Ah the holidays are here – the hustle, the bustle, Christmas movies, shiny wrapping paper, caroling and getting together with loved ones.  And if you’re a foodie like me there’s one more thing to mention about the holidays… THE FOOD!  Let’s face it people.  When the holidays are here, we want foods that impress, wow and taste absolutely incredible.  In my family and circle of friends we don’t gather around the tv or even the fireplace.  Nope, it’s all about where the food is served.  To me the kitchen is the heart of the home.  So why not make foods that show folks you love them, that they are special to you.  As Mama always said “Put your best dish forward Lori!”

And that’s exactly what I’m doing today.  This Creamy Baked Brie with Cranberry Relish & Toasted Pecans is truly incredible.  It’s creamy, cheesy, tart, citrusy and crunchy all on a single bite on a delicious Keebler® Toasteds® Cracker; Butter Crisp flavor to be exact.  I heart those – like it’s nothing for me to polish off a sleeve of those for dinner and yes, JUST those for dinner!

Now to make this is really easy!  Just cut a circle in the top of brie just to remove most of rind on the top.  You need to make sure though you don’t cut the sides. The sides and top edges need to stay intact as you’re heating this cheese and you want it to stay contained within the rind rather than melting all over your plate. And since we’ve just had Thanksgiving, this is the perfect way to use up that leftover Cranberry Relish you have in the fridge.  Now you cannot use the sauce, you need the chunky relish.  I HIGHLY suggest using my cranberry relish recipe for this!

Now when it comes out it truly is a thing of beauty.  I literally sat there and in awe of the seriously gorgeous colors.  We’re talking no picture editing here – no adjusting hues, shadows, exposure, anything.  When I was adding my logo I was like “Go Me!” and was grinning from ear to ear. I was like “whoa!  I took that shot?!  WOO HOO!”  LOL yeah I know, the little things but hey we live in an age now where food pics matter. We eat with our eyes as well as our mouths.  Pictures should draw you in, make you crave a dish that you haven’t ever tasted.

So okay confession time…  If you follow the set of pictures below you’ll see how I have a spoon of the delicious melted brie on it with some of the warmed cranberry relish, toasted pecans and chives. Folk when I pulled up that first spoonful and saw that gloriously delicious thing I knew I was a goner. Between those buttery crackers, the creamy cheese, the tangy cranberries… it was all she wrote.  I think I did this photo shoot in MAYBE 7 minutes flat.  Trust me, if you do this for a living, 7 minutes is unheard of.  One simply doesn’t do shots that fast.  Yeah, this girl did.

And why you may ask?  I didn’t know how long I could hold off from having a few spoonfuls of this on crackers (or in my case… the ENTIRE THING!)

Yes, you read that right. I ate the ENTIRE THING!  It ended up being my lunch and honestly probably one of my top 5 best lunches ever.  I would not change a single thing about this recipe – well that’s a lie.  I’d triple it next time – more for me. Don’t judge me!  You’re gonna do the same thing; I’m telling you.  I so wish I had more brie in my house right now as I’d make this again.  It’s soooooooooooo good! And yes I’ve been contemplating running out to the store right now to get more however here’s the issue with that.

  1. I seriously don’t want to put real pants on.
  2. It’s cold out.
  3. I was busy with work I had to get done at the house
  4. Annnnnnnnd I really didn’t want to put real pants on.

However I do have to run out tomorrow which means I’m stocking up on more brie!  Yeah me!

This holiday season definitely add this to your recipe list as this is a MUST MAKE!  This is great for small or large parties, girls night, make a cookie exchange or even movie date with your sweetie at home!  It’s perfect to share or….maybe not *wink*

Ingredients

  • 1 round (8 oz.) Brie cheese
  • 1/2 cup Whole Berry Cranberry Relish
  • 1/4 teaspoon grated fresh ginger *optional – only add if you do not use my cranberry relish recipe
  • 1/4 teaspoon grated orange peel *optional – only add if you do not use my cranberry relish recipe
  • 2 tablespoon toasted chopped pecans
  • 2 teaspoon fresh chives, minced
  • 40 Keebler® Toasteds® Crackers (Butter Crisps)

Instructions

  1. Preheat the oven to 350F, rack in the middle.
  2. With sharp knife, cut circle in top rind of cheese, leaving 1/4″ border around top of cheese. Carefully remove center circle of rind and discard. Do not cut side of rind otherwise the cheese will not hold its shape.
  3. Place the cheese on an oven-proof baking dish.
  4. In small bowl stir together cranberry relish, grated ginger and orange peel.
  5. Spoon onto center of cheese round and mound upwards.
  6. Bake for 15 minutes or until cheese softens.
  7. Remove from the oven and place the baking dish on a heat-safe trivet. Garnish with toasted pecans and chives.
  8. Serve with Keebler® Toasteds® Crackers (Butter Crisps).

    Hello,
    I was wondering why the recipe calls for ginger and orange peel when the cranberry relish already has it. I don’t want to over-ginger it. Thanks!

      Hi Becky,

      You can omit and then if you feel it’s not ginger-y or orange-y enough you can add later on. Sound good? This is a client-provided recipe where they mentioned “any cranberry relish” to their recipe (which called for ginger/orange). What I’ll do is update it to make those 2 ingredients optional
