Oh hi there! Sorry, you caught me with my mouth full *blush*. I can’t help it. These cookies or are they bars? Hmmm… they are a cookie texture but shaped like a bar. Cookar? Barookie? If you ask me I’d call them “FanFriggenTasticalAwesomegasmic-Get-In-My-Belly Treat”! But honestly it doesn’t matter what you call them. What matters is that you MAKE THESE! OMG people! These are seriously so good. And such a simple recipe with just a few basic ingredients. The star for me is the Smucker’s Fruit & Honey Strawberry Jalapeno Fruit Spread as well as the Smucker’s Fruit & Honey Strawberry Fruit Spread. It’s so amazing I can’t even begin to tell you!
Now I know what some of you may be thinking… “Jalapeno??? Oh that has to be hot!” No it’s not. It’s balanced out so beautifully by the honey and strawberries. Yes it has some heat but it’s so good and on this cookie with the butter and white chocolate! Oh dear sweet baby Jesus people! But if you’re not adventurous then definitely get the Smucker’s Fruit & Honey Strawberry Fruit Spread. And FYI… buy a few jars because you’re going to fall in love! It’s just like how my Mom made hers!

You want to be able to taste the cookie, the Smucker’s Fruit & Honey Fruit Spread and the white chocolate. These cookies…er bars… er FanFriggenTasticalAwesomegasmic-Get-In-My-Belly Treats are so good! They are slightly crisp when you bite into them but then they just melt in your mouth like how a classic shortbread should be. The biggest thing to remember about making this is to not overwork the dough. You don’t want to develop any more gluten than necessary otherwise you’ll end up with a tough cookie.
Look at the pic above with the dough in the bowl. That’s about the most you want to mix it. Just scrape out the bowl and then use your hands to form the dough into a ball.
It’s funny as I see all these truly beautiful cookies on the web with such intricate designs and I’m in awe…and a little envious of that talent. I’m lucky I can color in the lines let alone decorate like that. So yeah no, you’ll never see cookies like that from me – that is unless I develop that amazing talent overnight; not gonna happen. However I’m sorry but I’d put these cookies up to the some of the most intricately decorated cookies. They are but what 3 colors but they, to me, are so beautiful. Elegant without being pretentious, fancy schmancy as Mom would call it would being snobby.
When I finished putting on the white chocolate I asked Mr. Fantabulous if perhaps I should put some diamond sanding sugar or maybe some disco dust. He took one look at them and said “Honey, they are perfect just the way they are. They don’t need fancy or other added stuff. They are beautiful just they way they are…just like you.”

Once I finished piping on the chocolate they had to rest until the chocolate hardened. Mr. Fantabulous took at that as a queue for us to leave the house and another ‘date’ which, for those of you that are unfamiliar with his version of a date it’s visiting one of the 2 major home improvement stores. If he’s feeling lovey dovey we have a double date day in which we visit both stores. Yeah lucky me.. not LOL So after a hard day of looking at 987,394 screws (that all look the same to me) we came home, unloaded more construction stuff. I made us an early dinner and then it was time for dessert.
He started with (yes started with…you see where this is going) some cheesecake I had leftover from Thanksgiving and a cup of coffee; I had some tea and 2 of these – one of the plain honey strawberry and one of the honey strawberry jalapeno. Now I kept the jalapeno ones on a separate plate and told him not to touch those as he is so not one for that type of flavor combination. OMG the one time I didn’t mark my red pepper jelly in the fridge and he put that on his peanut & jelly sandwich. OMG I’m surprised the man did call the police on me and tell them I was trying to kill him by ‘hiding’ hot stuff in the jelly jar. LOL
So I had finished my first cookie and picked up my 2nd one when I ‘felt’ the eyes on me and him starting to lean in a little closer to me. One thing I have is really good peripheral vision and I could see him glaring at my cookie and his very empty cheesecake plate. Now mind you the tray of cookies were literally right in front of us however those weren’t good enough for me. Those were not MY cookie. So me, being me, decided to mess with him. As I started to put the cookie up to my mouth I could see his eyes widen and a frown form then a little of exhale. However before I bit into the cookie I set it back down on my plate and took another sip of tea. As soon as I did that he smiled thinking “Oh boy I’m gonna get that cookie now.”
And then I picked it back up and started to inspect it closely (as in seriously mess with him). Oh I looked at the corners, the piping, the underneath, smelled it, poked it, prodded it until he said “OMG give me that cookie, if you’re gonna play with it I’m gonna eat it! You’re just being cruel to it now! The cookie has feelings after all! You heartless cookie woman you!” I let out the biggest belly laugh ever. But with my ninja-like reflects I cut off his path between his cookie and mouth and covered his mouth with my hand so the cookie ‘doinked’ into the back of my hand. OMG guys the look of “OMG you just did NOT deny me a cookie!” surprise on his face was more than I could handle. I started to laugh so hard that I literally started to cough and cry at the same time. I literally laughed for 5 minutes straight.
…and then I hear those 6 little words “I’m telling my Mom on you!” and he proceeded to pick up the phone and dial his mother! I denied her baby boy a cookie! That just made me laugh even more! I had tears pouring down my face, mascara all over and my cheeks were cherry red. Luckily Mama Fantabulous didn’t answer the phone to which he said “You’re lucky woman!” Then he said “Man honey that’s a really, really good cookie. Make them again!”
So yeah we have a keeper – both the cookie and Mr. Fantabulous. LOL

Ingredients
- 16 tablespoon butter, softened
- 1/2 cup sifted confectioners’ sugar
- 1 3/4 cups all-purpose flour, sifted
- 1/4 cup cornstarch, sifted
- 1/2 teaspoon salt
- 1 teaspoon vanilla bean paste (can use vanilla extract)
- 4–6 tablespoon of Smucker’s Fruit & Honey Strawberry Jalapeno Fruit Spread or Smucker’s Fruit & Honey Strawberry Fruit Spread
- 5–6 tablespoon melted white chocolate
Instructions
- Preheat oven to 325F, rack in the middle. Line a half sheet pan with foil and lightly spray.
- In a large bowl, cream butter, vanilla and confectioners’ sugar until light and fluffy.
- Combine flour, salt and cornstarch; gradually add to creamed mixture just until a dough ball starts to form.
- Scrape the dough out onto a
- Spray a large piece of parchment paper with cooking spray and dump the dough and crumbs on to it. Using your hands, gently press the crumbs into the dough, turning a few times just to combine. You don’t want to overwork the dough.
- Spray another large piece of parchment paper with cooking spray and lay the spray side down on top of the dough pushing down slightly.
- Roll out the dough into a 15×10” rectangle (should be about 1/4” thick).
- Using a pastry cutter, cut the rectangle into 20-24 squares. Using a thin blade, pick up each bar and place on to the foil-lined pan leaving a 1” space between each. Pierce each small rectangle several times with a fork.
- Bake for 20 minutes, remove from the oven and spread a 1/2-3/4 teaspoon of jam on top of the bars leaving small edge around the cookie.
- Place back in the oven and bake for another 10-15 minutes or until the bars are very lightly golden color. Do not let them get brown.
- Remove from the oven, allow to set for 5 minutes for 5 minutes on the pan then remove to a cooling rack to cool completely.
- Once cooled drizzle on the white chocolate. Once the chocolate is set and cooled completely store in air tight container.
