Gluten Free Panko Breadcrumbs

So if you’re like me you love a really crunchy chicken tender, mozzarella stick or crispy baked avocado fry.  To get that crispy/crunchy but healthy effect you need to use Panko bread crumbs. Now I’ve showed you how to make your own instead of spending a bajillion dollars on a teensy container in the store however I never shared with you how to make them Gluten Free…

that is…

until now!

One of my dearest friends suffers from Gluten allergies and she shared this with eons ago.  Now I’ve tried making this with gluten free bread and um yeah… let’s just say I threw away more than I cared to. It just never had the same taste.

Now what I’m about to share is really, REALLY difficult and time consuming. You’ll break a sweat, your back will hurt and you’re curse me from sun up to down with how tedious this is but it’s totally worth it.

Ready???

Get a box of Rice Chex Gluten-Free cereal and either a baggie/rolling pin, blender or food processor.  Take about a minute or 2 and you’re done.

I know!  That was so rough, huh?  Would you like a beer or soda to cool off from that work out?  *giggle*

this is literally as simple as putting some in a food processor, giving it a few pulses and that’s it.

Now I’ve tried this with both Corn and Rice Chex cereals and the tastes vary slightly.  It’s truly your call on this.

All I know is that this stuff is SUPER amazing on baked chicken tenders with a honey dijon glaze!  I mean SERIOUSLY insanely good!  Try these with THIS recipe for Honey Dijon Panko Crusted Chicken Tenders.  It’s OMG to-die-for!

Ingredients

  • 3 cups Gluten Free Chex Cereal

Instructions

  1. Place the cereal in a food processor/plastic baggie or blender.
  2. In a processor/blender, pulse 10-12 times or until desired crumbs. You don’t want a powder.
  3. If using a plastic baggie, remove the air and seal. Take a mallet or rolling pin and crush.
  4. Store in a covered container.

Notes

This will yield 1 cup of ‘Panko’ crumbs

I’ve tried this with Corn and Rice Chex Gluten-Free cereals and the flavor does vary slightly. I personally prefer the Rice flavor better.

    when I first started on this Gluten Free journey I made a lot of unsuccessful baked items, the best was a batch of Cheddar cheese & Scallion Scones which were delicious but very dry, the next day they were even dryer so I crumbled them up on a baking sheet and oven dried them even further till crispy than cooled and pulsed a few times in the food processor. They were the best bread crumbs ever! So don’t always be in such a hurry to throw out expensive, stale GF bakery items, freeze till you have enough to make a batch of bread crumbs and save a buck or two. Who would have thought cheese & scallion breadcrumbs would be so tasty…

    You are brilliant! I have literally been looking everywhere for gluten-free Panko breadcrumbs to make the Barefoot Contessa‘s crispy mustard roasted chicken. I haven’t made it since my daughter went gluten-free due to dietary issues and it is so awesome to be able to do it again! Thank you so much for this recipe!

    This was a brilliant idea, and worked perfectly. Thank you so much! Plus they are so much better than the tiny bags of “gluten free panko.” My husband bought Walmart’s house brand of chex for $2 and they worked fine. I am wondering if they can be made and frozen? Guessing so.

    NO tell me it is this easy! I spent $7 at the fish market for a tiny bag of gluten free Panko Breadcrumbs. I just added Rice Chex Gluten-Free cereal

      Yep, it’s that way easy. Are they authentic Japanese Panko? No but they are absolutely amazing and GF!

    INGREDIENTS: GENERAL MILLS RICE CHEX (Rice, Whole Grain Rice, Sugar, Salt, Calcium Carbonate, Barley Malt Extract, Freshness Preserved by Vitamin E and BHT. Iron, Zinc, Vitamin C, Niacinamide, Vitamin B6, Vitamin B1, Vitamin A Palmitate, Vitamin B2, Folic Acid, Vitamin B12, Vitamin D.)

    THIS DOES HAVE BARLEY MALT in it according to their website!

      I actually called them before posting the article to verify; per Chex they are GF.

      I also checked their site and no mention of the barley malt. You’re welcome to call them as well to confirm.

      They stopped using barley malt in 2008 and replaced it with molasses. Whatever you’re looking at is outdated. The ingredient list currently on their website does not list barley malt.

    Couldn’t be easier! I used about a cup and a half of Gluten Free Rice Chex. Put it in my mini Cuisinart for a few seconds, and Wala… I had crumbs. I added to the crumbs; salt, pepper, herbs de province, and garlic powder. Then I dipped my tilapia in a egg wash and then in the crumbs. I cooked the fish in about 2tbsp of olive oil in a pan on the stovetop that was pre-heated! Delicious! Served 4.

    I checked the ingredients in Rice Checks and one of the ingredients is barley malt extract. How can this be gf if barley contains gluten?

      Can’t answer that. I can only go by what the box of Cereal is marked and what the company says. I would assume they’d have to pass thus with the FDA, no? You do make a good point. Perhaps it’s processed in a way to remove it?

        I’m not taking any chances. I get a red raw rash every time I consume even the tiniest bit of gluten

        Gluten-free Labeling
        In August 2013 the FDA issued a ruling on gluten-free labeling (effective August, 2014). Labeling gluten-free is voluntary. However, products carrying a gluten-free label claim must meet the definition set by the FDA, which includes:

        Must contain less than 20 parts per million (ppm) gluten.
        Cannot contain any type of wheat, rye, barley or crossbreeds of these grains.
        Cannot contain any ingredient derived from these grains that has not been processed to remove gluten.
        Cannot contain an ingredient derived from these grains which has been processed to remove gluten, if it results in the food containing 20 or more ppm gluten.

          Omgosh that’s terrible! Yes by all means take no chances!

          Now I did have someone with Celiac day they will actually use crushed pork rinds as Panko as they are gluten free. Could that work for you?

      Rice Chex is not made with barley malt. You’re thinking of Rice Krispies. Rice Chex is definitely gluten-free.
