Weekly Menu

Get out of that same ol’ recipe rut and try one of these delicious and easy recipes this week! This week I highly recommend making the Roasted Brussels Sprouts Prosciutto Pizza with Balsamic Drizzle and then Asian Sticky Thighs!

So the first week of the new year is behind us… now what?  How are you doing with your resolutions and lifestyle changes? Now more important, how was your first week back to work after the holidays?  And even more important than that, how was wearing real clothes?  Yeah sucks huh?  Wait what?  You don’t live in your jammies and yoga pants when you’re not at work?  Oh um, never mind that last question then.  LOL Mine wasn’t bad as it was a short week and I worked from home one of those days so it broke it up for me. However I think karma felt the need to get one last dig into me as Tuesday on my way home one of the main roads/tunnels were closed due to an accident. For most that’s not a big deal but for me it’s huge – turned my commute into over 2.5 hours.  Yeah, not cool. But it happens.

Last week we didn’t get much done around the house as Mr. Fantabulous’ back was still hurting him really bad.  I begged him for 4 days to go to the chiropractor but the man is BEYOND stubborn – we’re talking worse than me at times. So he kind of laid in the lazy boy with the heating pad.  In a way it was good for him as he finally took a break, albeit sore back or not. However this week is a new story.  We need to lay the tile in the downstairs bathroom and last night he came into the bedroom telling me he needs to replace the bearings and seals in the pool pump today.  I swear if it’s not one thing it’s another at this damn house.

I started watching this show “Unplugged Nation” where it’s all about living off the grid.  Hmmm – I could see the positives with it (no pool pumps, phones or the like) but yeah… bears, cougars and having no internet I think I’ll pass.  I couldn’t do it.  Could you?

I have a busy week coming up – a few new client recipes, house stuff annnnnnnd it’s the first full week of work.  Plus my mind has been racing big time with new ideas for recipes and plus the website re-design.  It’s coming along very nicely – just a few tweaks left to make and then I can push the changes to my live site. I’m introducing a recipe index, better categorization, better mobile responsiveness and a more modern, clean design.

So if you guys follow me on Instagram you would have seen the new recipe I’m working on – Chicken Bacon Ranch Meatballs but I can assure you, there aren’t your typical ones. Oh no, these are loaded from the inside out! Stay tuned for the recipe!

OMG This new recipe I’m working on now… oh dear sweet baby Jesus it’s sooooo good!!! . 💋 . Chicken Bacon Ranch Meatballs (btw that’s what’s IN the Meatballs!!!) Turned these babies into a killer kabob! . 😍these are PERFECT for the game tomorrow!!! . #omg #epic #pittsburgh #recipe #delicious #eeeeeats #chicken #protein #bacon #ranch #meatballs #feedfeed #huffposttaste #huffpostgram #buzzfeedfood #football #steelers

I also want to start going back to the gym – god I miss the gym and spinning. I looked at buying that Peloton Cycling bike but it’s a pretty steep price and the whole monthly membership fee if you want to take the HD classes.  Almost $2k plus $39 a month in fees is way more than what I pay for my awesome gym membership. Do any of you have it?  I’d love to hear your comments on it.  I’m huge into spinning and this is definitely something I’d love but man.. the price.  Ouch!

Anyway speaking of the gym, I need to get this jiggly butt in gear and get my work done for the day.  Have one fantabulous week!

♥ Monday – Pressure Cooker Asian Sticky Ginger Chicken Thighs
♥ Tuesday – Mozzarella Stuffed Italian Meatballs over spaghetti squash
♥ Wednesday – Shaved Brussels Sprouts Salad with Roasted Chicken
♥ Thursday – Dad’s Red Beef Soup
♥ Friday – Roasted Brussels Sprouts with Prosciutto Pizza with Balsamic Drizzle
♥ Saturday – Skinny Chicken Burrito Bowl
♥ Sunday – Fantabulous Pressure Cooker Pork Ragu
♥ Dessert of the week – German Chocolate Energy Bites

I like you love spinning, and checked out the Peloton bike and couldn’t believe the price and said wouldn’t be getting this.

      Hi Sharon,

The bike looks incredible. And while a really amazing quality spin bike is around that price (though still steep). But that monthly membership (which I *think* is optional) is still more than my normal gym membership. I would have thought it would be included – even if for a year or something.

      Best Kitchen Wishes!
