My go-to Trail Mix

So I tend to spend a lot of time in my car.  Why?  I commute almost 3 hours daily for my real job. Crazy, I know but hey, I’m fortunate enough to have a job that I actually do really love.  Sure the commute can be wicked nasty at times (like when we get a foot of snow and it takes me 5 hours to get home or the fact that when it rains in Pittsburgh people seem to forget how to drive – why is that???) but I’ve been doing it for so long that it isn’t that much of a big deal anymore. Would I love a shorter commute.. OMG yes!  Would I love a vehicle that had a bathroom in it for those days when EVERY SINGLE STINKING ROAD in Pittsburgh is under construction and I have to pee??? SURE!  But I digress.  One thing I can be sure I have with me at all times is my water bottle and my trail mix.

While there really isn’t a specific recipe to follow, to me there are staples that belong in trail mix:

– chocolate
– nuts
– dried fruit
– some type of carb (pretzel sticks, dried cereals, etc…)Trailmix1

This just happens to be my go-to mix.  It has all those ingredients and it’s easily changeable – I can add coconut flakes, oats, pretzels, dried fruits, etc…  Literally I go with what I have on hand and what I’m craving.

I don’t believe in adding sugars or syrups to this – when you do that you’re getting more into granola. Now I love granola just like the next person but it’s not always that healthy (unless you make it yourself – which reminds me, I REALLY need to post my granola recipe *make mental note*).

So go have at this, just remember keep it in a dry, covered container.

And yes, that is a pig bowl I have it in.  Doesn’t it just ROCK!!!

Ingredients

  • 3 cups Chex cereal
  • 1 cup cashews (can be salted or unsalted)
  • 1 cup almonds
  • 1 cup white chocolate chips
  • 1 cup chocolate covered raisins
  • 1/2 cup dried cranberries

Instructions

  1. Put all ingredients in a bowl and mix gently to combine.
  2. Store in a covered container.
