Happy Sunday TKW Family! Raise your hand if you’re enjoying a long 3-day weekend. ME ME ME!!! However, this weekend has been anything but relaxing for me. With my having surgery in 2 weeks and will be down for at least 2 months, I need to get a boatload of recipes done and posted (scheduled) while I have my arm bound to my body. The last 2 shoulder surgeries it wasn’t that big of a deal with regards to typing up the recipe as I’m right-handed and the surgeries were on my left shoulder. But this surgery is on my right one and I can’t do squat with my left hand.
Like we’re talking I can’t even brush my teeth with my left hand without jabbing my cheek and getting toothpaste all over my face. God help me when I have to go to the bathroom! LOL Oh no wait, Mr. Fantabulous said he has that already covered. He said he’ll just hook up the garden hose and hose me down. Yeah… the man says he loves me too. LOL
But I know that if I really needed him to do that he’d do it for me. Marriage – to love, honor, cherish and wipe the other’s behind when they can’t. HAHAHA
Speaking of love, look at what he had waiting for me the other day when I got home from work! Totally unexpected and truly put such a smile on my face.
Let’s do a re-cap of some of my favorite Instagram posts I made. I posted this on Saturday and OMG you guys went absolutely NUTS over this. I was surprised to be honest the overwhelming response. It’s a gluten free, crispy spaghetti squash latke topped with sour cream and dippy egg. And FYI, it was freaking AMAZING!
Being from the ‘Burgh, you live and breath sports. I absolutely LOVE hockey and the fact that the Penguins are in the Stanley Cup finals now is just incredible! Game 7 the other night was one of my most favorite games in decades. It was true hard core, fighting for every goal hockey. The fact that we won it in double overtime… PRICELESS! Now, let’s bring Lord Stanley back to the ‘Burgh!
OMG did you see the 25 pounds of Caramel Creams I got in the mail from Goetz’s Candy Company??? They loved the last recipe I made for them so much that they want me to create even more for June! I know exactly what I’m going to make with this, so I cannot wait! I’m actually going to make it today!
And lastly, with fresh strawberries in season, you NEED to make roasted strawberries! The recipe is super simple! Click the image to play the video!
1/2 cup brown sugar
1 pound of strawberries, cut in half
Put the items in a bowl and mix it up.
Let it rest for a min.
Line a pan with parchment leaving and overhang.
Dump the berries, sugar, and juice on the pan in a single layer.
Bake 400f for 18-20 min or until the berries are soft but not mushy.
Pour the berries and juices into a bowl. Allow to cool completely and store covered in the fridge.
