Weekly Menu

Man it’s Sunday already?  This past week was honestly a blur. I swear it was just Monday and I was dreading the week ahead of me.  This house remodel is almost too much to bear for just the two of us.  It’s definitely taking a toll on Mr. Fantabulous though more so he than I.  He’s been doing 90% of the real work.  I do what I can but – grab that, pick up this, hold that or sweep the mess.  Dear GOD the mess!  Even though we put up plastic, blocked off stuff you still find dust everywhere.  And what’s worse is you can ‘feel’ it on your skin, your teeth, your hair.  Gross, I know.  Now imagine all of that AND having no kitchen AND trying to run a food company.  Let’s just say I’m blessed to be uber creative and have equipment that I can set up in other rooms of the house far away from the construction. Though somehow I feel kinda dirty/sinful with a bowl of cake batter in my bedroom *blush*  LOL  So needless to say my weekly menu’s are going to be foods that are easy to prepare or are freezer friendly.

But folks this house… God give me strength.  I honestly have no idea how those folks that are on those DIY renovation shows do this for a living.  Oh wait I know… maybe because they have staff and help?!  *color me jealous*  What I wouldn’t give for some help right now.  The thing is I know our friends would help us if I asked but I honestly would feel so guilty asking because we live so far from everyone. I just worry as I see the toll it’s taking on Mr. Fantabulous.  He just looks beat, exhausted yet he somehow pushes through the pain and gets it done.  Our goal is to have it on the market by May 1st but yeah, that concerns me as we still have SOOOOOOOOOOOOO much work to do. Say a two-fold prayer if wouldn’t mind – one we finish the house in time to get it on the market by May 1st and second, that it sells super fast.  For peace of mind we need this.

With that if the next couple of weeks you find my presence on facebook/twitter/instagram light or if I’m only posting 1-2 recipes a week, don’t give up on me and be patient.  With that, have one amazing week!

♥ Sunday – Roast Beef Panini with Guinness Caramelized Onions
♥ Dessert of the week – Potato Chip Rice Crispy Treat Triple Chocolate Bark
