Ultimate Chocolate Belgian Waffle

Ultimate Chocolate Belgian Waffle eh? Yep, pretty tall order to live up to when you state that about a recipe, huh? Thing is I’m confident that these are those. Remember when you were little and all you wanted for breakfast was chocolate cake or candy? But no Mom would make you that lumpy no sugar added cucka oat meal. We never had the sugar cereals or the stuff with marshmallows. We had Wheaties, Corn Flakes or Cheerios in our house. And I thank GOD for that to be honest as I hate sugared cereals and sorry Mom but I like sweetened oatmeal. And cake for breakfast? Okay yes I’ve done it and yes I felt so guilty too. Even though Mom’s been gone 26 years now I still feel so guilty if I have sweets for breakfast. How these waffles cam about is that Mr. Fantabulous wanted something other than 3 dippy eggs, 3 slices of crispy bacon and 3 slices of toast (that’s his norm). I wasn’t about to mention the ‘c’ word food as an option. I couldn’t make him pancakes – well I could but I didn’t have any blueberries and you’d think I would have punched his puppy in the face if I gave that man non-blueberry pancakes. That’s just unheard of. So my last option was waffles. I made him his stack of them plus several for the freezer so all he would have to do is pop some in the toaster and have a fresh hot waffle while I wasn’t home. Yeah I know, I’m a good wife. LOL

and okay, maybe I spoil him a little bit. LOL Hell, I spoil him a lot a bit! LOL

After I got done making enough to feed him and put some in the freezer I realized I was hungry. Sure I could have had one of the regular ones but I was craving chocolate in a big way. Sure I could have channeled my inner Bill Cosby’s “Himself” skit singing “Lori is great! Give us chocolate cake!” haha this is one of the BEST comedy skit’s to this day. I can remember when it first came on HBO (yes I just dated myself there) and myself, my sister, Mom & Dad would sit in our living room watching this laughing so hard that at least one of us had tears streaming down our cheeks!

Chocolate cake has eggs are dairy, milk for the icing, wheat for the flour cocoa for our heart… makes sense why we should be allowed to have this for breakfast. LOL Well let me just tell you that for the longest time Lumpy no sugar added oatmeal was what I got. HOWEVER that was then and this is now. While in theory the ingredients in chocolate cake makes sense for breakfast there is other stuff in there that isn’t so healthy – sugar, butters and very little protein. So save that slice of cake for dessert. BUT what you can have for breakfast that should be a dessert but since it’s a waffle it’s breakfast. Waffles = breakfast. They never said that waffles had to be plain jane waffles, right? So back to my wanting chocolate and not regular waffles. I was sitting there looking over my recipe and thought “Why not make a chocolate version of these? Dude that would rock!” Yes I ‘dude’d myself’ haha

This recipe took me a couple tries to get it to the right taste. See it’s not as simple as taking flour out and putting cocoa in its place. It’s not often a 1-for-1 ratio. What finally made this recipe TKW worthy was the additional of the chocolate chip granules. I didn’t want pieces of chocolate chips in my waffle but by popping some in the food processor, pulverizing them so they are more granular-sized they tend to add a deeper chocolate flavor without having to eat the chunks of chips. You can most certainly leave them whole but for me it’s a texture thing. Waffles should be crispy on the outside and tender almost cake-like on the inside. So if you really can’t have chocolate cake for breakfast, go for these! As for the topping? I went with a simple berry sauce and powdered sugar. Trust me though I thought of chocolate buttercream. But that would be wrong of me… right? What am I right about though is that these are the ultimate chocolate belgian waffles! And just you wait and see what I have in store for these puppies! Better go put on your stretchy pants toots!

Ingredients

  • 1/2 cup plus 2 tablespoon all purpose flour
  • 1/3 cup unsweetened cocoa
  • 1/4 cup cornstarch
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon espresso powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/3 cup melted butter, unsalted
  • 1 XL egg, room temperature and separated
  • 1/2 cup plus 2 tablespoon sugar
  • 1 1/2 teaspoon chocolate extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. In a bowl beat the egg whites until stiff peaks form. Set aside.
  2. In a food processor add the chocolate chips and pulse several times until it forms small chocolate granules.
  3. In a medium bowl, combine the flour, espresso powder, cocoa, cornstarch, baking powder, baking soda, chocolate chip granules and salt; mix well.
  4. In another bowl whisk the milk, butter, egg yolk, sugar, and chocolate extract.
  5. Add the liquid mixture to the dry and mix just until incorporated. You don’t want to over work this. A few streaks of flour/cocoa is OK.
  6. Gently fold in the egg white until combined. Do not deflate the egg whites. This is what will give your waffles that light texture.
  7. Let the batter sit for 30 minutes.
  8. Heat a waffle iron.
  9. Follow the directions on your waffle iron to cook the waffles.
  10. Serve immediately hold in a 200 degree oven, directly on the rack. I would not recommend stacking them as they are heavy and may get smushed or soggy on the plate.
  11. To freeze, allow to cool completely and wrap in plastic wrap. To reheat just place frozen in the toaster.

Notes

If you don’t have chocolate extract I HIGHLY suggest putting it on your MUST HAVE list! chocolate extract

Espresso powder is DEFINITELY a must-have if you make anything chocolate! espresso powder

    These are brownies disguised as waffles. And to be clear, I’m not waging a complaint here! OMG SO GOOD! I omitted the espresso powder and subbed vanilla for the chocolate extract. Still the best chocolate waffle ever according anyone I’ve ever fed them to. Look no further—this is the chocolate waffle recipe you didn’t know you were missing in life. No syrup needed. I like to pop a red raspberry into each pocket. Mmmmm.

    Made these for mother’s day. Having a chocolatier mom which is also a chocoholic i knew this were the best breakfasts for mother’s day. They are delicious!
    One recipe makes 4 waffles, I doubled that to freeze some for later.

    Question- Why do you mix the sugar in with the milk and egg yolk and not the dry ingredients? Would matter if I just mix the sugar in with the dry ingredients?

      Thank you so much Eva! The sugar needs to dissolve before it hits the flour otherwise I’ve found the batter isn’t quite right.

      Typo… just one egg white. I’ll correct it. Most folks double the recipe so that’s probably why I typed it plural.

        wow, thanks for responding so quickly. I’m going to make these to do a waffle ice cream sandwich for christmas. Too much waffle? and how many does the recipe make, i was going to do it once just to see and then double if good. I’m making for 20.
