Bakin’ the day away…

I love Sundays that seem like they go on and on and on!  I ran all of my errands this morning, stopped and got some fresh bagels (yes, I cheated and bought bagels… forgive me *wink*).  haha then when I got home I decided to surprise Mr. Fantabulous with french toast.  See I was having twinges of guilt.  Why?  Well, I went out last night with the girls.  Now it’s not a big deal and he’s totally cool with it but I don’t know… I just feel weird being out without him.  It’s funny because there are days when we all need ‘me’ time.  But my ‘me’ time is literally maybe 15-30 minutes and then I’m like “Baby, what’cha doing???”.  I just honestly love his company and being around him.  I’m blessed because not only is he an amazing husband, he’s also my best friend.

But anyway, enough with the mush factor.. so yeah I felt guilty leaving him home on a Saturday night (trust me… he was so consumed with building another computer that he probably didn’t realize I was gone).  LOL  Not 😉  So back to breakfast…  I had made a pan di mie loaf the other day and wanted to use it up.  So with that, I sliced it super thick (think Texas Toast thick) and made him my fantastic french toast.  No really.. it is THAT good!  You’d propose if you tried it 🙂  Normally I don’t like stuff like that – pancakes, waffles or french toast.  They are just always so heavy but this morning it smelled amazing!  That maple syrup and browned butter and hints of cinnamon.  So I made his and decided to make myself some.  Well you know me, I can’t make simple stuff.  I try, really, I do try. But this time.. I wanted something more.  As they were cooking I dug in the freezer and found some pecans, eyed the maple syrup and the wheels started turning!  I ended up making myself Maple Pecan french toast…

And yes.. I ate every single bite!  This was so, so, SO good!

Then it was time to get to baking.  First we had Mini Fruit Streusel Cakes – Apple and Blueberry today.  It has a crumble cake bottom filled with freshly made fruit pie filling, another layer of the cake batter and then topped with streusel. To top it off I just made a simple cinnamon vanilla glaze drizzle for the apple and then a blueberry glaze for a few and powdered sugar for the others. Now mind you, I call these ‘mini’ but they are easily 4″ round and pretty hefty!  This is definitely something people should split..

or…

you should put on your stretchy pants, pull down the shades, lock your doors and proceed to eat this all by yourself. Go on, I won’t tell… 😉

Next came cupcakes… see I was the meanie that scheduled an 8am meeting on Monday morning.  Yeah… I’m that person.  To be honest, I had no choice as we (okay me) has something that HAS to be done by end of day Monday.  So when I issued the meeting request on Friday, I was informed that if I did not provide baked goods that they would boycott!  LOL Spoiled brats!

With that being said I made Vanilla Bean cupcake with a raspberry center and crushed vanilla bean buttercream, Dark chocolate cream cupcake with a dark chocolate espresso buttercream and Brown Sugared Vanilla Bean cupcake with crushed vanilla bean buttercream.  The raspberry ones… OMG I honestly think Mr. Fantabulous inhaled it in one piece!

      Thanks Tyra! I’ll be posting the recipe for the cakes soon however not the French Toast. And I don’t quite think Mr. Fantabulous will allow me to marry anyone else *wink*
