Weekly Menu

Get out of that same ol’ recipe rut and try one of these delicious and easy recipes this week! This week I highly recommend making the Grandma’s Southern Style Chicken & Dumplings, Crock Pot Italian Style Pot Roast and the Soft and Tender Pumpkin Spice Lofthouse Cookies!

Happy Sunday TKW Family! Today is one of those days where it’s rainy, chilly and icky outside and all you want to do is stay in your fuzzy pajama pants and watch old movies all day in bed. But for me that can’t happen as I need to prep a ton of food this week as 1 – Mr. Fantabulous is having surgery on Tuesday and 2 – I have to be in the office all day Thursday and Friday (which are about 14 hours days for me when you include traffic). So I need to make sure while I’m gone those 2 days he has food already prepared that he can handle grabbing or heating up with one hand and that doesn’t take long to reheat.  I hate, right now that is, having to leave him like that as no one should be alone after surgery but I’m praying 2 days post-op most of the pain will subside.

He’s having Trigger Finger surgery done on 2 fingers. It’s outpatient and not a major surgery like say knee or heart but still, a surgery is a surgery ya know? And for me, I worry as he’s all I have. But we’ll make do; we always do. So if I’m quiet for a couple of days this week you’ll know why. So as I was saying today is all about comfort foods – soups, pastas, crock pot meals. These are the things he craves when he’s sick or hurt – pasta, soups and scrambled eggs. Do you have any comfort foods you crave when you’re sick or injured?

Last week was one of those weeks where, no matter what I did, I always felt like I was behind. Like all I did was play catch up. I’m still doing that. I’m so behind on editing photos and updating posts. I REALLY need a PA (personal assistant) to help with TKW. So if you have WordPress experience, photo editing (Capture One and Photoshop) let me know! If you have video creation and editing experience that’s a HUGE bonus! Last week I was able to have a sneak preview of a new dish that will be featured at Acorn located in Shadyside in Pittsburgh. The dish is called Grace’s Chicken and it’s such a classic Italian comfort food! Grace’s Chicken is a dish similar to the dishes owners Brian and Chef Scott both grew up eating. After realizing they both had similar dishes they worked to create this adaptation of Grace’s Chicken. The dish is named after Brian’s Mom.  This dish mimics that of the classic Italian dish, Chicken Vesuvio but with Acorn’s dish you truly have that authentic “Mom” flavors. You can taste the passion and love behind the dish! This truly is such a comforting dish!  They will be featuring this dish ONLY on Tuesdays so make sure to head over there and tell them I sent you!

Attention foodies of Pittsburgh!!! Make sure to check out @acornpgh in Shadyside on Walnut next Tuesday as they premiere their latest creation, “Grace’s Chicken.” ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Myself with several other foodie influencers and bloggers were treated to a sneak preview tonight to this dish along with a few other amazing dishes! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Course 1: Duck liver mousse on house-made sourdough crostini served with a side of Escargot in a leek sauce and topped with mustard seed. THIS WAS AMAZING! I could seriously made this a meal! Course 2: Matzo ball soup with a bright a herbaceous broth. This was so comforting on a chilly ‘Burgh evening! Course 3: A side of linguini topped with herbs, cheese and a light sauce. The star of this dish was Grace’s Chicken. A whole (or half) Chicken, baked in a light wine and stock herbed sauce with russet potato wedges and lots of green peas. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Grace’s Chicken is a dish similar to the dishes owners Brian and Chef Scott both grew up eating. Then I received THIS in the mail from one of my dear friends, Maria! She and I “met” online through TKW and have become such incredible friends and sisters. She hand painted this pig for me! She’s an INCREDIBLE nail artist! I literally cried like a baby when I opened it up! It touched my heart right to the core!

Last week was also a delicious week as I got this amazing box of deliciousness delivered! Living in Pittsburgh everyone, EVERYONE, knows Jenny Lee Bakery!
