Sorry but I’m channeling my inner child of the 80’s and early 90’s all day.  I was listening to 80’s rock all day and it go the point where I had this undeniable urge to just stand up on my desk, head bang and sing at the top of my lungs.  LOL  I mean c’mon, Twisted Sister “I Wanna Rock” was blasting in my ears and you can’t help want to break out your air guitar and just wail away!  I was three steps away from getting some Aqua Net, Acid Washed Jordache Jeans and feather earrings! LOL

Then came on Vanilla Ice.  Yes I’ll admit it.  I LOVE Ice Ice Baby.  I still know all the words and yes will rock it out.  So let’s just say my commute home was rather musical.  My iPod kept me in HairBand Heaven to say the least!

God I loved the 80’s… big hair, battle of the high-pitched singers and leopard printed spandex.  Yeah.. now we’re talking 🙂

Anyway, keeping in line of yesterday’s post for Montreal Steak Seasoning, I wanted to throw in some killer chicken seasoning.  This can be used for chicken tacos, fajitas, enchiladas and even some kicken’ chicken *just add some more cayenne*.

Ingredients

  • 4 tablespoon chili powder
  • 3 tablespoon + 1 1/2 teaspoon paprika
  • 1 tablespoon + 2 teaspoon oregano
  • 3 tablespoon cumin
  • 1 tablespoon + 2 teaspoon onion powder
  • 1 tablespoon + 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper

Instructions

  1. Combine all ingredients in a bowl.
  2. Store in an airtight container in a dark place (cupboard).

Now I use this as my go-to seasoning for most mexican chicken recipes Biscuit Crusted Summer Fiesta Chicken Tart, Kickin’ Chicken Enchiladas and so forth. You can easily make this spicier if you want.

    How many TBSP per pound of ground chicken should be added of this for tacos?
