Happy Sunday TKW Family! SUPER busy day and week. I’m leaving for Vegas for a week-long conference which leaves Mr. Fantabulous to work on the house while I’m gone all by himself. Trust me I really feel guilty about this. God I wish our friends lived close as then I’d ask for help. They’ve offered but we’ve said no only because we live so far from them. It’s almost an inconvenience for them to drive so far. So today I’m working on getting as much done in the house with him as I can while also prepping food for the week for him. However I’m leaving him to work the pressure cooker on Monday and Thursday night as I know he’ll rock it out.
So this week’s Weekly menu is more focused on easier recipes and make ahead. The egg salad can be made several days in advance. The Italian rocket is one that you can prep a few up and when you’re ready to eat just bake them and once done, slap on the condiments. Since I’ll be home Friday the pizza is all me – he hasn’t progressed to pizza making but I’m working on that. And as you’ll see Saturday there’s no recipe. Why? It’s my birthday and I’m not cooking that day. *I* want a break and *I* want pampered that day. These past few months have been physically rough on us with the remodel and all.
But I have to eat, right? Honestly I’d be happy with Mr. Fantabulous and I having appetizers in bed while doing absolutely nothing but watching the 978 shows we’ve DVR’d. I’m totally hooked on Vinyl. We love The Voice as well. There are a boatload of movies we need to see too. Just one day, just one day to relax.
