Simple Bliss Salad

Do you recall my sharing the most amazing Creamy Avocado dressing with lime a few weeks ago? Well I’ve made this dressing about 4 or 5 more times since that posting because it is that awesome. Anyway if you’re looking for a really great summer type salad that is seriously soon becoming one of my top favorites, then go with this simple bliss salad.

Now why call it ‘Bliss’? While this salad may be unconventional from your standard iceberg lettuce, tomatoes, onions, ranch and croutons it’s truly awesome.  It’s simplistic but fancy; snobby but unpretentious; gorgeous AND delicious.

Now you all know by now I have a HUGE love for baby arugula and spinach. Those are 2 greens I always, ALWAYS have on hand.  Earlier that same morning I had made a trip down to Pittsburgh’s Strip District.  In a nut shell if you’re looking for something, you’ll find it there.  This was (and in a way still is) Pittsburgh’s wholesale produce mecca that has stood the test of time. Now it’s surpassed produce to include items to help support pretty much every ethnic craving from spices to pastas, cured meats to restaurant supplies.  Plus honestly it’s truly awesome just to walk up and down the streets and check out the local stores.

So while I was done there I picked up some awesome baby bell peppers, fresh crumbled feta and fresh from the oven sea salted pumpkin seeds. Any of those items on its own would be a great snack (and has been for me) but no, this time I wanted it in a salad form.

This salad is super friendly to where you can add what you want but let me implore of you, while I too love iceberg lettuce, think outside the box here and use other greens.  Dandelion greens would work same with even chopped butter lettuce.  Let your taste buds grow up. Don’t try to add too much to this salad; just keep it simple…blissful.

Creamy Avocado Lime Dressing1

This salad came together in no time.  I think the hardest part was slicing up the peppers…and waiting to eat it!  Now as you can see this is a pretty small salad as it was for the photo shoot.  The salad *I* ingested yeah um… much bigger. *blush*. You could add more protein to this say perhaps some grilled chicken strips or baby cold shrimp but honestly this salad is just so light and refreshing you really don’t need anything else. Now if you’re like me and love taking salads to work for lunch pack the dressing separately. There is nothing worse than getting your salad out only to find the veggies have gone soft and lost their zest due to the dressing weighing it down.

This salad will (and has) make numerous appearances this summer in our cookouts, my lunches and on-the-go meals.

Ingredients

  • 2 cups baby arugula
  • 2 cups baby spinach leaves
  • 1 cup crumbled feta
  • 1 cup baby bell peppers (red, yellow and orange) seeded and sliced thin
  • 1/2 cup salted roasted pumpkin seeds
  • 1/2 cup dried cranberries
  • Creamy Avocado Lime Dressing

Instructions

  1. Get 2 large salad plates (or one big one if you’re super hungry).
  2. Place 1 cup of baby arugula and 1 cup baby spinach leaves in the middle
  3. Top with 1/2 cup of the sliced peppers on top of each plate.
  4. Top 1/2 cup crumbled feta on top of each plate.
  5. Sprinkle on the dried cranberries and pumpkin seeds.
  6. Top with Creamy Avocado Lime Dressing
