point he was taking pictures of stuff we need to get for the house, saying “this can go here” and stuff. At one point I stopped him and said “Who are you??? You hate this stuff! It doesn’t have drill bits, screws or power tools???”. He just laughed and said “Let’s go see what’s down here!” and grabbed my hand. Well while we were there we found their bar stool section. In the one section of our downstairs we have a billiards room. In there we decided we’d have 2 pub-style tables and 4 chairs. HOWEVER we could not find pub tables anywhere that we liked. They all looked ‘commercial’. So my husband did what anyone else would do – he built his own. Now I’d say it was easy as it’s just cutting a thick piece of butcher block in a circle but apparently cutting a perfectly round circle in a 1 1/2″ thick piece of butcher block is NOT easy. The man had to design a jig first, do a million other things and then cut it. We did, however, end up buying the black bases. I have to admit, they look absolutely BEAUTIFUL (I’ll snap a pic and share it on Instagram later).
Anyway, so we head back to the At Home store to get bar stools and thus begins the battle of “I like these ones” vs “Those are fugly, I like these!” lol We’re a lot better than when we first got together but still, we do have differing tastes. After going back and forth we found one that we both liked and they had 4 of them – BONUS! Annnnnnd then I got cut. However it was manufactured the maker never smoothed out the metal and there was this metal burr sticking out. SLASH and blood starts pouring out. Now it wasn’t bad but it was bad enough that it hurts like a SOB and it took a little while to get the bleeding to stop. It wasn’t deep but it must have sliced it in a way that it just was like “Nope! We’ll just bleed out for a while!”. As I was putting a bandaid on my finger I saw the another chair had a hole in the leather. Great… ugh. As the manager was helping us getting the other 2 chairs down, and giving me more bandaids and alcohol wipes (FYI those little things burn like a SOB!!!). Long story short, we only ended up getting 2 of those chairs. However she did say another store (over an hour + away) had more and they would hold them for us.
Now one thing Mr. Fantabulous is not patient. OMG no! While I was perfectly fine waiting until later in the week to get them, the man insisted that we drive there that night to get the other 2. I, personally, think it’s because he secretly loves the store and wanted to go visit another one. LOL I mean I do that with Home Goods! They could have other stuff that “my store” doesn’t!
Last week I gave a few sneak peeks of upcoming dishes. I had made a huge batch of Pressure Cooker Pulled pork. With that I made some pulled pork tostadas
Then there was this Pumpkin Beef & Bean Chili. So it’s funny when I posted a picture of this on Facebook as so many of you guys were like “OMG NOOOOOOOOO, not pumpkin!” Now this chili does NOT taste like pumpkin but it, with the other ingredients in it, adds almost an ‘umami’ flavor. It perfectly balances it out and gives it a “smooth” texture. Trust me on this!
And then there were these… I can’t give the recipe out right now or even talk about what’s in them BUT these are literally THE BEST ROLL I’VE EVER EATEN!!! The recipe will be out the first week of November!
Anyway, I can smell my bacon and it smells just about done (seriously – BEST. SMELL. EVER!). Have yourselves one fantabulously delicious week!
