Chef Lori’s Tips For Sauce Success

  1. Don’t rush the garlic: Sauté your minced garlic in the butter over medium-low heat. You want it fragrant and soft, not browned and crispy. Burst garlic turns bitter, and we don’t want that.
  2. “Back of the spoon” test: To see if your sauce is thick enough to be a glaze, dip the back of a spoon in it. You’ll know your mixture is thick enough when you insert a spoon, pull it out, and immediately trace a line across the back of the spoon with your fingertip (be careful, as it’ll be hot). If the line remains visible and the mixture doesn’t run back together, it’s thick enough.

How to Make Honey Garlic Glaze

This sauce takes only about 10 minutes to prepare; maybe a few minutes longer if you don’t have a garlic press and you have to mince the garlic by hand. But trust me, it’s so worth it!

  1. In a saucepan over medium heat, add the butter. Once the butter has melted and begun to foam, add the garlic and sauté for 1-2 minutes, stirring constantly, until fragrant. If need be, turn the heat to low so as not to burn the garlic. 
  2. Add in the honey, light brown sugar, soy sauce, red wine vinegar, and red pepper flakes. Bring it just to a boil, then reduce the heat to a low simmer for 5 minutes, stirring frequently.
  3. In a separate container, whisk together the water and cornstarch to create a slurry.
  4. Bring the honey mixture back to a gentle boil and then pour in the slurry, whisking constantly. If it starts to foam up, lower the heat. Cook for another minute or two. Test whether the mixture coats the back of the spoon.
  5. Once coated, remove from the heat and use immediately, or allow to cool completely before transferring to a lidded container for storage in the fridge.

Back of The Spoon Test

To see if your sauce is thick enough to be a glaze, do the following:

  1. Dip the back of a spoon in it. You’ll know your mixture is thick enough when you insert a spoon, pull it out, and immediately trace a line across the back of the spoon with your fingertip (be careful, as it’ll be hot).

Ingredients

  • 4 Tablespoons unsalted butter
  • 8 (2 – 2 1/2 Tablespoons) large cloves of garlic, minced
  • 2/3 cup honey
  • 1/3 cup plus 1 Tablespoon light brown sugar, packed
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup rice wine vinegar
  • 3/4 – 1 teaspoon red pepper flakes
  • 1/2 cup water
  • 1 1/2 Tablespoons corn starch

Instructions

  1. In a saucepan over medium heat, add the butter. Once the butter has melted and begun to foam, add the garlic and sauté for 1-2 minutes, stirring constantly, until fragrant. If need be, turn the heat to low so as not to burn the garlic.

    Hi, For the brown sugar in the recipe card, should it say 1/3 cup plus 1 Tbsp? This is on the menu tonight with cod filets. I know it is going to be delicious!!

      Oh yes, thank you SO MUCH for catching that typo. Yes it’s 1/3 cup. I tell folks to adjust the red pepper flakes to your heat level. The amount in the recipe is more to help balance out the flavors but if you like more spice you can add more.

    I just made this and I’m blown away by not only how easy it was but how incredibly flavorful it is!

    I used a bit more red pepper flakes as I like spice. I basted this on some baked chicken tenders. My only regret was not making more chicken with it as we have zero leftovers! We both loved this!
