Spicy Thai Peanut Sauce Crispy Baked Oven Fried Wings

I‘m taking my viral classic crispy baked wings and putting a spicy Thai twist on them.

Since I shared with you how to make the most amazing Crispy Baked oven-fried wings in regular and Sticky Honey BBQ, both recipes have gone VIRAL.  I mean we’re talking from Pittsburgh to Japan, Antarctica to Australia! 

Now… let’s talk food. Here in the States, we’re getting ready for the Super Bowl.  Now even though the Steelers aren’t in it this year (still love ya Black ‘n Gold!) I’ll still watch it and get into it.  But as I’ve gotten older, football get-togethers aren’t just about football, it’s about food.

As these came out of the oven I was trying to figure out what I wanted to season them with.  Remembering that I had made some Asian Summer Shrimp Rolls the other day (with the peanut sauce that I LOOOOOOOOOOOVE) I decided to give these bad boys some Asian/Thai love! 

Besides the obvious taste factor, what I love about this sauce is when it warms up the smell is intoxicating!  It’s just so comforting to me.  You can smell that warm nutty scent that reminds me of roasted peanuts but then you get just a slight hint of heat.  For me, it’s a comforting smell.

Now Mr. Fantabulous is funky when it comes to stuff like this.  For him, his extent of Asian tastes pretty much only include 3 things – General Tso’s chicken, Crab Rangoons, and Egg/Spring rolls. 

So I sat down to eat my lunch and out of the office I heard the pitter patter of feet and “sniff sniff sniff”. Just as I went to put a wing up to my lips I heard *GASP!!!* “Hey, where’s mine?  I see how it is, you make yourself lunch and I get bread and water.”

I offered him up one and before he bit down he looked puzzled and asked why there were peanuts on the wings.  I said “Just try it” which was met with a groan.  That groan meant I was experimenting and taking him out of his comfort zone.

He took the first bite and made an inquisitive face.  That bite led to a second and third bite (alas the entire wing was gone). As he went to grab another one I pulled the plate away which OMG BIG MISTAKE!  The look of death HOW DARE YOU WOMAN was priceless!

So whether you’re hosting the game at your house, having the guys over for some beer and poker (please invite me next time!), or just hanging out with your friends, serve these!  They are out of this world amazing!

Ingredients

  • 4 lbs chicken wings, halved at joints, wingtips discarded (save for stock)
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 2/3 cup creamy peanut butter
  • 1/2 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/2 cup sesame oil
  • 1/4 cup light brown sugar, packed
  • 2 teaspoon fresh grated ginger, don’t use ginger powder
  • 1 tablespoon Sriracha (can add more for liking)
  • Chopped roasted peanuts
  • Sesame seeds

Instructions

  1. Line rimmed baking sheet with aluminum foil, and set rack inside.
  2. Carefully dry chicken wings with paper towels.
  3. Place wings in a bag, add the baking powder and salt.
  4. Shake evenly.
  5. Place on rack, leaving slight space between each wing.
  6. Place baking sheet with wings in refrigerator and allow to rest, uncovered, at least 8 hours. This draws out the moisture.
  7. Adjust oven rack to upper-middle position and preheat oven to 450°F.
  8. Add chicken wings and cook for 20 minutes.
  9. Flip wings and continue to cook until crisp and golden brown, 15 to 25 minutes longer.
  10. In a medium size bowl whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, ginger, brown sugar and Sriracha. The sauce will seem thick but that’s okay. Once it hits the hot wings it will thin out.
  11. Place the wings in a large bowl.
  12. Pour the sauce over top and gently toss around to coat evenly.
  13. Garnish with sesame seeds and chopped peanuts.

    Awesome recipe! That was the best wing sauce I’ve ever had, but I had to slightly revise your recipe. 1/2 cup amount of sesame oil was extremely excessive. I went with about 1/9th cup of sesame oil to achieve desired wing sauce awesome-ness. CHEERS!

      Thank you Thomas! Okay see we like our wings (meaning Mr. Fantabulous does) just coated with the sauce verses it all slathered and sticky. When I make it for me I opt for less oil as I want the sauce to stick to the wing (and my face and fingers) versus just give it a bath.
