Happy Sunday TKW Family! It’s time for another edition of the weekly menu. My goal when I started posting a weekly menu was to give you different ideas for dinner that can help you get out of a rut. Let’s face it, we are creatures of habit. We get up at the same time, do our normal morning routine (mine is bathroom, shower, gym clothes, work out, shower again, head to work), go on with our normal daily routines and come home and then figure out dinner. Sure you may mix it up here and there but let me ask you this. When you do mix it up, do you still go back to your ol’ reliable recipes? I do it from time to time. We know it tastes good, we know it by heart so there’s no real thinking or effort involved and it’s easy. Right? But don’t you tired of the same ol’ same ol’? I know I do.
So that’s where this weekly menu comes into play. Even if you took just one recipe from the menu you’re growing your go-to recipe box by at least 52 recipes a year. That’s golden folks! And once you realize that cooking every night isn’t that hard, you’ll fall in love with it and soon those old reliable recipes will be made sparingly. It’s good to mix things up and have a variety.
So how was your past week? Mine was super busy as I was out of town again for work. While I hate being away from Mr. Fantabulous I did get a significant amount of work done. I, sadly, wasn’t able to cook – the hotel still won’t let me but hey, I’m working on that part. And the only other stuff for me to do other than be in the office is workout (which I’m THRILLED that they have my gym up there), grab dinner with my “other location” friends and go back to the hotel. And since that’s kinda lonely I tend to just stay longer at the office. It actually really allowed me to get caught up on some much needed administrative paperwork.
I had fun the one night I had dinner with a new friend I met a few months back. Angie is super nice and a blast to hang out with plus she totally loves to dork out like me and sing karaoke! I mean seriously, that’s a dying thing these days! I also was able to go out for lunch to this one restaurant while I was up there that makes this killer duck and bacon burger. Yes, ground duck and ground back – that’s it! This thing is insane! Now for me I asked the chef to mix it up a bit with the toppings. So on mine I had him top it with their onion marmalade, maple aioli and arugula. Seriously…SO GOOD! The next night I went to a new restaurant which seriously left me sorely disappointed. This restaurant is local but more on the higher end so with that, you expect quality and really great food, right? So I started off with bacon wrapped scallops in a creamy butter sauce. Okay now I’ve had these before in other places and I’ve made them a bajillion times however I have never, EVER had them made this way. They just wrapped the bacon around the scallops, skewered them and then deep fried them.
If you’ve ever had an overcooked scallop you’ll know you’re pretty much chewing these things without any hope of them breaking down. Well imagine that but times 50 AND crusty from being deep fried. Yeah, gross! I tried dipping it in their butter sauce (which was nothing more than clarified butter) – no help. I then let it actually sit in the butter for a few minutes… nothing. I then ordered the lobster ravioli with crab sauce. Yeah, thanks for the commercially frozen bought ravioli than anyone can buy in a restaurateur supply store. Yeah, HUGE disappointment for a $40 meal with water!
When I finally got home I had to help Mr. Fantabulous plaster one of the walls – yeah! This means we’re making progress on the remodel! And once again I ended up with plaster cement in my hair, on my face, on my shoe, on my shirt, IN MY SHIRT and yes, in my armpit. Seriously, I have NO CLUE how that happened! Then it hit me/us. Fatigue. Did you ever get so tired that you actually feel sick even though you’re not? That was both of us. We had plans to go to a friends “Robtoberfest” Halloween party however we both had zero energy. So instead we put on our jammies, I dug out a pizza that I had par-baked in the freezer (I’ll show you how to make these later!) and watched 2 movies – Jurassic World and San Andreas. Now Mr. Fantabulous LOOOOOOVES the Jurassic movies. Heck I swear any boy does! It brings out his inner 14 year old I swear! I, yeah, not a huge fan but since I make him watch Pitch Perfect 375,987 times I have to watch his “boy” movies. Have to admit, I actually liked this one. The San Andreas one – wow, talk about something that really gets you thinking!
Now I know they made it for Hollywood but seriously, this movie REALLY got me thinking in the What If mindset!
Anyway, I should get my butt in gear and post this as I have 3 photo shoots I need to get done, 3 recipe posts and get ready for my movie date tonight with Magic Mike! Er I mean laundry.. my date with LAUNDRY. LOL
