Nutella Toffee Krispy Bars

Growing up, I was that child that hated Rice Krispy treats.  Not sure why as I love rice krispies, marshmallows and hello.. BUTTER! But mixed together, I just never “got it”. They were always just ‘meh’ for me.  Well when I met Mr. Fantabulous I learned rather quickly that these are a staple in the house.  These treats must always be on hand.  When he first asked me to make him some I had no clue how to make them so yes, I actually had to look up the recipe.  LOL  That was 900 years, 1000 empty boxes, 2000 empty bags of marshmallows and umpteen pounds of butter ago. Now I can make these in my sleep and trust me, half of the time I think I do.  I go into machine mode with these.

Well Friday night I was in the kitchen and realized that I hadn’t made them in a while and what puzzled me was that he hadn’t commented on it either.  So while he was working out (I worked out earlier in the day), I decided to whip up a batch for him.  Since it’s just he who eats these I went with just an 8×8 pan of ’em. As I was making them I got to thinking “Hmmm.. I wonder if I can make these yummy enough that *I* would like them.*  Cause you all know me; I can’t just leave well enough alone.  I need that HOWEVER when I’m in the kitchen; that extra notch if you will.

I rummaged through the pantry and pulled out a jar of Nutella, some toffee chips, chocolate and more marshmallow filling.  Now confession number 2 – I am not a fan of Nutella.  It’s okay for me but it’s not something I would ever buy because I craved it OR just eat it off of a spoon like I do with peanut butter.  I almost feel … tricked.  Like you see this gorgeous chocolately goodness yet when you eat it it’s not quite chocolate. I mean it has chocolate in it but it’s not just chocolate.  I feel slighted.  I’m weird like that. Yet I love nutella in baked goods because it adds such great flavor… told ya I’m weird.  LOL

When all was said and done, I ended up with this absolutely GORGEOUS colored food that smelled heavenly.  I made sure to leave a teensy bit on the spoon (okay so it wasn’t that teensy as it took me like 4 bites to clean it off the spoon… shush!  Don’t judge!) after I made the dish.  However as I was looking at it in the pan, it looked ‘nekkid’.  It needed something more. AH HA!  Chocolate drizzle and toffee chips on top.. too!  By this time my mouth was watering but the chocolate hadn’t set so I couldn’t cut it.  To speed it up, I put the pan in the fridge to cool it down enough to cut it.

Well I’m embarrassed to admit this but I forgot about it in the fridge.  I KNOW, RIGHT!  I forgot about a dessert!  LOL  So Saturday morning as I was making Mr. Fantabulous breakfast, I took the pan out to warm up a bit to cut.  Let’s just say that by the time I finished the photo shoot of these, 2 were already gone and Mr. Fantabulous was ONLY ALLOWED 1 BITE!. LOL  These were so friggen good I couldn’t even stand it!  LOL  I really think the toffee is what blends the nutella with the marshmallow filling.

With Valentine’s day coming up, this would be an awesome treat to surprise your sweetheart with!  Wrap them up in a pretty container and nice bow.  Now this is something *I* would love to get… provided that nice bow had some sparkly diamonds on it too 😉  Hey, I’m a girl.. I like diamonds.  LOL

Ingredients

  • 4 cups Rice Krispy Cereal
  • 7 ounces Marshmallow filling
  • 7 ounces Nutella
  • 3 tablespoon butter
  • 1/2 cup milk chocolate chips
  • 3/4 cup Toffee chips plus extra for garnish
  • 1/4–1/2 cup melted chocolate

Instructions

  1. Spray a 9×9” or 9×13” glass pan lightly with cooking spray.
  2. In a medium pot, melt the butter over low heat.
  3. Add in the marshmallow fluff and melt for 3-5 minutes until smooth.
  4. Add in 3/4 of the nutella and chocolate chips.
  5. Stir until fully melted.
  6. Add in the Rice Krispy cereal and 3/4 cup Toffee chips and stir.
  7. Place the mixture into the prepared pan and press down with a sprayed spatula until the mixture is flat and even.
  8. Spread the remaining nutella on top in an icing fashion.
  9. Drizzle with melted chocolate and top with Toffee chips.
  10. Pop in the fridge for 15 to set the chocolate then cover with plastic wrap.
