  • Buns: If you can’t find individual brioche slider buns, you can use other slider buns (pretzel buns work) or use the Hawaiian packaged buns.

  2. Assemble and place on the top rack. Smoke for 30 minutes, then uncover, raise the temp to 275°F (135°C), and smoke until the cheese is melted and the tops are toasted.

This is when you want to treat your smoker like an oven. *If you have a Yoder Smoker YS640 and the pizza oven, use that!

  1. Preheat the smoker to 350°F (176°C) and use a fruit wood pellet.
  2. Assemble and place on the top rack. Smoke for 15 minutes, then uncover, and smoke for another 10-15 minutes or until the cheese is melted and the tops are toasted.

BBQ Grill

For this, you’ll need to set up the grill for 2-zone cooking (indirect and direct). Although your pan won’t be on the flames, you may want to use a foil pan here just in case.

  1. Preheat the direct side of your grill to 350°F (176°C).
  2. Place the covered, assembled pan of rolls on the indirect side and cook for 15 minutes. Remove the cover and continue cooking for another 10-15 minutes, or until the tops are toasted and the cheese is melted.

If Mr. Fantabulous had his way, I’d make classic chicken Parmesan at least once a week. Don’t get me wrong, folks. I love it too, and I make him whatever he wants, but I need a variety. And there are days when I simply don’t have the energy or desire to make it, but I still want its flavors.

Ingredients

Italian Butter Glaze

  • 5 Tablespoons unsalted butter, melted
  • 2 teaspoons Chupacabra Italian Seasoning

Chicken Parmesan Sliders

  • 9 Brioche Slider Buns
  • 2 1/2 cups pulled/shredded chicken
  • 2 teaspoons Chupacabra Italian Seasoning
  • 1 1/4 cups marinara, divided and warmed
  • 9 large fresh basil leaves
  • 9 slices of mozzarella (about 1/4″ thick)

Instructions

Make The Italian Butter Glaze

  1. In a bowl, whisk together the melted butter and the 2 teaspoons of Chupacabra Italian Seasoning; set aside.

Make the Baked Chicken Parmesan Sliders

  1. Preheat the oven to 350°F (176 °C). Lightly spray the bottom of a baking pan (this helps prevent sticking), then add the bottoms of your buns. For this recipe, I used my 11×8″ baking dish.
  2. In a bowl, add the pulled chicken, 2 teaspoons of the Chupacabra Italian seasoning, and 1/2 cup of marinara sauce; mix to coat evenly.
  3. Top each bottom bun with about 1/4 cup of the chicken mixture, a tablespoon of marinara, a fresh basil leaf, and a slice of mozzarella, then place the top bun on top.

    Made these last night with some leftover chicken and sauce I had. I would have never thought to transform them into something like this.
